My entry for bacardi legacy 2018

La Lucha 
Everyday as bartenders we fight ;

Fighting endlessly for our quest of balance behind the wood. 
We are surrounded by the most powerful and exquisite things, yet we barely know know to master them in our own lives.
And sometimes, we even let them get the best of us…

Don Facundo Bacardí couldn’t have built an empire by himself, he did it with the help of his wife and children who played big roles in the business and the community.

To this day, his legacy still brings us together.

Now that we are united, we need realise that bartending isn’t just a temporary job anymore, it’s a trade.

It’s more important now than ever, to fight together, like brothers and sisters, like the bacardi family, for a better living.

Now is the time to raise your glasses with vigor and ask yourselves…

1.25oz Bacardi
0.5oz amaro montenegro
0.75oz lemon juice (or lime)
2 barspoons orange marmelade
1 barspoon fernet branca
Garnish: fresh mint sprig (expressed)

J’ai bien hâte de monter à mtl et passer la journée avec tout ce beau monde! 🤗🔥🍹🥡 Since my first trip in south-east Asia, I was so inspired by the flavors and the experience that I decided to open ''Chez Tao!'' , my first restaurant bar in Quebec city. 
But other than the flavors and the memories I recall from my trip was the great amount of pollution that was happening in those countries. 
When I used to be just a bartender, I didn't have that much to say about the bar program and the eco responsibility of the establishment. 
But now as I have opened my own successful bar, I have more power to change the world around me, to make it better. 
At Chez Tao! we use metal straws, wooden coasters and instead of napkins we have cloths that we reuse instead of throwing them away. 
We try to be as sustainable as possible. This is why in this cocktail, I add great responsibility with the elixir (cucumber marinade as a sour agent) and existing ingredients from the kitchen (thai basil, coriander, coconut oil, cucumber). I also blacken the limes that don't look good enough for garnish Let's make the world a better place one sip at a time! Because with great power comes great responsibility!

Great power recipe:

In a shaker tin, add 2 leaves of coriander and 3 leaves of thaï basil. Add liquid nitrogen and muddle to a powder. 
Add 1.5oz Bombay Sapphire (fat washed with coconut oil) and let thaw. Add 0.75 st germain liqueur 0.33 yellow chartreuse, 0.75oz Cucumber marinade (Great responsibility elixir)& Miraculous foamer.
Fill shaker with ice, shake and fine strain in a chilled coupe.
Garnish: Cucumber roll, thaï basil flower & grated Blackened lime.
