3 1/2 cups of filtered water⠀
1 tbsp rice vinegar⠀

1 tsp salt⠀
2 tbsp sesame seeds⠀

6 ounces baked flavored tofu (I used the Indian curry flavor)⠀
2 avocados, sliced⠀
1/4 purple cabbage, sliced thinly⠀

Chickpea Potato Balls with Cheesy Pasta by @cookingforpeanuts 😍 How tasty does this bowl look?! Recipe for chickpea potato balls (makes about 10): Cut 3 small golden potatoes into roughly 1-inch pieces. (Chopped potatoes should measure 1/2 cup.) Boil in salted water until tender. Meanwhile, add to food processor: 1-15oz can chickpeas (rinsed and drained), 1/3 cup parsley leaves, 1/4 cup almond flour (or other flour), 1.5 tsp garlic powder, 3/4 tsp cumin, 3/4 tsp smoked paprika, 3/4 tsp chili powder, 3/4 tsp cayenne. Pulse until chickpeas are finely chopped, but not too much as want some texture. Transfer to large bowl and add salt to taste. Mix well with spoon. Drain cooked potatoes and rinse with cold water. Combine potatoes with 2 tbsp plant yogurt and mash with potato masher until fairly smooth. Add salt to taste. Transfer to bowl with chickpeas. Use hands to incorporate fully. Form about 1-1/2 inch balls. (Optional: brush outside of balls with olive oil.) Either bake on lined sheet at 400F until golden brown, about 20-25 minutes, or cook in air-fryer at same temperature. 
Pasta Recipe: 
Cook pasta as per packet directions. Whisk: 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca starch/flour (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp mellow miso (or to taste) until all dissolved. Add salt and black pepper to taste. Mix with desired amount of wholegrain/bean/lentil pasta.

Now THIS is a bowl of goodness! 🤤 Charred asparagus, soy glazed mushrooms, creamy oil-free hummus and crispy crinkle potatoes with an abundance of herbs and spices by @cookingforpeanuts 🌱 Also totally oil and gluten-free!

Recipe
1. Charred asparagus: Heat on high a cast iron or heavy skillet. (Optional: add a small amount of oil.) Add trimmed asparagus pieces to hot skillet in single layer. Cook until lightly charred, about 2 minutes, without moving. Cook about 5 minutes more until crisp-tender and evenly charred. Remove from heat and let sit a minute. Toss with squeeze of fresh lemon and ‘Bragg organic sprinkle herb and spices seasoning’ or dried herbs of choice. Salt to taste.
2. Oil-Free Hummus: In high speed blender, blend on high 1-15oz can (or 1-1/2 cups cooked) chickpeas, 1/3 cup aquafaba bean liquid from can (or cooking water), 2 garlic cloves, 1/3 cup tahini, 3-4 tbsp fresh lemon juice, 1/2 tsp chili powder, 1/2 tsp paprika, 1/2 tsp cumin. Add more bean liquid if needed and adjust seasoning and salt to taste.
3. Soy glazed mushrooms: Cut about 3/4lb crimini or white mushrooms into approximately 1/4 inch thick slices. 🌽😍 Best Mexican Style Black Beans! 📷 by @cookingforpeanuts 🚨🚨Beans Recipe: : Cook 1 small chopped onion in a little vegetable broth (or olive oil) until translucent, about 7 minutes. Add 2 minced garlic cloves, 1/2 tsp oregano, 3/4 tsp cumin, 1/4 tsp chili powder and cook another 30 seconds. Add 1 tbsp tomato paste and mix before adding 1-15oz can black beans and 1/2 cup vegetable broth. Use side of wooden spoon or spatula to mash about half of the beans while cooking. Simmer about 10 minutes until most broth is absorbed. Add fresh lime juice and salt to taste. 
Corn: Roast 3 ears fresh sweet corn with husks on at 350F on oven rack until soft to touch, about 35 minutes. Meanwhile, combine zest 1/2 lime, 1 tsp chili powder, 3 tbsp vegan butter. (Optional: Use sharp knife to slice down side of corn and remove kernels. Add butter mixture to kernels according to taste while corn still warm.) Rub corn with butter mixture after roasting. Finish with squeeze of fresh lime juice and salt to taste.
