Yummy Summer zucchini with Dill - a recipe you actually can’t resist, it’s creamy with garlic and dill flavour, an excellent side-dish, quick to cook.
1 Tbsp kosher salt
1 Tbsp butter
1 Tbsp olive oil
3-4 garlic chopped
1 tablespoon flour
1/2 cup half-and-half or milk
1/3 cup sour cream
2 Tbsp fresh dill, finely chopped
Salt and freshly ground black pepper to taste
Coarsely grate the zucchini using the largest grater. Place in a colander, sprinkle with salt, toss and set aside to drain for 10min. Squeeze out all the water from zucchini by hand put aside in a dry bowl.
Melt the butter and olive oil in a large pan over medium-high heat. Add the garlic and sauté for about 2 minutes until fragrant. Stir in the dried zucchini, mix rigorously for 3-4 minutes on medium heat.
Add the flour and toss to coat thoroughly, continue stirring for another 3 minutes.
Stir in the half-and-half and the sour cream and cook until the mixture begins to thicken and form a paste. Continue cooking, stirring constantly for about 5 to 7 minutes, or until the zucchini has given off any excess liquid and is thoroughly combined with the garlic -cream mixture. Taste and add the salt and pepper to taste. Stir in the dill and transfer to a serving dish.
