➡️[Chocolate cake with figs and ginger]
✅*125g butter, softened *1 cup (230g) brown sugar (I used moscovado) *2 eggs *1 and ½ cup (185g) sifted self raising flour *1/3 cup (40g) powder cocoa *3/4 cup (185ml) whole milk *2/3 cup (125g) chopped dried figs *1/3 cup (75g) chopped candied ginger .
✔Preheat the oven to 360°F (180 °C) and grease and flour a plumcake pan (9x5 inches or 22x12cm).

✔Cream the butter and sugar in a mixing bowl at medium speed until the mixture is light and soft. Then add the the eggs, one at a time, keep well beating each time until the eggs are completely incorporated.
✔Keep the electric mixer on low to stir the flour with cocoa alternately with milk until the dough is soft and finally stir the figs and half of the ginger.
✔Put everything into the pan and place the remaining ginger all over.
✔Bake the cake for 60 minutes.

➡️[Monkfish and veggies curry]
✅*200g monkfish *a few sprigs thyme *30g leek *40g celery * 80g cougette *80g broccoli *70g sweet pepper *150cc fish or vegetables broth *10cc extra-virgin olive oil *6tsp curry *salt and pepper
.
✔Mix 2 tsp of curry with sea salt and pepper in a bowl, dry the monkfish fillets and roll up over it.
✔Cook over a medium-high flame for about 2 minutes each side (pay attention, do not overcook), put a side and rest.
✔In the same pan add olive oil, brown the vegetables. Add the curry and thyme and pour all the broth and simmer until liquid is evaporated by half. Add the fish for the last 2 minutes. .

🦑🦑Three weeks on #ketogenicdiet and I feel well, yesterday night I cooked #calamari , I am honest, I love calamari but I think we all like #squid.🥰 🐟In my favourite market I always buy mediterraneanexcellent #freshfish and yesterday when I saw those #squids I couldn't resist.😀

‼Squid is of course famous for being difficult to cook, because it gets tough or rubbery. Cook them minimally, so they do not begin to toughen. I recommend no more than 1 minute over a high flame. But instead you could cook them for a long time (20-25 minute), slowly, as in a braise, so they move through the tough phase to tender again.👨‍🍳👩‍🍳

✅*250g sliced squids *250g #artichoke hearts *100g cherry tomatoes *1 tbsp parsley *2 cloves garlic *1/2 lemon zest *10cc extra-virgin olive oil *salt and pepper ✔Vegetables: slice the artichoke and brown in a pan with a clove of garlic with half of the oil (2 minutes), add 1/4 glass of water, the tomatoes and cook over a low fire (2 minutes), season and put aside.

✔Squids: heat half of the oil over a medium/high flame and cook the squids for 1 minute. Remove from heat, and stir together with veggies and the parsley. Serve with lemon #zest .

✅*250g monkfish *2 tbsp five spices *1 tbsp #paprika *100g diced celery *50g sliced leek *100g sliced fennel *100g sliced radish *1 tbsp thyme, anis, oregan, dill *2 leaves basil *10cc extra-virgin olive oil *1 tsp white vinegar *salt and pepper ✔Mix the spices, paprika, salt and pepper in a bowl, dry the monkfish fillets and roll up over it .
✔Cook over a medium-high flame for about 2 minutes each side (pay attention, do not overcook), put a side and rest.
✔In a bowl mix herbs, oil and vinegar ultil emulsion and season. Dress the veggies with the vinaigrette and serve with the monkfish

👌So Here we are, I decided to cook some #cookies but a bit more special than last ones. I called them cremino, #chocolate , #spices and #vanilla#buttercream🍪🍩

✅coockies: *125g butter * 1/3 cup (40g) icing sugar *2/3 cup (85g) flour 00 *1/2 cup (60g) self rising flour *1/4 tsp seasalt *1/2 tbsp #ginger powder *1/4 tsp black pepper *2 tbsp cocoa powder *2/3 cup chocolate sprinckles *2 tbsp icing sugar for sprinkling

✅butter cream: *75g butter *2/3 cup (85g) icing sugar *1tsp vanilla essence
.
✔In a mixer beat the butter and sugar until the mixture is light and fluffy.
✔Put the mix in a big bowl and with a spatula stir slowly the sifted flours and cocoa with salt and spices.
✔Make 2-3cm balls with the dough (18-20g each) and flatten with the bottom of a glass.
✔Cook in a preheated oven (180 °C) for 10-12 minutes.
✔For the butter cream, in a mixer beat the ingredients until the mixture is light and fluffy.
✔After composing the double cookies with the ceram, don't forget to roll over the chocolate sprinckles.

If you try the recipe, you can tag please#yurithefoodie  and #bobboi . ️[Cremini] . coockies: *125g butter * 1/3 cup (40g) icing sugar *2/3 cup (85g) flour 00 *1/2 cup (60g) self rising flour *1/4 tsp seasalt *1/2 tbsp #ginger powder *1/4 tsp black pepper *2 tbsp cocoa powder *2/3 cup chocolate sprinckles *2 tbsp icing sugar for sprinkling . butter cream: *75g butter *2/3 cup (85g) icing sugar *1tsp vanilla essence . In a mixer beat the butter and sugar until the mixture is light and fluffy. Put the mix in a big bowl and with a spatula stir slowly the sifted flours and cocoa with salt and spices. Make 2-3cm balls with the dough (18-20g each) and flatten with the bottom of a glass. Cook in a preheated oven (180 °C) for 10-12 minutes. For the butter cream, in a mixer beat the ingredients until the mixture is light and fluffy. ✅*250g amberjack *150g roman #cauliflower (#romanesco #broccoli ) *3cm ginger *50g zucchini *50g celery *50g red/yellow sweet pepper *50g cherry tomato *1 clove garlic *10cc extra-virgin olive oil *salt and pepper

✔Emulsion: in a pan sauté the cabbage and dice ginger for 2 minutes over a medium fire with the garlic and then add a glass of water and finish to cook, season and using a hand blender with half of the oil mix until creamy

✔Vegetables: slice the zucchini and celery and gently brown in a pan, add ½ glass of water and cook over a low fire, add salt and peppers. Dice the sweet peppers and tomatoes and cook how you did for zucchini and celery.

✔Fish: heat half of the oil over a medium flame and cook the fish first on the skin side until it is crispy, then gently finish to cook the other sides

✔Serve with emulsion on the base of the dish, then the sliced vegetables, over the diced vegetables and finally the fish.

✅*125g butter *¾ cup (185g) sugar *2 eggs, lightly beated *1 teaspoon vanilla essence *2 tablespoons #raisins *1 cup and half (135g) #coconut flour *1/2 teaspoon baking soda *1/2 teaspoon baking powder *2 cups (250g) flour 00 *3 cups *90g #cornflakes , crumbled ✔Preheat the oven to 180°C.
✔In a mixer beat the butter and sugar until the mixture is light and fluffy. Add the eggs one by one and then the vanilla.
✔Put the mix in a big bowl and with a spatula stir the raisins, the baking soda and poweder and the flour.
✔Make 2-3cm balls with the dough and rollup over the crumbled cornflakes.
✔Cook for 15-20 minutes or until crispy and golden.

✅*2 eggs *50g parmesan *200g aubergine *10cc Extra Virgin Olive Oil *25g leek *15g dried tomato *50g cherry tomato *50 celery, 1 tablespoon chopped parsley *salt, black pepper 🍽 ✔Dice the aubergine, celery and tomaroes; slice the leek. Brown the aubergine in a pan with oil, add celery and dried tomato for 2 minutes, finally (with ½ glass of water) add leek and cherry tomatoes and cook over a low fire for 3-4minutes, add salt and pepper. Take off the heat and stir with the parsley.🔪
✔Poach the eggs: A. crack the egg into a little bowl; B. bring a pan of water (with a teaspoon of vinegar) filled at least 5cm deep to a simmer; C. Stir the water to create a gentle whirpool; D. Slowly tip the egg into the centre; E. Cook for 3-4 minutes; F. Lift the egg with a slotted spoon and drain with paper.🍳

✔Preheat the oven to 240°C. Place the pork belly skin-side down on a board. Using a very sharp knife or Stanley knife, carefully remove and reserve the flap of belly that sits over the rib bones, then remove and reserve the ribs. Turn the belly over, short side towards you, and score it widthways, 1cm apart, across the skin.

✔In a frying pan, soften the onion in the oil over a low heat, then remove to a bowl to cool. Use a food processor and mix onion with all ither ingredients (not the feta). Spoon the stuffing mix all over the belly and thencrumble the feta cheese. Then bring the sides of the belly up and around the stuffing so that they meet tightly. Tie tightly with the string.

✅*3 cups vegetable stock, *50g  butter, *1  tiny spring onion finely chopped, *1 cup barley, *1/2 cup dry white wine, *2 cups strawberries, *aslt and freshly ground white pepper and pink pepper 😁

✔Pour the stock into a pan and bring to a boil, then reduce the heat and simmer.
Meanwhile, melt half the butter in another pan, add the onion and cook over low heat  for a few minutes. Add the barley and toast it.
.
✔Add the wine until the alcohol has evaporated. Add a part of the hot stock and cook, stirring, until it has been absorbed. Continue adding the stock until each addition has been absorbed.
.
✔Meanwhile, set a few whole strawberries aside for the garnish and mash the remainder in a bowl, 5-6 minutes before the end of the cooking time, add the mashed strawberries to the orzotto. When it is ready, gently stir with some butter and season with salt and pepper. Serve and garnish with the reserved whole strawberries.

Continue adding the stock until each addition has been absorbed. . Meanwhile, set a few whole strawberries aside for the garnish and mash the remainder in a bowl, 5-6 minutes before the end of the cooking time, add the mashed strawberries to the orzotto. A few days ago I got a lovely request to make a dessert🍰 for a dinner with friends. I had a few hours to buy ingredients and cook it, so I decided to be inspired by simplicity for a delicious citrus🍊🍋 cake🎂.
I love citrus and so it was not a difficult decision.
❓The question is: who doesn't love a organge/lemon cake?
I have to say I was so pleased with how it turned out, and my new stamp set just finished the cake off perfectly. Enjoy it.

*220g butter, softened *2 cups granulated sugar *2 tbsp lemon and orange zest *4 eggs *3 cups sifted self raising flour *1 tsp ground ginger *3/4 cup whole milk *1/4 cup fresh orange juice *1 tsp vanilla extract

Preheat the oven to 360°F and grease and flour a cake pan (9-inches). Cream the butter and sugar in a mixing bowl at medium speed for about 4 minutes and then add the zest and the eggs, one at a time, keep beating the mixture until the eggs are completely incorporated. Keep the electric mixer on low or use a wooden spoon to stir the flour with ginger alternately with milk and orange juce, beginning and ending with flour mixture. Stir in extract.
Bake the cake for 25-30 minutes, the cake is finished when a toothpick inserted in the center comes out clean.

Cream the butter and sugar in a mixing bowl and then add the eggs, one at a time, keep beating the mixture until the eggs are completely incorporated. Keep the electric mixer on low or use a wooden spoon to stir the flour and coconut in a bit at a time until it's just incorporated.
Bake the cake for 45-60 minutes, the cake is finished when a toothpick inserted in the center comes out clean.

Cuocere in forno per 45-60 minuti, la torta sarà pronta quando uno stuzzicadenti uscirà pulito.
Quando la torta si sarà raffreddata, forare la superficie e versare sopra lo sciroppo.

This recipe is easy and fast. It is pratically a fast food but a healthy and delicious fast food.

*2 sea bass fillets *15-20 cherry tomatoes *20 roasted black olives *small bunch of parsley *small bunch of basil *1/2 lemon *olive oil, sea salt and black pepper

Sauce: put 3 spoons of olive oil in a saucepan and over a gentle heat add the chopped tomatoes with olives, season and stir for a few minutes. Set aside, add the chopped herbs (Keep a little back for garnish), the lemon juice and stir to combine.
Sea bass: use a frying pan over a high heat. Meanwhile, slash the skin of the fillets in 2 or 3 places. Add 2-3 spoons of olive oil to the pan and, when really hot, add the sea bass fillets skin side down. Season and cook until the skin is dark golden and crisp. Turn the fillets and cook on the other side for 1 minute. Serve with the reserved chopped herbs. ||NUOVA RICETTA||

[Spigola e e pomodorini]
*2 filetti di spigola *15-20 pomodorini *20 olive nere arrosto *alcuni rametti di prezzemolo *5-6 foglie di basilico *mezzo limone *olio extravergine d'oliva, sale e pepe nero

Salsa: mettere 3 cucchiai d'olio in un pentolino, a fuoco leggero, aggiungere i pomodorini tagliati e le olive, sale e pepe e cuocere per pochi minuti. Mettere da parte, aggiungere le erbe tritate (conservatene una piccola quantità per la guarnizione finale), il succo del limone e mescolare.
Spigola: usare una padella e il fuoco alto. Nel frattempo fare dei tagli sulla pelle dei filetti. Aggiungere 2-3 cucchiai d0olio exrtavergine d'oliva e, quando sarà molto caldo, aggiungere i filetti di spigola con la pelle verso il basso. Salare e pepare e cuocere finoa quando la pelle risulterà croccante e di color dorato scuro. Girare i filetti sull'altro lato e portare a cottura per un minuto. Servire con

Only 4 ingredients needed to make this easy recipe and I always loved potato gnocchi.

*1kg boiled #potatoes *300g all-purpose flour *1 whole egg *1/2 teaspoon salt

In a bowl, mash the potatoes; add the salt and mix well. Crack an egg into the bowl and whisk, then using your hands mix it into the potatoes and finally put the flour onto a clean surface and turn out the potato dough. Working quickly until the dough loses stickiness and becomes more solid. Slice the dough and roll out 1 part into a long rope. Slice the rope into little squares and set aside on a lightly floured surface. Repeat with the remaining dough.
If desired, place a grater on your work surface and slide each square over the grater so they make a useful shape. || NUOVA RICETTA ||

Servono soltanto 4 ingredienti per questa facile ricetta e io ho sempre amato gli gnocchi di patata. [Gnocchi di patata]
*1kg patate bollite *300g farina 00 *1 uovo *sale q.b.

In una ciotola capiente schiacciare bene le patate, aggiungere il sale e mischiare. Unire un uovo intero, e incorporarlo alle patate. Infine, in un piano di lavoro pulito, sistemare la farina e incorporare l'impasto di patate, lavorare velocemente fino a quando l'impasto non risulterà più appiccicoso e risulterà più compatto. 
Dividere l'impasto in più parti e aiutandosi con la punta delle mani creare dei filoncini, con un coltello andranno tagliati in quadratini e spostati su una superficie infarinata.
Se desiderate, usate una grattugia sulla quale far scivolare gli gnocchi al fine di avere una decorazione molto utile in fase di condimento.
