Twist on a classic French recipe, Lazy Man's Budget Beef Bourguignon. I call it lazy man's because I didn't include some ingredients such as garlic, but you could include it if you have the paste.
30g Plain flour (to mix with beef)
1 onion, diced
2 carrots, diced
Large glass red wine
2tbsp brandy (opional)
2 knorr stock pots (I used beef and herb infusions)
Salt and pepper
Important: I cannot stress this enough - it is essential that you wash your carrots when preparing this dish!
Mix the beef and the flour, season with salt and pepper.
Brown the beef in some oil and set aside.
Cook the onions in the butter until they turn translucent.
Add the red wine and brandy and simmer until the liquid starts to look syrupy.
Return the beef to the pan and add the water until the beef is covered.
Add the carrots and the stock pots, bring to the boil, stir and simmer covered for 1 hour 30 minutes.
After about 1 hour 30 minutes you can take the lid off and reduce the gravy to your desired consistency.
