It's Fathers' Day! Greetings to all awesome fathers and father figures in the world and in afterlife, from this sometimes friendly, mostly annoying non-man-hating feminist-in-progress. Whew.
Anyways, let's go to this super simple mushrooms and broccoli stir fry that my keto-living father can eat. (By the way, I recently learned that keto doesn't equate to loads of fat, but rather the absence of carbs. I'm open to corrections, ofc.) Our regular broccoli stir fry here in the Philippines has cow flesh and sugar - but I'm obviously vegan and father is sugar-free, so this version is good enough for us.
BROCCOLI STIR FRY
1 head broccoli, cut into florets
1/4 kg mushrooms
1/3 cup @farmtofolkph coconut aminos
2 tbsp soy sauce
2 tbsp coconut oil
Water, for boiling
Iced water (or cold running water)
First, boil water. Add in broccoli, boil for not longer than a minute. Strain and immediately put in iced or cold water to stop cooking. Strain and set aside.
Heat coconut oil over medium heat. Sautee onion, garlic and mushroom. Season with soy sauce and coconut aminos. Add in ground pepper at the end.
Turn off heat and toss in the broccoli. Done!
Note: You can also add in tofu or other plant protein source, but it's Sunday and I'm too lazy, y'all. - 1 day ago
