One of the best wines we have ever tried! Outstanding! YOU MUST TRY. A bordeaux blend superb! Domaine du Castel is a small family-owned winery located in the Judean Hills near Jerusalem. It was first planted in 1988 and released its first Cabernet Sauvignon and Merlot wines in 1992. The Ben-Zaken family did not plan to produce more than this 1992 vintage, but after positive feedback, more vineyards were planted and a winery built. The estate covers 15 hectares (37 acres) of vineyard land that is composed of well-draining clay and limestone soils. Cabernet Sauvignon is the most planted variety, covering just over a third of the vineyard, followed by Merlot, Petit Verdot, Cabernet Franc, Malbec and Chardonnay.
Castel's top wine, the Grand Vin, is a Bordeaux-style blend selected from the winery's best tanks. The wine is aged close to two years in new French oak barrels before being blended and bottled unfined and unfiltered. Wine not used in the Grand Vin blend goes into the estate's second wine: Petit Castel. This blend is aged 16 months in barrels previously used for the Grand Vin. Castel also make a Chardonnay, C Blanc du Castel, and a rosé.
The vineyards are worked by hand by a team of harvesters. Chardonnay for the estate's C Blanc du Castel wine is crushed but not destemmed, before fermentation in French oak barrels, one-third new. The wine is then aged sur lie with frequent batonnage for a year. Grapes for the red wines are destemmed and crushed, fermented in stainless steel, and then macerated for around three weeks.
