Starting today off with a well balanced meal. I don’t know about you but when it gets warm I don’t feel like cooking first thing in morning. This combo is light and quick. 
Scrambled eggs with ham topped with red pepper flakes, 1/4 avocado, and 1/2 banana with blueberries. 
Planning on having a cup of bone broth in a few hours.

Chef Craig’s Jerk Chicken Recipe
Ingredients:
I Bunch of green onions, cut into 1-inch lengths
6 quarter-sized slices fresh ginger, peeled
4 cloves of garlic
3 jalapeno peppers cut into quarters
3 bay leaves crumble
2-tablespoon fresh thyme leaves
¼ cup fresh lime juice
¼ cup of vegetable oil
1 tablespoon freshly ground black pepper
1 tablespoon ground coriander
1 tablespoon of kosher salt
2 teaspoons of ground allspice
1 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
¼ cup of brown sugar

Preparation:
In a food processor fitted with the metal blade, combine the green onion, ginger, garlic, jalapenos bay leaves and thyme: process to a coarse paste. Add the lime juice oil, pepper, coriander, salt, allspice, and nutmeg cinnamon process until combined. Use immediately, jar transfer to a jar with a tight lid and refrigerate for up to 2 days.

Place the chicken on a rimmed baking sheet and rub all over with the jerk paste coating thoroughly. Set aside to marinate while the oven heats up to 375 F. Place the chicken in a hot oven for 25 minutes. Turn the chicken over once after 15 minutes of cooking and continue cooking until the juices run clear or use an instant-read thermometer inserted into the thickest part of the wing and reads 165F. Serve immediately.

So! ☀️🌱☀️🌱☀️🌱☀️Summer approaching and am feeling more salady kinda meals. Made this stirfry ish thing and can recommend!!!

Cooked some protein (I used tuna but have also done before with the @waitroseandpartners soya pieces and is the same), kale, lentils, spinach and then lobbed in some baked aubergine!

Did the aubey in the oven for 30 mins with some miso paste mixed with balsamic and worked a trick!! Recommend!

Combining my two faves: pasta and salad. This is a plant-based Creamy Sundried Tomato Pasta with a balsamic baby kale salad with hemp seeds. I used @eatbanza chickpea pasta shells and mixed it with about 1/4 cup garlic tomato sauce and 2 tablespoons @miyokos_kitchen vegan sun dried tomato cheese. Topped with fresh basil!!

When my husband and I started #ttc, we stopped preventing pregnancy and believed that I would be pregnant in a couple of months.⁣

What I didn't realize was that it can take 6-12 months for your body to have ovulatory cycles after coming off hormonal birth control.⁣
.⁣
So the idea that I would get pregnant quickly was a myth because it takes time for your brain and ovaries to establish a good communication again after being interrupted for years.⁣
.⁣
Now I know, there are some women who get pregnant their first month off birth control, but it is not always the case.  Culturally, I think we set ourselves up for huge feelings of shame when we can't get pregnant right away.  We start to feel like there is something wrong with us, that we are broken because we can't get pregnant.  I know I definitely felt broken on my journey.⁣

But the reality is, our body may not be ovulating yet and we need to take time to nourish ourselves and tune into our body's signals so we understand when we ovulate and when we are most fertile each month.⁣

🧡 SWEET CARROT & CUMIN 🧡

My soup for the week has been this blend 🙌 sweet and flavoursome, and, easy to make! Just pure organic vegetable goodness.

You will need:
2 small to medium sweet potatoes
5 carrots
2 leeks
1 kallo veg stock
1000ml water 
1 teaspoon of cumin
_
Method:
🌈 Wash, peel and chop the sweet potatoes, carrots and leeks and place into a pan with 1000ml of water, and 1 kallo veg stock cube.
🌈 Simmer on a low heat for 30 minutes.
🌈 Blend with the teaspoon of cumin, and a sprinkle of salt and black pepper! And serve or save for lunches - made me 4 portions for this short post-Easter-4-day-week!

Health benefits of cumin:
🌈 Cumin is very dense in iron, providing almost 20% of your daily iron in one teaspoon.
🌈 Full of antioxidants! Free radicals are lone electrons that cause inflammation and damage DNA. Cumin contains antioxidants that stabilize free radicals.
🌈 Cumin's traditional use as a seasoning may restrict the growth of infectious bacteria and fungi. This may reduce food-borne illnesses.
🌈 Cumin contains multiple plant compounds that decrease inflammation in test-tube studies. It is not clear if it can be used to help treat inflammatory diseases in people.

I’ve always admired people that could take a board, throw veggies and dip on it, and create a piece of artwork. So I decided that I was going to try my hand at it... and I did the damn thing! sweet potato toasts will forever be a favorite of mine. first, sweet potatoes are one of my top 10 can’t live without foods and i love the different topping you can add to them. i love how i can make them into toast rounds (like these) if i want lots of different toppings or i can slice them long like normal toasts. plus, i just discovered japanese sweet potatoes this year and it’s a game changer for these toasts 🙌

Majority of companies are adding ingredients that are simply additives + thickening agents, such as, carrageenan, sunflower lecithin and locust bean gum.
