breakfast details 👉🏻 1/2 zucchini spiralized then sautéed for 3-4 mins in a little ghee over low medium heat. Then I formed a nest with it and cracked an egg in. Fry until the whites are done- you can flip if it’s not getting done fast enough! A slice of gluten free bread with 1/2 avo and some strawberries .

I met a stranger on the bus to Oslo and we had a vegan lunch together. That was awesome. I had Enchiladas with lots of greens and hummus. Super yummy! Can't wait to explore Oslos vegan gems in the next days.

My @WW wellness coach has a saying: "Eat like a connoiseur, not like a common sewer" & tbh, ever since I reintroduced gluten, I've been acting like the latter..
After a week of pizza, beer, girl scout cookies, sandwiches, pasta AND ice cream, my body was craving something green & clean. I put together this smoothie with Trader Joe's Tropical frozen fruit, 1 TBS almond butter, 1 TBS flax seed, 1 TBS chia seeds, 1 scoop of Vital Proteins Collagen, 1 C of coconut milk & a giant handful of spinach - all ingredients are clean and don't contain any added sugar & my smoothie came out to a total of 11 SP (& that's not counting blended fruit)!! :flushed: That is basically half of my daily allowance..& I'm debating whether these are worth it- its packed with nutrients, leaves me full but spending so many points so early on in the day is definitely giving me a bit of point anxiety. I know there are non-dairy milks that have lower point values- but those substitutes also have a lot of ingredients that I'm not really wanting to add back to my diet. What are you thoughts on smoothies? Worth it or nah?

Family-Sized Chipotle Taco Salad👨‍👩‍👧‍👦🌶🌮🥗 .
Need some fun dinner inspo? Why not make a giant full meal salad💃🏼? This chipotle salad is everything I dream about⭐️🌙! Another quinoa walnut ‘meat’ recipe for you and a cashew based chipotle cream dressing! Two fabulous recipes in one today - Happy Friday Guys🤗! .
Chipotle Crumble Ingredients:
1.5 walnuts
2 cup cooked quinoa 
1/2 tbsp avocado oil
3 tbsp chipotle ‘sauce’ (*see first note)
2 garlic clove
2 tbsp tomato paste
1 tsp chili powder
1 tsp cumin
Salt pepper

Instructions:
Combine all ingredients, except for the quinoa, in a food processor and finely chop. In a large bowl, mix together walnut mixture with quinoa and spread over a parchment lined baking sheet. Bake crumble in a preheated oven at 375 degrees F for 15 mins. You will likely have leftovers and this freezes well! .
Dressing Ingredients:
1/4 cup soaked or boiled cashew
1/3 cup cold water
1 lime, juiced
1-2 tbsp chipotle ‘sauce’ (*see first note) depending on desired spicy level
1 clove of garlic
2 tbsp avocado oil
1 tbsp white vinegar
A pinch of salt

Instructions:
Combine all ingredients in a blender and blend until smooth, adding a splash more water if too thick. 
To make family sized salad, assemble all desired taco ingredients in a large casserole dish, top with chipotle crumble, chipotle dressing and let the family dig right in!
*Note: My chipotle ‘sauce’ is simply made from a blended can of chipotles in adobo sauce. I usually buy 2-3 cans at a time, blend it all, use what I need and as freeze the left over flat in a freezer bag. I do this so I can break off chunks as I need it for future use.

Lately my meals have consisted of fodmap-friendly (mostly cooked) veggies, a protein, maybe a whole grain like brown rice, and a little bit of healthy fat. For a long time I neglected eating protein because, “all food has protein,” and, “we don’t need as much as people think,” but not only am I *finally* losing weight, I also feel full. I’ve also been honing in on portion control as a result. I’m not an RD or even a nutritionist, but am super glad glad this is working for *me* and my stomach is happy too. 🥰 How do you plan your meals?

Bliss Nice Cream 💜 You can’t have too much nice cream am I right? 🙌🏼 This nice cream actually became more purple the longer it sat 🤪 For the same color, you can substitute fresh pink pitaya (dragon fruit) with frozen pink dragon fruit packs (which you can find in some well sorted supermarkets). Green spirulina powder is found in most health shops 😁 For a nice cream tutorial check out my YouTube channel (link in bio) 🤓
RECIPE (1 serving)
- 3 frozen bananas (very ripe)
- 1/2 fresh pink dragon fruit/pitaya (or frozen dragon fruit/pitaya)
- 2 tsp green spirulina powder
HOW
1. Add all the ingredients to a high speed blender (or food processor) and mix until the nice cream is smooth
2. It may take a while and you will have to stop a few times to scrape the sides of your food processor or blender (if you have a Vitamix, you will have to stop once in a while to empty air bubbles from the bottom of the blender)
3. Serve in a bowl and add your toppings!

Going out to sushi for my mom’s birthday dinner tonight & that got me thinking about this SALMON ROLL SUSHI BOWL I made last week!😍 It’s cheap, easy, but most importantly, tastes just like my favorite roll! (All without having to buy any sushi grade fish.🙌🏻) Now that’s a win for the tastebuds & the wallet if you ask me!😉

➡️ Salmon🐠(season with salt & pepper, cook in a cast iron for 2 minutes on each side, squeeze lemon over the top & refrigerate until ready to eat), cauliflower rice🍚(sauté riced cauliflower with salt & pepper for 4-5 minutes on medium heat until tender), cucumber🥒, avocado🥑, seaweed snacks(sea salt flavor), pea shoots, lemon🍋, sesame seeds & sriracha🔥.

▪️2 Cups Almond Flour▪️2.5 Tbs Coconut Sugar▪️1/3 Cup Butter, melted▪️32 oz. Reduced Fat Cream Cheese▪️3/4 Cup Powdered Sugar▪️3 Eggs▪️1 Tbs Lemon Juice▪️2 tsp Vanilla Extract▪️9” Springform Pan▪️

1️⃣ Preheat oven to 350°F
2️⃣ To make the crust, mix together almond flour, coconut sugar, butter and 1 tsp vanilla extract; press into a layer on the bottom of a 9” springform pan and bake for 10 minutes
3️⃣ With a hand mixer or electic mixer, mix together the cream cheese, powdered sugar, eggs, lemon juice and 1 tsp vanilla extract
4️⃣ Pour the cream cheese mixutre into the springform pan and bake for 45-55 minutes; run a knife along the edge (but do not release the springform pan) and cool until room temperature
5️⃣ Once the cheesecake has reached room temperature, refridgerate for at least 3 hours (or overnight) and then remove the springform pan
6️⃣ Garnish with fresh berries and powdered sugar - enjoy!

The Perfect Poached Eggs, alongside some 🥑🍄🥓🍅 Tag someone who would love this! . .

Breakfast details here: 2 poached eggs, 2 slices applewood smoked bacon, some tomatoes, mushrooms & asparagus I sautéed in some of the bacon grease, and of course the obligatory sliced avocado.
.
To make the poached eggs:
.
1.Grab some large, fresh eggs.
.
2.Crack each egg separately into a handheld mesh strainer and let the excess liquidy whites fall out
.
3.Put each egg in a small bowl and set aside.
.
4.Bring a put of water to a boil.  Once its bubbly, put it on low heat, then add 1 tablespoon of apple cider vinegar (or any vinegar… you won’t taste it)
.
5.With a spoon, create a swirl in the water (the vortex) and then gently slide your eggs into the water from each bowl. Set time for 3 minutes.
.
6.After 3 minutes, remove the egg with a spoon and dab onto a towel, then put on your plate. If you aren’t eating it immediately you can put it in an ice bath to stop it from cooking and store it to use throughout the week. 3 minutes will get you a runny egg (like this), so if you want less runny, keep it in for 30 seconds longer.

Fry until the whites are done- you can flip if it’s not getting done fast enough! A slice of gluten free bread with 1/2 avo and some strawberries .

Contrary to popular belief, I’m not one to crave açaí🙈 But some days, something as refreshing as an açaí bowl is all I could ask for 🙏🏼

I think I need to fly back to LA because I didn’t get enough of this açaí bowl when I was there (my friend ordered it, so I only had a bite) ... instead I was devouring @cafegratitude’s buckwheat flax pancakes 😂 But I have no regrets with that!!! ❤️

Super simple breakfast for the win! We saw Wicked last night and didn’t get home until after 11pm, so I’m dragging today. 😴 For breakfast I used @sietefoods cassava flour tortillas (my favorite!) with some of their cashew queso over organic soft scrambled eggs, and @bitchinsauce too because I was feeling extra sauce! Threw some veggies on top and bam! The real MVP of the meal was the tortilla though. Oh how I’ve missed them! So happy they’re back in my life. So good! Happy Friday!! 🙌🏼

My dinner last night 🍽 I took those gorgeous chicken thighs and put them on a bed of white rice with plenty of sauce and veggies. I can’t have enough of this recipe.

It’s Friday and I’m thinking about a full weekend ahead, packed to the brim with activities. Tomorrow we have ⚾️games and Candytopia which I’m super pumped for.

I remember a while back a post by @jayshetty where he said to put space between things. Instead of running from one thing to the next, take some time to have space between things. Maybe that’s taking a quick moment before you start the car to get centered. Maybe that’s taking a sip of coffee ☕️ and totally savoring that moment of calm. I’m thinking about that today and planning on taking some space between things this weekend.

This has been a particularly stressful month for me on the work front. I have fallen behind on my health goals and disappeared from social media (which probably is not bad 😋). But I am not ready to give up. We still keep experimenting and discovering love for new, healthy food. Keeps us motivated and our home kitchen active.

Here's a throwback to our first #homemade #burrito made on a busy weekday evening. We shop every weekend for fresh produce. Got some avocadoes that time: usually that means a quick salsa (we were still discovering our newfound love for this fatty fruit). This time we decided to make a burrito. We stir fried some meat and black beans, separately; chopped up the avocado, onions, tomatoes, and cilantro; made a quick dough for the tortilla and made those flour wraps from scratch. A dash of salt and pepper, a squeeze of lemon, and some green 🌶 or jalapeño. Voila! This was all ready in about 45 mins. We have become pros at "divide and conquer" 🤔 since that night, we have made this in various combinations - with egg instead of meat, just plain vegetarian. This Deconstructed Miso Tahini Soba Noodle Salad was a major highlight of my day yesterday. A few years ago, I would have laughed if you told me cooking would be so joyous and so fun to me. I was never really into it, and I was more than ok with eating very bland, flavourless food. But I remember thinking one day, “ok I’m going to use real olive oil and make my own dressing and eat something with carbs and fat” - and it was REALLY satisfying, and delicious. I slowly started discovering that food is suppose to taste G O O D and I honestly, I don’t know if I knew that before as an adult. I looked at food as this thing to concur. But then I started shopping at farmers markets, eating things that were in season and food began tasting delicious; and because I was eating real food, it was healthy too. A bad mental habit is thinking that healthy food doesn’t taste good or is less satisfying; that’s a huge myth. With the approach I took, I feel in love with vegetables and cooking - I had zero interest in cooking before. All the things that used to be a mandate, use to take willpower, use to be something “I had to do”... suddenly became my joy in life. You don’t need willpower to do something you love. And so, I started forming these healthy habits and I don’t even think twice anymore. I don’t crave things I used to crave. I don’t want those things anymore. To me, the secret to getting healthy is cultivating a set of healthy habits you actually enjoy. .

I FINALLY did it! I made my own crunchy as heck granola ✨ If you’ve been following me for a while now, you may have noticed that something I can literally never figure out how to make is granola. I am obsessed with having a variety of textures in everything that I eat, so in the morning when I’m having a yogurt bowl or a smoothie bowl or even a bowl of oatmeal, I love to add crunchy toppings... especially granola. I have a few brands that I always come back to because they are just that good, but sometimes it’s nice to be able just to make your when you don’t want to spend extra money 👌🏻 this granola is a cinnamon raisin flavor and it’s seriously amazing. It is gluten-free, dairy free, and refined sugar free. I’m honestly just so impressed that it stayed together in large clusters and the crunch factor is to die for. We are all fond of this heavenly combo " Pulao ♥️ Chicken Curry "

But we don't really know how they happened. I found it out in an old dairy .It was that time when the first date happened. 💁🏻‍♀️ I am so loving these bites by @perfectbar. While I absolutely love their bars, they’re more of a meal replacement since they’re over 400+ kcal’s. I usually cut the bars in half since I like to enjoy them as a snack as opposed to a meal. These little guys on the other hand are only about 15 kcal per piece- making them the perfect anytime snack!

Ein Gulasch braucht nicht unbedingt Fleisch, um lecker und raffiniert zu schmecken🙋🏻‍♀️

Zutaten: 
1 kg Kartoffeln 
1 rote Paprika 
2 grüne Paprika 
1 Zwiebel 
1EL Olivenöl 
250 g Sauerkraut 
2EL Ajvar
350 ml Tomatensaft
150 ml Gemüsebrühe 
100 ml Rotwein 
Salz, Pfeffer, Chili .
📎Kartoffeln schälen und in dicke Stifte  schneiden. Die Paprika in schmale Streifen schneiden. Die Zwiebel in dünne Ringe hobeln. 📎Olivenöl in einem großen Topf erhitzen und die Zwiebel darin glasig dünsten. Kartoffeln, Paprika, Ajvar und Sauerkraut dazugeben und ca. 10 Minuten schmoren lassen. 📎 das Gemüse mit Tomatensaft, Gemüsebrühe und Rotwein angießen. Um etwas neue Inspiration beim Kochen zu bekommen ist die Box wirklich super. Hätte wirklich nicht gedacht, dass es so einfach ist, Satéspieße zu kochen. 
Auch der Kokosreis, einfach Reis, gekocht in Kokosmilch ist für mich eine Innovation und die Satésauce war wirklich sehr einfach zuzubereiten. Mit ein bisschen Limettensaft verfeinert sehr #lecker. 😋 🇬🇧 Vegetables are my meat 🥩!
Today I’m having satay skewers with #chunky peanut sauce🥜 and coconut rice 🍚, meal number #2 from the @hellofresh box. It really is a good thing for new #cooking #inspiration. 
Really, I would not have thought, that making this meal could be so easy. Also the coconut rice, just boils in coconut milk and water is an innovation for me and the peanut sauce was super easy to make, too. Super fine with some lime juice. #yum 😋

Pimp your mac ’n cheese! Seriously, I've seen so many pimped mac 'n cheese bowls this week I gave in and made one myself! -

I was inspired by @thefitcookie’s flavour combo by adding sun-dried tomatoes and by @alivenutritionsolutions for making sure it is a balanced meal, including veggies and protein for the win! You bet I #putaneggonit! -

When I make my mac ’n cheese I always add broccoli at the halfway point of the noodles being done. This way I get added flavour, texture and some veggies to boot. I mean, who doesn’t love the combo of broccoli and cheddar. 🧀 How do you pimp your mac ’n cheese? -

I think I finally mastered the soft boiled, jammy egg and I did a happy dance 💃. Honestly, these days it’s the little things that truly make me the happiest. Because for too long I was focusing on all the wrong things to make me happy, the things I had checked off my list. And then those things disappeared and I’ve learned to rely heavily on my gratitude practice to notice the little things that make me appreciative. And when you can learn to be in a state of gratitude, you’re a lot happier.

Ok but the egg tho 😉. For that perfect soft boiled egg here is what you need to do: boil water, once it’s boiling, turn the heat down slightly and then add your eggs. Cook for 7 minutes while it’s lightly boiling (around a 5-6 on the oven). Once the timer goes off, remove with a slotted spoon and place in an ice bath. Let it sit for a minute or two and then carefully peel. Voila- perfect jammy eggs 🥚. This soba noodle bowl has some of my faves- sautéed kale and thinly sliced raw watermelon radish from my new fave place- @raisetherootmarket, sesame seeds and a quick miso-ginger dressing I whipped up.

Chocolate coconut protein balls make the perfect pre or post workout snack!

Details:
-3/4 cup rolled oats
-1 scoop chocolate protein powder (I used @bobsredmill for a plant-based option)
-1/2 cup almond butter (I used @traderjoes crunchy unsalted)
-1 Tbsp honey
-2 Tbsp unsweetened shredded coconut
Mix all the ingredients together, then roll into 12 bite-sized balls.

I did not play Holi as I don’t really enjoy playing with colors but it was a fun day with these yummies from @starbucksindia, I tried their chicken strips for the first time, loved it 😋
I loved Starbucks food, specially Murg Kathi Roll and Pastries and of course Coffees ☕️

I made this Keto Cornbread ( made with #coconutflour ) for the Mister today because he complained that I haven’t made it in over a YEAR! It's the middle of the week...how is it going for you? It's oat bran kinda morning for me with antioxidant yummy fruits. .

Since I have discovered oat bran few years ago, I hardly eat the common rolled oats. It's also because oat bran is very simple to make and my lil man likes it too. Oat bran is the outer shell of the seeds while rolled oats is the entire squashed groat. Nutrition wise, a cup of oat bran has lesser calories, more protein and fiber compared to a half cup of rolled oats. A cup is way too much. What you see in this bowl is about 1/4 cup of oat bran. 
Oat bran itself is not as tasty as rolled oats...which is why I flavour my bowl with cocoa, fruits and nuts. 😊

What's your favourite weekend breakfast? French toast is one of our favourites...no drizzled honey but instead slightly dusted powdered sugar with berries and kiwi. One thing that would complete this meal is a cup of my Indian chai. Alas, I didn't have enough time to make one, let alone enjoy it. Will get my latte ☕️ fix when I'm at work instead 😉.
