{NEW} ULTIMATE Shrimp Cobb salad + Fresh Lemon-Chive Salad Dressing 💥🥑😍🍋
{ I was thinking very seriously about life today, and realized that we would all eat salads more often if we had someone to make them for us...😋 bonus points if they look like this one! }

makes 4 servings 
Ingredients:
1.5 lbs. large shrimp, peeled and deveined
1 Tbsp avocado oil
4 boiled eggs cooked and peeled
6 slices of cooked nitrate-free bacon, diced 
1 cup of organic corn kernels, either fresh or frozen - thawed
1 large avocado, diced
1/2 cup crumbed cheese of choice, feta or blue cheese are both great on this
6 packed cups chopped romaine lettuce

Fresh Lemon-Chive Salad Dressing:
1/3 cup plain Greek yogurt
1/2 fresh lemon, juiced
1 fresh garlic clove
4 fresh chives
sea salt and freshly ground pepper, to taste

Instructions:
In a blender or food processor, pulse all Salad Dressing ingredients until creamy. 
Taste, adjust seasonings to your liking.
Cover, and refrigerate until ready to use.

Heat 1 Tbsp of oil in a large skillet over med-high heat; Add in shrimp and cook for about 4-5 minutes or until pink and just cooked through. Season with sea salt and freshly ground black pepper, then set aside.

Arrange all salad ingredients on a platter or a large salad bowl nicely as shown, and when ready to serve, drizzle with dressing and gently toss to combine.

#beyondthebite Iced Cassava Flour Sugar Cookies
(Yields 1 1/2-2 dozen)
Sugar Cookie Ingredients

1 1/2 cup Otto's Cassava flour
1/2 tsp sea salt
1/2 tsp baking soda
2/3 cup non-hydrogenated palm shortening
1/2 cup maple syrup
1 tbsp vanilla extract
Vanilla Icing 
1/2 cup full fat coconut milk
1/2 cup non-hydrogenated palm shortening
1 tbsp vanilla powder
1/4 cup maple sugar
1/4 cup Otto's cassava flour
Process

Preheat oven to 350 degrees.
Beat shortening, maple syrup, and vanilla in a standard mixer or food processor.
In a separate bowl, whisk together dry ingredients.
Add the dry to the went and beat until just combined.
Transfer the dough to a large sheet of parchment paper, use your hands to pat the dough down into a round circle, sprinkle it with flour, and then place another piece of parchment on top of it.
Use a roller to roll out the dough to 1/4 inch thick, then cut into desired shapes, continuing until all of the dough is used.
Put the sheet in the oven and allow the cookies to bake for 10-12 minutes until golden brown on the bottom.
Remove from the oven and allow to cool completely before frosting.
To make the frosting, puree coconut milk, maple sugar, vanilla, and shortening in a food processor.
Add in ottos cassava flour 1 tbsp at a time, then allow the mixture to puree for another 5 minutes until smooth.
Once the cookies have cooled, frost them with the icing and enjoy.
Recipe Notes

Add 1/3 cup maple sugar for more sweetness to the cookies if desired.
Replace vanilla powder with vanilla extract in the frosting if not on AIP.

Dinner tonight was an easy cheap seafood fest 😅 tuna + egg salad w/ chopped celery, garlic, minced onions, pepper, salt, mayo, + topped w/ smoked paprika in romaine leaves. Aaaaand a plate of boiled shrimp w/ fancy sauce aka mayochup. Obvi there’s carbs in this from the @drinkbai bubbles + from the ketchup, buuuut today was our 4th day of swimming laps this week 🙌🏼 we swim drills + laps for no less than one hour straight so I’m being a little lenient with carbs, but mostly sticking to a #lazyketo and #lowcarb diet. I also have been guzzling 1.5 gallons of water a day! 🌊🏊🏼‍♀️🙌🏼

I will say, it’s SO NICE to rely on easy quick meals when swimming is your cardio. My body is exhausted + sore after a swim workout so if it takes me less than 20 minutes to make, I am alllllll for it. 😋

That can be answered both “yes” and “no.” Eating LESS will get you results upfront, but it is NOT sustainable for a healthy lifestyle. You must eat WELL! For me, that means eating whole foods – no processed foods – foods that don’t have an ingredient list because they ARE the ingredient.

1/2 tub (7 oz) @becausecookiedough
1/2 cup dairy-free ice cream - make it cookie dough chocolate chip
1 Chocolate Coated Cookie Dough Square - cut into chunks
1-2 tbs coconut butter (melted)

Recipe:
1. Preheat oven to 375 F and spray a 6-inch cookie skillet with oil.
2. Fill the skillet with about a 1/2 inch layer of cookie dough. 
3. Bake for 7 minutes.
4. Remove the skillet from the oven and add Squarechunks to top.
5. Put back in oven for another 2 mins.
6. Remove from oven and let cool.
7. Then add your ice cream and coconut butter glaze.
8. Enjoy straight from the skillet!

👉🏻I made buffet prep quiet similar to last week because I absolutely enjoyed it and felt great! I used to make portioned meal preps but right now I find buffet preps easier to stick with!⠀

So if you are not happy with what you are doing at the moment maybe try to change the plan and try to find your happy place so you can be consistent. It is ok to eat the same meals over and over again, however I am a fan of varieties. Therefor try to change at least few things each week but keep the basics

Either way, I’ll be up in the kitchen just working on my oatgame (say it to the tune of Fergalicious 🎶) . i am so grateful for every single one of you who have recreated the baked oats recipe. Ingredients:
- 1/2 cup (40g) Rolled Oats
- 2 tablespoons (14g) Coconut Flour
- 1/2 teaspoon Baking Powder
- 1 egg white (46g)
- Splash of Vanilla Extract
- Water or Almond Milk to Mix (~1/2 cup)
- tablespoon of rainbow sprinkles
- 1 pack of Stevia

1️⃣In a bowl, mix oats, coconut flour, baking powder. Add in egg whites, vanilla, and water. Mix. Stir in Sprinkles

2️⃣ Preheat oven to 350 degrees. Place oats in a small cake pan or ceramic bowl. Bake for 20 minutes.

Once cooled, you can mix 0% Greek Yogurt and Cream Cheese together to make a frosting or just add some vanilla extract to Greek yogurt if that floats ya boat 🚣🏼‍♀️ If you give it a shot, shoot me a pic + let me know what you think. I love sharing it on my story!

If you’ve been following along in my stories, you know that there’s been a major cauli gnocchi shortage in DC over the past month, so I was excited to find out that my mom has been hoarding three bags of it in her freezer (no cauli gnocchi shortage problems in Boise! 🙌🏻) Cooked up two bags for the fam tonight (there’s a crispy gnocchi tutorial in my stories), and paired it  with grilled asparagus (topped with parmesan — always!) and honey garlic chipotle salmon for an easy dinner ☺️. -

#whatsonmyplate: honey garlic chipotle salmon 👉🏻👉🏻*recipe* 1) in a bowl, combine 1 tbsp. honey (I used manuka), 1/4 tsp. chipotle chili powder, 1 tbsp. melted ghee or butter, a punch or salt + a punch of pepper. Spread evenly over two 4-6 oz. salmon filets (you can easily double this to serve four). 2) in a pan, heat 1 tsp. ghee or oil for a minute; add salmon filets, skin side up, and sear for 3 mins.; flip, and cook an additional 3-4 mins. 🌶🍯 •• crispy cauliflower gnocchi (there’s a tutorial for this in my stories) •• grilled asparagus topped with fresh parmesan cheese 🌱👌🏻.

Something happened today. I knew it was inevitable. I knew Noah was getting to an age where he would start asserting his independence and voice. ⁣

“I don’t want GREEN waffles though mummy” 😭😭😭😭😭 ⁣

He’s at an age now that he realises mash potato can be white (not orange). That pancakes can be brown (not green). That everything tastes better with chocolate/cacao powder (not ‘plain’). This isn’t to say he doesn’t LIKE the latter mentioned foods. Or that he doesn’t like vegetables. But he now knows the difference and being a 3.5yr old wants to try and gain some control. ⁣
⁣
In my kitchen vegetables make an appearance at almost every meal or snack whenever possible. And that is not about to change. And I strongly believe it’s important not to always hide them. My kids clearly see me grate vegetables into smoothies or cookies or cakes or main meals. Strategic? Possibly. But a secret? Never. And they do also happily eat vegetables that are obvious and plain. ⁣
⁣
Anyway. Long story short, I am entering unchartered territory with this ‘wised up’ 3yr old. He still was totally happy to eat the waffles by the way (after a moment of tears and trying to tell me he NEEDED brown waffles not green ones 😅). So I guess I keep walking forward with grace and love as I navigate this new terrain. ⁣

Made another yummy dinner tonight with enough leftovers for lunch tomorrow...WINNING!! Protein shakes for breakfast, leftovers for lunch and hot cooked yumminess for dinner.  Love only having to cook one meal a day!  Tonight I made butternut squash and rainbow chard sautéed in olive oil and cinnamon with some sausage. These Taco Bowls are jam packed with Mexican flavors and abundance of nutritious ingredients.

Ingredients
Taco filling
1 Tbsp olive oil
2 garlic cloves, minced (2 tsp)
1 lb 93% lean ground turkey
Salt and freshly ground black pepper
1 Tbsp chili powder (preferrably 1/2 Tbsp regular 1/2 Tbsp ancho chili powder)
1 1/2 tsp ground cumin
1/8 tsp cayenne pepper (optional)
1/2 cup low-sodium chicken broth
1/2 cup tomato sauce
.
For bowls
2 (12 oz) bags riced cauliflower, cooked according to package instructions
1 cup frozen corn, cooked according to package instructions (optional)
3/4 cup shredded Mexican blend cheese
1 cup homemade* or store-bought pico de gallo
1 avocado, sliced
Fresh cilantro and lime slices, (optional)
.
Instructions
1. Heat olive oil in a 12-inch non-stick skillet over medium-high heat.

2. Add garlic and saute 10 seconds, then add turkey and season lightly with salt and pepper (about 1/4 tsp each add more at the end as desired). 3. Cook, turning and breaking up turkey occasionally, until cooked through, 5 - 6 minutes. 
4. Add in chili powder, cumin and cayenne pepper and cook 20 seconds longer, while tossing. 
5. Pour in chicken broth and tomato sauce, bring to a simmer then reduce heat to low and let simmer until sauce has reduced, about 3 - 5 minutes. 
6. To assemble bowls divide rice cauliflower among bowls, top with turkey mixture, corn, cheese, avocados, pico, cilantro and serve with limes for spritzing. 
7. *For homemade pico de gallo, in a bowl toss together 3 diced Roma tomatoes, 1/4 cup diced yellow onion, 1 small minced garlic clove, 2 Tbsp minced cilantro, 1 Tbsp lime juice and season with salt and pepper to taste.

RECIPE: 
Blend together 2 whole eggs + 2 egg whites + 1 cup traditional oats + 2 bananas + 2 tbs almond meal + 2 tsp cinnamon + 2 tsp baking powder 🥞

Cook in a non-stick pan for 2-3 mins each side or until golden brown 🔥 add your favourite toppings + enjoy! .

🔥🔥 Garlic butter shrimp and zucchini noodles cooked in one pan in under 15 minutes. This flavor-packed dish is healthy, keto and low-carb and makes a delicious protein packed meal in minutes 🍝🍤

Ingredients
3-4 medium zucchini
1 pound raw shrimp peeled and deveined
1 tablespoon olive oil
2 tablespoons butter
3-4 garlic cloves minced or crushed
1 teaspoon Italian seasoning or oregano optional
1/4 teaspoon of red pepper flakes adjust to taste
Salt and pepper to taste
Freshly grated parmesan or chopped parsley to garnish, optional

Instructions
Wash and trim the ends of the zucchini. Make the zucchini noodles using a spiralizer and set aside.
Heat 1 tablespoon oil in a large pan over medium-high heat. Add the shrimp to the hot pan, season with salt and pepper cook for 1 minute. Add the garlic, Italian seasoning, and crushed pepper to the pan. Cook for another minute per side or until shrimp is light pink and garlic is golden brown. Transfer to a bowl.
Add the Butter and zucchini noodles to the same pan, season with salt and pepper and cook for 2 minutes or until tender.
Return the cooked shrimp to the pan and stir through. Garnished with freshly grated parmesan cheese or/and chopped parsley.

We’re half way thro the month which brings us both closer to finals and Christmas. 🤔🤔 Got tons of essays and reports to finish, especially that Python project would take me awhile to design and code. Besides that, there’s also meetings to attend for up coming winter break events, so I suppose it’s going to be a busy weekend. #mydays •

Zucchini blueberry banana bread. I mentioned using zucchini in baking last time, well well well I tried them in banana bread and look how it turned out. You can’t taste the zucchini at all, but oats and it seem to me not the best choice. Made it way too soggy and no air bubbles formed. #whatsonmyplate: honey garlic chipotle salmon Recipe:
1) In a bowl, combine 1 tbsp. honey (I used manuka)
1/4 tsp. chipotle chili powder
1 tbsp. melted ghee or butter
a punch or salt + a punch of pepper
Spread evenly over two 4-6 oz. salmon filets (you can easily double this to serve four)
2) in a pan, heat 1 tsp. ghee or oil for a minute
add salmon filets, skin side up, and sear for 3 mins
flip, and cook an additional 3-4 mins. 🌶🍯

Recipe
1 3/4 Cup whole Wheat Flour
3/4 Cup Rolled Oats
1 Tsp baking power
1 Tbs ground flax seed
1 Tsp Cinnamon 
1/2 Avocado
1 Tsp vanilla
1/3 Cup honey or maple syrup
1/4-1/3 Cup almond milk
2 eggs
1 Cup fresh Blueberries (Or 1/2 Cup dried)
1/4 Cup mini chocolate chip (optional)

Directions. 
1. Preheat oven to 350 degrees
2. Mix dry ingredients in one bowl
3. Mix wet ingredients in a separate bowl
4. Add the wet mixture to dry ingredients and combine thoroughly.
5. Fold in blueberries and chocolate chips
6. Roll dough into a 2 inch ball and flatten placing it on a cookie sheet with parchment paper or non stick silicone mat. 
7. Back at 350 for 12-14 minutes.
