Literally never been so excited to eat just a plate full of vegetables. 
As much as I enjoyed these past two weeks I’m reminded why I eat the way I do. Keeping it simple with sweet potato, spinach, avocado, and chickpeas for dinner. Now going to swim because somehow I left Georgia and it was 70 degrees and now that I’m back it’s a record high of 93 in May. ☀️

My dinner this eve (minus a chunk I’d already eaten because I was starving). This is @Waitrose vegetable couscous and summer veggie salad which I heated in the microwave with homemade Nando’s chicken and some mayo. A very quick and easy dinner 😍
Today I’ve had a packet of salt and vinegar squares crisps, a big bowl of crunchy nut clusters with whole milk, 4 popcorn chicken pieces kindly donated by my partner who had KFC, about half this bowl and a kinder bueno. 
Feeling very satisfied 😍😍😍

Chicken curry for dinner. This is the simplest chicken curry in the world. Marinate the chicken with 2 tbsp yogurt and ground cumin, coriender, chilly. Heat 2 tbsp oil in a pressure cooker, temper with cumin, cardamom, clove and little piece of cinnamon.  Fry some onionn into that and then add gerlic and ginger. When translucent add some tomato paste/puree/diced. Cook until oil splits ( around 12/15 minutes). Then add the marinated chicken. Cook for few minutes add water, mix well close the cooker. Cook till 2 whisle and open it before the steam is completely released. This is what I ate a lot while growing up . What I ate today - 24.05.19

Breakfast: 250g of vanilla skyr with granola, cornflakes and strawberries 🍓 
Lunch: two fried eggs, a piece of rye bread, carrots 🥕 and some leftover dahl 🥘🍳
Snack #1: an apple 🍏 🍎
Snack #2: a piece of dreamy carrot cake with cream cheese frosting and raspberry sauce (more a dessert than a snack though 😅) 🍰🍰
Dinner: All you can eat sushi from a local restaurant I went to with my family 🍣🍤

Food was really good today - even though I kinda ruined my fried eggs 😂 But they still tasted amazing 🍳🍳
We went out for sushi tonight- the pictures shows some of the sushi we shared 🍣 I mostly ate the vegetarian stuff with tofu and avocado, but I also ate a few pieces with tempura shrimp 🦐 
Sushi was so delicious that I overate waaaay to much, so my stomach is kinda hurting right now - my favorite kind of 1st world problem 😂🙄

Absolutely delicious day of food today!!
Trying to maximise my fruit and veg consumption, while keeping it tasty AND incorporating a little "treat" too.
I've been following a few @slimmingworld accounts recently, and talking to some friends/family who follow the plan, and while I'm not going to become a member any time soon, some of the meal ideas look amazing and I can't wait to try them!
I also bought the @pinchofnom cookbook today and can't wait to flick through it over the Bank Holiday and plan a load of new meals for the next couple of weeks!
Here's what I had today:
Breakfast: All Bran, Banana and Almond Milk 
Lunch: Pasta with Pesto, Green Salad, Cherry Tomatoes and Parmesan Shavings and a Fig
Snack 1: Tropical Fruit Salad (Honeydew Melon, Nectarine, Mango, Clementine, Passion Fruit)
Snack 2: Strawberries, Blueberries and a Muller Light Yogurt 
Dinner: Pan Fried Chicken Breast, Steamed Purple Sprouting and Mange Tout, Parmesan Roasted New Potatoes, Green Salad, Roasted Cherry Tomatoes and Hummus
Pud: Strawberries, 2 Scoops Clotted Cream Ice Cream with 2 Crushed Amaretti Biscuits (may have a couple more Biscuits with a Cuppa before bed)

Tried the new @plantpowerfoods veggie ribs for tonight's dinner! Would have loved to have had it with mac n cheese and fries like they suggest on the packet BUT I'm trying to eat a little healthier atm so it's kale, mixed veg and quinoa instead 🤷‍♀️ tasted really nice tho! I can imagine they'd taste even better BBQ'd 😋

So, for the recipe:
HUMMUS: For the hummus, I blended up (about 300g?) of chickpeas with loads of tahini, turmeric, smoked paprika, garlic and cumin. I also added in one roasted yellow pepper (although this made it a tad too runny on the first day, I quite liked the consistency on the second day).
WRAPS: The wraps were just water and flour (50 g water for 150g flour) and salt kneaded, flattened and heated up in a very hot (and lightly oiled) pan.
VEG: Just sauté or roast whatever veggies you have (I used 🍅and 🍄, as well as some 🍃) and add 😁

Today's tea was a bit of a disaster. Supposed to be meatballs but stupidly forgot to take the mince out of the freezer this morning. So mince fried in @jdseasonings spaghetti and meatballs, with pasatta, extra garlic, and a splash of Worcestershire sauce. Served with brown rice pasta (gf) and 30g cheese

Part of our current fruit stash from @rivercityproduce 8 cases of mangos, some pears, 2 cases of peaches, 5 large honeydew, 40ct avocados and 2 jackfruits! 😍😍😍😍 We really got a good stash right now. So excited for the peaches and jackfruit to ripen up! 🙌 We spend on average about $150 a week on groceries for our family of 4/5. Some weeks more, some weeks less depending on what the prices are. Not pictured is all the fruit in the freezer, salad stuff in the fridge, bananas on the counter and beans/legumes/nuts/seeds in the cabinet.
