🦐Mango BBQ Shrimp Bowl🦐

▶Ingredients:
Cauliflower rice quickly sautéed and mixed with cilantro and red pepper
Sautéed broccolini
Sautéed red cabbage
Avocado
Greens
@marinadelreyfoods wild caught shrimp (sautéed and then tossed in this sauce).
▶ Sauce: 
1 Mango chopped
1 tablespoon tomato paste
3 tablespoons coconut aminos
2 tablespoons water
1/2 teaspoon Onion powder
1/2 teaspoon Chili powder, salt to taste
Red pepper flakes to taste
Juice from 1/2 large Orange
Chopped onion 1/4 cup

1. Heat all ingredients over medium high until onion becomes soft, stirring every couple minutes.
2. Then use blender or immersion blender to purée the sauce.

Dinner was soo tasty. Homemade vegan black bean burgers in a lettuce bun with violife cheese, red onion, mustard, ketchup and pickles. Also had no oil chips, corn on the cob and salad.

We moved into our home 12 years ago this month. It’s hard to believe. I probably mentioned this before but this is the longest I have ever lived in one place. Once in a while I get the itch and start daydreaming about greener pastures. We’re watching our children grow up in this home. A safe loving environment free of turmoil, healthy most days, room to roam, and lots of family moments. This time will pass and they’ll grow up and have their separate lives. I’m trying not to get too sappy about it but it’s tough. When I was young all I wanted And needed to do was get out on my own and it came way too soon. There were some really hard times and I struggled. I learned perseverance and independence very early. We don’t want our children to struggle but we also want them to fail sometimes. Failure brings growth and strength. Even though I have a tough time watching that happen I know I have to step back and let them get back up on their own. Nurture when you can and educate as much as possible. Education brings opportunities. And I don’t just mean book smarts I mean emotional education too. We need to learn how to empathize with others.  We need to share or thoughts because that is another form of growth that never gets old. Have a lovely Friday! .

Bang Bang Tofu & Broccoli on a bed of Rice Noodles 🍝!!
Seriously, can we actually get too much of a good thing, when it’s this good?!?!
Back when I first started my plantbased/vegan lifestyle, tofu really wasn’t a favourite of mine. In fact I really couldn’t stand it!! I think the main thing was I didn’t really know how to cook with it and I wouldn’t marinade it or change it up at all. 
I started to change my mind and my taste buds towards tofu once I was introduced to smoked and sriracha tofu. This made the transition a lot easier.
Then I started to experiment more with it and I guess my taste buds started to do a happy dance when I would use it in different recipes. 
Tofu is now one of my favourite things to eat. I use this sh** in everything, from sauces to cheese to dessert and of course main dishes.
Don’t be afraid to experiment!! It could seriously change your life, and hopefully it for the better!!

i weighed myself this morning and i lost weight.  about 2kg... •

in the bottom of my heart, i knew i had lost weight during my trip. as much as i see pictures of me and see my huge things (like huge), i feel the clothes i bought this month being looser. i thought that seeing the weight drop would shook me, make me realize that im so sick, but it didn’t. the number on the scale just relieved me.  i didn’t feel joy... if anything i wanted it to be lower? this is so sick. •

im not supposed to lose weight. the doctor warned me for fuck’s same. i am not to lose any weight, but here i am. i can’t do this. i don’t want to gain. i can’t. but im going to see my doctor very soon and she’ll be livid. im scared. i can’t go back IP. i have my dance show in 2 weeks... i can’t leave my dance group.

MINT CHOCOLATE ENERGY BITES
° ° °
INGREDIENTS:
- 1 cup raw cashews
- 1 cup raw almonds
- 1/2 cup unsweetened cocoa powder
- 2 cups raisins
- 1/4 cup @lakanto monk fruit syrup (or maple syrup)
- 2 tsp pure mint extract
° ° ° 
DIRECTIONS:
- Put all ingredients in a @vitamix dry blender or a food processor, and blend until the dough starts to stick together. You may need to scrap down the sides a couple times. Roll into 32 balls and store in an airtight container in the fridge. Enjoy!

Feeling really bloated today, i think it may of been the mcd's but it could be something else. 
I done my usual work out today (i had a rest day yesterday) so my post workout meal was a smoothie made from spinach (lots of it), frozen mango and pineapple peices, half a frozen banana, tbsp spirulina powder, tbsp hemp seeds and water. I also had a three ginger tea. What are you celebrating this weekend, pals? 🥳 Many of you are in an Easter mood, others getting ready for Passover, and I’m sure there are many other celebrations going on as well! ❤Whatever it is you celebrate, I hope you have a wonderful time! Ok, let’s talk about this bowl, shall we? 1 1/2 cup pardina lentils, 6 radishes, 1/2 cup fresh dill, 4 tbsn home made sauerkraut (probiotic), home made sunflower cheese sauce (I have shared that recipe a few times but let me know if you need it! 🧀), some spring onion for garnish and some lemon juice and pepper. Fresh, yummy and filling. 👍💚 Just another simple idea for lunch or dinner, pals! This bowl has about 28 grs of protein and it was my post workout 🏋‍♀ meal the other night. Ok, off to take my 3rd flight now to get to Coyhaique in Patagonia🏔 (Chile), where I was born (!!!) and where apparently I won’t have internet ‘til Sunday night. “See” you then! Hugs!!

Ok, hablemos de este bol, ¿vale? I needed to clean my fridge and part of my freezer! So I made this stew with vegetable broth, lentils, potatoes, carrots, grape tomatoes, broccoli and @fieldroast apple-maple sausages! Oh and brown rice noodles!

Looky looky I’m down 13 pounds. - I feel a difference too. I have been snacking on a square or 2 a night of dark chocolate. I’m like I can eat dark chocolate and lose weight? I hit the mother load. I need to go get my spring mani/pedi - who is with me? I had absolutely no full length mirrors or even a mirror outside the bathroom in my house in forever. Now I do. Now I stop and look stare. Maybe I knew what I was doing with the self sabotage all my life and didn’t want to witness it? I  bought a full length mirror and one to hang on wall by front door. I want to see me. I smile when I see me. I deserve it. This beautiful woman I have been a brutal bully to is smiling back at me. I’m  cute. I’m  growing. I’m kicking a$$. Cmon 205. It’s my first 30 pound loss mark. Seems as the weather is alright atm we took advantage of it and had a picnic style lunch in the garden.

I had a salad with roasted cauliflower and houmous.

The girls had chicken nuggets (gf and none gf), wedges, carrot sticks, cucumber and lily-Mae had some roasted cauliflower too. We all had some grapes as well
