Being overweight for most of my life left me so conscious of my body for as long as I can remember! This morning I entered my local leisure centre for the first time in 20 years! I felt so proud of myself walking out of there after an aqua fit class, everyone was so friendly and were not bothered in the slightest about what I looked like! So to anybody who’s thinking of giving it a go, DO IT!! The feeling of being proud of yourself is a far better feeling than being embarrassed or disappointed that you didn’t do it! 💪🏻

#mondaymotivation and this is why I shouldn't speak to myself the way I do.. I really struggle to see the big picture sometimes and when I see photos it really shocks me how far I have come.. 3st7lb gone forever and 2st.10lb with @slimmingworld and now in a different journey of maintaining and toning at the the gym 💖 which I love.. This weekend I wore a crop top! Something I'd hadn't done since I was 8yrs old! It felt great, though a little self conscious but what I love most about Pride is people have such body confidence and look incredible 💫.. Because it's all that, confidence 💃

2015 to 2019.. Nearly 29 yrs old and I'm the best shape physically.. Mentally I struggle but we all do and I will get there 💖

Mushroom Broccoli Rigatoni with Lemon Garlic Cream Sauce 🥦🍋 ~
16 ounces rigatoni
1 head broccoli, chopped
1 cup mushrooms 
Sauce: (or Cauliflower Alfredo) 
2 cups unsweetened plain almond milk
Juice from 1 small lemon
10–12 large garlic cloves
3 tbsp brown rice flour
1–1.5 tsp sea salt 
1 tbsp olive oil
Black pepper to taste
Optional: 1/2 tsp lemon zest
Bring a large pot of water to boil and cook pasta according to package instructions. In a separate pot, use a steamer basket to steam the chopped broccoli for about 5 minutes. Gently wash mushrooms to remove any dirt. Slice each mushroom into about 4 pieces. Add to a pan and sauté with a splash of water until slightly wilted and cooked down. Prepare the sauce by mincing the garlic. Add the garlic to a large pot with the olive oil and cook until translucent. Stir in the flour and whisk to get rid of any clumps. Slowly stir in the almond milk and continue to whisk. Add the lemon juice and lemon zest if using. Reduce heat to low and let simmer until the sauce has thickened. Add the salt and pepper. Add the mushrooms, broccoli, and sauce to the cooked pasta. Top with additional salt, pepper, or red pepper flakes if desired and enjoy.

2 cups cauliflower, chopped 
1 cup cashews
1/2 cup vegetable broth
1/4 cup almond milk 
2 tbsp extra virgin olive oil, divided
4–5 large cloves garlic
1 medium yellow onion
Juice from 1/2 lemon
1 tsp sea salt
4 tbsp nutritional yeast 
1/4 tsp white pepper 
Add the cashews to a bowl and top with boiling water. Let soak while you complete the next steps. 
Chop the onion and mince the garlic and add to a large sauté pan with 1 tbsp of olive oil. 
Cook on medium/low heat until the onions start to brown slightly, about 5-10 minutes. Add the vegetable broth and chopped cauliflower to the pan. Reduce heat to low, cover, and let cook for about 5 minutes or until the cauliflower is fork tender. Transfer contents to a high speed blender or food processor with all remaining ingredients, including the drained cashews. Process until completely smooth. Taste and add more salt or pepper if desired. .

Today we cruised into the port of Skagway which has a population of 948 people! Yes, you read that correctly, less than 1k. Our agenda today is taking a bike 🚲 tour and going exploring 🔦 (finding halibut too 😉)

The food offered on the ship is much more abundant of course than my typical routine, but I don't hold back. I ensure I get in a quality workout 🏃🏻‍♀️ and surely we walk a lot.
