Ruffle milk pie rolls.

I know, it may sound weird but it’s one of the best desserts I’ve ever had. This recipe was inspired by Bella of @ful.filled. She has the full recipe on her blog. The basic concept is ruffling up phyllo dough and squooshing it in a baking dish. Then you bake it until crispy, pour a custard (coconut milk + cornstarch) over it, and bake it again. There are many different variations with different fillings and flavors (hop on Google!), most of them sweet but you could totally go savory.

For these right here? I basically made her recipe (sweet pumpkin spice flavored) but I rolled the phyllo dough up a bit tighter which resulted in those irresistible layers. :D

For this recipe you need 
Oats 4tbsp 
1tsp chiaseeds 
Turmeric powder 1tsp 
Cinnamon powder 1/2 tsp 
Ginger powder 1tsp 
Flaxseeds powder 1tsp 
Coconut sugar 2tsp 
Coconut milk 1cup 
1/4 cup almonds 
Almond milk 1/2 cup Or any other milk if you are not vegan 
Caramelized bananas (1 banana )
Coconut oil (1tsp for caramalised )
Water 1/2 cup 
Fresh fruits of your choice 
Frozen blueberries ( Thawed ) 1/4 cup 
METHOD 💛 Add Oats , cinnamon, chiaseeds turmeric,  ginger,  flaxseed powder, in sauce pan and cook for 2or 3 minutes adding milk and water to it . Stirring it continuously till it becomes creamy in texture. 💛 Once done add coconut sugar, almonds  and mix well .
💛 Trasfer into a bowl and add what ever toppings you like .
💛 I added caramelized bananas,  Thawed blueberries,  and fresh fruits. 💛 you can add nuts of your choice 💛 Enjoy this easy yet healthy recipe

Mon _________________________________________ For this recipe you need Oats 4tbsp 1tsp chiaseeds Turmeric powder 1tsp Cinnamon powder 1/2 tsp Ginger powder 1tsp Flaxseeds powder 1tsp Coconut sugar 2tsp Coconut milk 1cup 1/4 cup almonds Almond milk 1/2 cup Or any other milk if you are not vegan Caramelized bananas (1 banana ) Coconut oil (1tsp for caramalised ) Water 1/2 cup Fresh fruits of your choice Frozen blueberries ( Thawed ) 1/4 cup METHOD Add Oats , cinnamon, chiaseeds turmeric, ginger, flaxseed powder, in sauce pan and cook for 2or 3 minutes adding milk and water to it . Stirring it continuously till it becomes creamy in texture. Once done add coconut sugar, almonds and mix well . Trasfer into a bowl and add what ever toppings you like . I love granting food requests around here, when I get them. Today’s dinner was a special request by our 5 year old, who asked me to make her soup this weekend. She didn’t specify (but I also didn’t ask, haha), so I made minestrone soup, a favorite of mine. Dinner time...traditional CV food with vegan  pinto beans with carrots, cabbage, and daikon radish. Bean stews are our 5 year old favorite food. She does not like fish, butter or cheese (Idk know why lol.) But will ask for 2nds and 3rds(if I let her) when I make bean stews. Our dinner from Sunday. I don’t eat red meat very often but once in a while I crave it. Usually it’s in the form of a burger. And if I do have it I make sure to buy good quality beef. It’s one of the perks of having a husband who is chef as well as being a Rasta woman I tend to be selective with the foods I eat. This time, instead of burger I was craving “Bife á Portuguesa” or Portuguese style beef. It is beef that is pan fried and served with sautéed onions and wine reduction sauce and fried egg. My version is a little different. To make the dish I purchased organic local beef from the Cape Verde Islands. I pan fried the steak and set it in a glass baking dish, sautéed onions and tomatoes together and put it over the steaks, drizzled with red wine and finished in the oven. I served it with rice and fries and decided not to add the customary egg. It was absolutely delicious!

Almost any Cape Verdean person will tell you that catchupa is a great dish. What they will also tell you is that the absolute BEST part of making catchupa comes the day after you cook it. That’s right! Whenever we make catchupa the next morning we ALWAYS fry it up, then serve with fried egg(s) and sausage called “linguiça.” I don’t eat pork so I never have that and I would say it’s optional, but the egg is an absolute MUST have(unless you really don’t like them.) It is, pan seared salmon with Cubbanelle peppers, Mexican Jalapenos, capers, kalamata olives, Moscato wine sauce, red and white pearl onions and chili peppers. Today in my kitchen we have SENEGALESE food! This dish is called “Poisson Yassa” or fish Yassa, and I used salmon in my version, with baked potatoes. See recipe link below 👇🏾. I did not use Maggi powder in mine, the recipe said it was optional. I’ve made this dish a few times before with chicken, fish and even a vegan version with BREADFRUIT [SWIPE to see], but I think this is my best attempt so far. 😋

Today the spotlight is on my love and biggest culinary inspiration by far, Chef Joao. This dish was cooked 6 years ago in September 2012. It is an original dish of his own creation that he called “Ras Salmon Papaya.” The first picture is the finished product and the second picture is a process shot. As you see in the second picture, he baked the salmon INSIDE the papaya on low heat for a few hours, then he used the papaya as a serving dish adding rice and fries for the final presentation. How is that for creative plating guys? Even though all these years have passed I still remember this dish clearly and can you tell that it is the most delicious salmon dish I have had in my life. You can feel the passion that he has for cooking in every dish that he makes. Love goes out to you babe, you never cease to amaze me. ❤️💛💚🌊🌊🌴🌴🌍☀️✨
