Somen Noodles With Vegetables and Curry Sauce (Serves 5-6)
1 teaspoon sesame oil
1 brown onion, peeled and sliced
4 cloves garlic, peeled and minced
1 green chilli, deseeded and sliced
1/2 broccoli, husky parts removed, cut into florets, and quartered
1/4 cauliflower, husky parts removed, cut into florets, and quartered
2 bunches of pak choy, stems removed
6 spring onion leaves, chopped
4 cup mushrooms, sliced
1/2 red capsicum, thinly sliced
1 small carrot, peeled and thinly sliced
2 tablespoons tamari
2 tablespoons curry powder
2 tablespoons water
Juice from 3 lemon wedges
1 teaspoon maple syrup
1 teaspoon chilli sauce
270 grams Somen noodles cooked according to instructions in 1/2 time, drain and placed under cold water
For A), heat oil and cook onion and garlic until onion translucent. Add chilli, broccoli, and cauliflower and cook until broccoli is a dark green.
Add B) and cook until mushrooms darken.
Add C) and mix well. Serve.
