Not the most photographic meal, but really REALLY tasty! Vegan miso soup 🍜 Lots of nutrients and vitamins - B, E, K and folic acid - and good bacteria for the gut. 
I added some sea kelp (seaweed) - sea kelp is a natural source of vitamins A, B1, B2, C, D and E, as well as minerals including zinc, iodine, magnesium, iron, potassium, copper and calcium. In fact it contains the highest natural concentration of calcium of any food - 10 times more than milk!
Plus I added a few carrots, green beans and baby corn for even more goodness ❤️🌱😊.

 The mono- and poly-unsaturated fat which nuts contain, and the fibre provided by legumes ⬇️lowers low density lipoprotein (LDL) cholesterol levels within the blood, which is what we know as “bad” cholesterol🙅🏻‍♀️This peanut and chickpea curry is a great example of ways you can include more nuts and legumes in your diet every week✨. -
1 tbsp olive oil / 2 cloves garlic, minced / 1 red onion, diced / 2 bell peppers, diced / 2 big handfuls of baby spinach / 2 X 400g tins chickpeas, rinsed and drained / 1 X 400g tin chopped tomatoes / 1 X 400ml tin reduced fat coconut milk / 1/2 tsp chili flakes / 1 low salt vegetable stock cube /1/2 tsp cayenne pepper / 1.5 tsp paprika / 1 tsp ground coriander / 4 tbsp peanut butter (I used the high oleic peanut butter from @wholeearthfoods) / 2 tbsp crushed peanuts. -

Heat the oil and sauté the onion and peppers until soft, along with the spices. -

Add the tomatoes, stock cube, chickpeas, peanut butter and coconut milk and simmer for 15 mins. Stir through the spinach and cook for a further 5 mins. -

Sprinkle over some crushed peanuts and serve 🥘 - recipe adapted from @healthylivingjames

Fun fact: These were eaten cold. 
I find myself eating my food more on the colder side these days. I like to make the food I create look pretty and then I take pictures of it. I won’t be at peace until I do. I’ve gotta say it still tastes good. Anyways I started putting slices apple between each slice for volume and then this fruit explosion happened. #WhenOneThingLeadsToAnother

Ingredientes:
Pasta integral eco
Calabaza cacahuete
Champiñones portobello
Ajo
Aceite de oliva
Sal
Nuez moscada
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparación:
Cocer la pasta a fuego alto con sal el tiempo que sea necesario según el envase y escurrir (no lavar).

En una sartén, sofreír ajito con la calabaza cortada en dados, un poco de sal y la nuez moscada. Añadir un poco de agua y tapar hasta que se ablande.
.
Saltear los champiñones cortados en láminas en una sartén con aceite y sal hasta que estén dorados.
.
Servir y disfrutar !!

Esta receta me la enseñó un monje budista en uno de esos retiros “pa encontrarse a sí mismo” (que yo creo que me quedé por el bosque) y es tan fácil como: cocer batata y puerro; y batir con leche de coco o con agua y un chorro de crema de coco (el resto de ingredientes ya es cosa mía).

El clásico desayuno de la Macrobiotica. Se puede hacer con distintos tipos de cereales. Mi preferida es con arroz y mijo. Este tipo de crema es muy fácil de preparar !! Hay que hervir una medida del cereal que escojas (siempre integral) con cinco de agua durante hora y media en olla a presión y fuego bajo.

Después se le puede añadir todo lo que quieras para endulzarla. Esta lleva sirope de arroz, canela, naranja y bebida de almendras 😋
