Vegan Roasted Kale Pesto with “Sausage” - don’t be tricked, it’s actually vegan sausage 😮@rabbitandwolves makes the best comfort food. Her recipe below (as I’ve been too lazy to cook this week ahhhh)

Ingredients:
* 5 Cups Kale, chopped
* 10 Cloves Garlic
* 1 Tablespoon Olive oil (or vegetable broth)
* 2 Tablespoons Nutritional yeast
* 1/4 Cup Vegetable broth
* 1/4 Cup Walnuts
* Juice of 1/2 a Lemon
* 1/2 Teaspoon Salt
* a Pinch of Red pepper flakes
* 16 oz. Pasta
* 4 Vegan sausages, sliced (I used Field Roast)
* Vegan Parmesan for topping, I used Violife Parmesan
* Salt and Pepper

Directions:
* Preheat the oven to 375 degrees. * In a large bowl, toss the chopped kale and garlic cloves with the olive oil(or if you want an all oil free option, use veggie broth) and a few pinches of salt and pepper. Rub the olive oil all over the kale and massage it in to make sure the kale is all moist. * Pour the kale and garlic on to a baking sheet and bake at 375 degrees for about 8-10 minutes. The kale should be nice and soft. Remove from the oven when done. *In the meantime, cook the pasta according to package instructions. Drain the pasta when done. * If you are adding vegan sausage, slice and brown on each side in a non stick  pan while the pasta is cooking. Set aside.
#* Once the kale and garlic are done, add them to a blender or a food processor. Then add the nutritional yeast, the 1/4 cup of veggie broth, walnuts, lemon juice, 1/2 tsp. salt and red pepper flakes. Blend until completely smooth, scraping down sides as needed. * Return the pasta to the pot, scoop the pesto into the pot and toss to coat the pasta. Taste and adjust seasoning. Add more salt or pepper if needed. Then add the sliced sausages. Serve with vegan Parmesan on top if desired.

180 gr biskota
100 gr gjalpë
3 kokërr vezë
80 gr miell misri
50 ml qumësht
1/2 kokërr lëng limoni
5 gr kanellë
4 lugë ujë
1 lugë sheqer
400 gr dardhë
300 gr Philadelphia (klasike)
300 gr çokollatë e zezë
100 gr sheqer pluhur

Përgatitja:

Për përgatitjen e cheesecake-t filloni me biskotat duke i futur në mikser derisa të grihen plotësisht.

Hidhini biskotat në një tas dhe shkrini gjalpin, të cilin më pas e shtoni tek biskotat duke i përzier ngadalë.

Lyeni tavën me gjalpë dhe më pas fundin dhe anët vishini me letër furre. Shtoni biskotat dhe mbulojini me letër. Me ndihmën e një luge, shtypini biskotat deri sa të formohet një masë kompakte. Vëreni tavën në frigorifer për gjysmë ore.

Qëroni dardhët dhe hiquni farat. Më pas pritini ato në copa të vogla.

Hidhini copat e dardhës në një tigan që nuk ngjit dhe vërini në zjarr me lëngun e limonit.

Shtoni pak kanellë dhe 1 lugë sheqer.

Shtoni 4 lugë ujë dhe lëreni në zjarr për pak minuta deri kur dardhët të zbuten dhe në tigan të mos ketë më lëng.

Kur dardhët të jenë gati hidhini në një tas dhe lërini të ftohen.

Përgatisni çokollatën për ta bashkuar më pas me Philadelphian. Vëreni çokollatën në një tas dhe futeni në një tigan të mbushur përgjysmë me ujë. Ndizni zjarrin dhe shkrijeni çokollatën me banjomari. Në një enë tjetër hidhni Philadelphia-n dhe sheqerin pluhur dhe përziejeni me një mikser elektrik. Në fund shtoni çokollatën e ngrohtë dhe përziejini të gjithë përbërësit.

Këtë masë homogjene që krijuat hidheni në një tas të madh dhe, gjithnjë duke e përzier me mikserin elektrik, shtoni vezët. Pas tyre, gjithnjë duke e përzier, shtoni me ngadalë qumështin. Pasi të jetë përzier mirë shtoni edhe miellin e misrit.

Needed to put this super simple plant-based summer dinner on everyone’s radar 🙌. I limit dairy in my diet and #plantbasedboyfriend usually steers clear of tomato sauce so sometimes we have trouble agreeing on a sauce for pasta dishes. This avocado pesto took only minutes to make and was so fresh and creamy and delicious. The ultimate accompaniment to the almighty cauliflower gnocchi 👑.

Check out this creamy, cheesy, kale pasta. It's secretly healthy, but tastes like comfort food. The sauce is made out of raw cashews, macadamias, and almond milk- completely dairy free, yet high in iron, magnesium, copper, manganese, and healthy fatty acids. Since I boiled my cashews and macadamias and then blended it up with garlic, white onion, white wine, and nooch it was creamy and cheesy.
I totally added some chunks of my homemade cashew cheese to the mix for some gooey spots too!
The pasta is a high protein (24 grams per serving!) @explorecuisine edamame spaghetti that is amazing in a cream sauce. For extra flavor I topped the cheesy pasta with marinara and fire roasted tomatoes, green onion- and little red cabbage for some crunch. 
As you guys probably noticed- I'm obsessed with mushrooms. I pan fried some oyster mushrooms in a mace, nutmeg, black pepper, and nooch seasoning- making it taste ultra meaty. 
This bowl is so flavorful, nourishing, and made dinner perfect. 
I love it when food is so tasty, you would never guess that it's ultra healthy!

Lajini me kujdes patëllxhanët, thajini me letër kuzhine dhe prejini në mes për së gjati. Hiqjuani tulin dhe prijini në copa.

Gatuajini pjesët e jashtme në ujë të bollshëm me kripë për 20 minuta, derisa të bëhen të butë, kullojini dhe vërini mënjanë.

Ngrohni vajin në një tigan dhe skuqni qepën derisa të zbutet.

Shtoni karotat e prera në kube dhe domaten e grirë.

Lërini të gatuhen për ndonjë minutë dhe më pas shtoni dhe tulin e patëllxhanit, pak kripë, piper dhe rigon.

Lëreni të gatuhen në flakë të ngadaltë përreth 20 minuta duke i përzier herë pas here.

Shtoni 2 lugë djathë, përzejini mirë, mbushni patëllxhanët dhe vendosini në tavë. Shpërndani djathin e grirë dhe futeni në furrë në 180° C për 15 minuta.
