Home made pea pesto pasta and focaccia 馃挌

The pea pesto on the other hand was an original creation and we are very pleased how it turned out! Full of flavour and super easy 馃檶馃徏

Pea Pesto recipe:
- Cook 1kg of green peas and then set aside to cool. - Once cool, blend the following in a processor: - 3 cloves of garlic
- 250g of broccoli florets - 1 bunch of parsley - 1 tbsp of olive oil
- 3 tbsp of mirin seasoning
- 3 tspn of capers
- 1/4 cup of nutritional yeast
- salt and pepper to taste!
- Blend until all ingredients are mixed into a chunky pesto

ENJOY on your favourite pasta 馃憣馃徏

Tofu is packed full of protein & is one of the easiest things you鈥檒l ever cook馃拋馃徑鈥嶁檧锔 It has no flavour of its own, so whatever you season or coat it in will always be authentic. Unlike steak or chicken which have that under taste which can detract from the star of the dish, the seasoning or sauce馃構

This super versatile little gem can be baked or pan fried. It can be dry seasoned, marinated or sauced. 
It does have a unique texture, which is why I would recommend baking, it gives it that little crunch with a softer centre馃挌

Try marinating it in a Honey, Garlic, Soy & Sesame sauce. Bake it in the oven until it鈥檚 brown & a little crunchy. Warm the marinade & drizzle over the top. Serve it with some rice or steamed veg 馃憣馃徑

I鈥檓 finally back home and enjoying some simple flavors 馃尡 my original plan was to make this with garbanzo beans, and then I realized I ran out. But the beauty of cooking is the ability to be creative and adapt to what you may or may not have. Vegetable bean salad 
1 can of cannellini beans, drained and rinsed 
1/2 cup chopped tomatoes 
1/3 cup cucumber 
1/3 cup bell pepper 
Juice of 1/2 a lemon
1 TBSP EVOO 
1/2 tsp Italian season or dried basil 
1/4 tsp garlic powder
1/4 tsp onion powder 
Salt and pepper to taste
Combine all your ingredients together and season to taste for a simple, fresh bean and vegetable salad.

Healthiest brownie EVER made!

Ingredients: 
1.5 cups of coconut flour 
2 馃崒 bananas 
2 @larabar of your choice 
1 tbsp of cacao powder 
1/3 cup almond馃milk
1 tbsp of 馃ゥ oil 
Blend all ingredients (except for coconut oil) and only 1/2 cup of coconut flour to make mousse on top. Put 1 cup to the side. 
Then with what鈥檚 left in the blender add rest of coconut flour to make brownie batter. 
On low heat put coconut oil and add brownie batter until firmer on both sides, flip as needed. 
Put brownie in the refrigerator (this step makes it moist and chewy cuz of coconut oil鈥檚 melting point). Add mousse on top and cut into small pieces because it鈥檚 so rich and filling! 馃い

Y'all.. this cheese sauce. 馃い馃い馃い I made a huge 4x batch of it and used some for broccoli cheese casserole. Very simple ingredients: chopped steamed broccoli, cooked rice, the cheese sauce, and a crushed saltine cracker topping. My husband and I devoured this entire pan in one night.

Baby Mandarins - 2 freshly squeezed
Soy Sauce - 1 tbsp

Sriracha - 1.5 tsp
Lemon - 1.5 tsp
Mint, Basil, Cilantro - Two handfuls Finely chopped 
Sesame oil - 2 tsp

Sauteed red onion, red & yellow peppers, mushrooms. Remove from pan and add
Firm tofu crumbled with 2 tsp garlic (I like garlic but you could adjust to your taste) 1 small chilli, roughly 1/2 tsp turmeric, 1/2 tsp cumin, 1/4 tsp smoked paprika, salt, cook until slightly browned, add sundried tomatoes and capsicum mixture back to the pan and heat through. Serve with parsley and spring onion. Delicious, full of flavour and done 馃檪

Mm!! this is the first time I鈥檓 cooking w/quinoa & it鈥檚 delicious in this home cooked tomatoes & veggie馃嵅soup. Took about 15-20 min. But is totally worth it! Not only is it healthy but non-diabetic friendly recipe to enjoy. 
For easy directions: 1) chop onions into pieces & add olive oil to the pan. Add 2 tablespoons of minced garlic and fry until it鈥檚 crispy golden brown. 
Then, add sliced cherry tomatoes a lot, a bundle of chopped cilantro, (add shredded chicken if you鈥檙e not vegan), and 1 cube of vegetable bullion or (chicken bouillon). 3 cups of water & stir occasionally!
Add tomato sauce/paste about 1/2 cup, and pepper, Himalayan salt, onion powder, and garlic powder, 1 teaspoon of ground organic coriander.
