BERRIES// Blackberries. Wild Blueberries. Raspberries. All loved up with a topping that is familiar and decadent yet healthier than what you may remember. A celebration of Summer, and a love letter to Autumn. If you have a surplus of berries this is the way to bring them to life. Enjoy darlings.

The Goods // 4 cups mixed berries. I used fresh raspberries, wild blueberries and blackberries. (Reserve some to sprinkle on top)
1/2 cup coconut sugar
Zest of one orange and one lemon
Splash of Vanilla extract or 1/4 teaspoon vanilla bean powder
½ cup vegan butter  or
1 cup can sugar or coconut sugar or a mix!
1 can full fat coconut milk
2 teaspoons vanilla extract
1 ½ cups gluten free all-purpose flour/ you can also do 1 cup gluten free flour + 1/2 cup almond meal to add some extra protein.
1/2 cup crushed Berrylicious Granola from
2 teaspoons baking powder
½ teaspoon sea salt
Spoonfuls of  Vanilla bean ice cream.

Get Cooking // Preheat oven to 375F.
Wash and dry your berries. Add them to a large bowl with the coconut sugar, vanilla and orange + lemon zest. Toss gently and let the flavors rest while you make your topping. Cream butter and sugar together until creamy and combined. Then add coconut milk + vanilla and whisk well. Add flour, baking powder and granola. Stir to combine. It will be fluffy and smell like heaven. You can make one large cobbler in a cast iron or a couple mini ones. Either way you fill your pan or mini dish with the berry mixture. Then layer on your fluffy topping. Add extra berries and a sprinkle more l sugar. Put in the oven for 35-45 minutes until the topping is golden and your house smells like waves of bliss. No exaggeration. This stuff is magic. Remove from oven and top with your favorite vegan ice cream. I’m in love with !  Devour while staring up at the summer night sky. Take a deep breath in between bites and relish in the moment. Connect with yourself, your food, your nourishment. Love you. Mean it. ✨

Beans on toast! Cooking for one this week means any thought of a recipe goes out the window- so I put a spin on the simplest meal I could think of, beans on toast. Roasted some (homegrown) summer squash with garlic and pulsed the garlic with a drizz of olive oil and about 2.5 cups of @cullensfoods black beans in the food processor. Layered onto toast, and topped with (homegrown) basil, salt & pep, and a (homegrown) side salad. Local, organic, traceable-  It's a fun time of year to improvise, starting with beans. .

Finally made it out to @JINYARamenBar with some friends last week.

True Confession: This was my first time eating a proper ramen...ever!
.
We started with the JINYA Quinoa Salad 🥗 with 🍃baby greens, green kale, 🥦broccoli, white quinoa, kidney beans, 🌽 corn, 🍅 Cherry tomatoes and garbanzo beans tossed with goma sesame dressing. The dressing is 💣!
.
Next were the Crispy Tempura Brussels Sprouts with white truffle oil.
.
And finally...a big ole bowl 🍲 of Spicy Creamy Vegan Ramen made with vegetable broth, tofu, onion, scallions, 🍃spinach, crispy onion, garlic chips, garlic oil, 🌶chili oil and sesame seeds served with thick noodles.

The ramen needed a bit of soy sauce, but after that I slurped up every last bit of it.

🥑 Roasted Cherry Tomato Avocado Toast! 📷 by
🚨🚨Recipe: 4 servings
Cherry Tomatoes
italian seasoning
extra virgin olive oil
sea salt
2 ripe avocados
juice from 1 lime
4 slices Sourdough bread or bread of your choice
flat leaf parsley for garnish
balsamic glaze (optional)
red pepper flakes (optional)

INSTRUCTIONS
Pre-het oven to 375 degrees and line a shallow pan with parchment paper.
Slice tomatoes and place on baking pan.
Sprinkle with the italian seasoning, sea salt and drizzle with a bit of olive oil.
Roast the tomatoes 15 to 20 minutes.
While the tomatoes are roasting, cut avocados in half, remove pit, and scoop the flesh into a medium bowl.
Add the lime juice and mash the avocados with the back of a fork until the desired texture is reached.
Toast the bread in a toaster or in the oven.
Spread the avocado mash over the toast, place slices of tomato over the avocado mash, drizzle with balsamic glaze and garnish with flat leaf parsley and red pepper flakes.
Serve immediately.

To say I’ve been eating bad the last week or so is an understatement.  My body needs a good reset.  Today was the first day I’ve had some downtime so I decided to meal prep for myself. 
The best option in my opinion is Vegan or at least Vegetarian.  When I choose the vegan route, options are very important or I will get bored.  So this is what I do. 
Make a bunch of different vegan foods, and add whatever items I want for that day in my bowl.  I can create about 3-4 different meals from these options. 
I’m not saying this is the best way, but I better get an A+ for effort lol.

Curry lo mein with @eatbanza linguine, Chinese eggplant, carrot, cabbage, green bean sprouts, scallions, garlic, and king oyster mushrooms, seasoned with coconut aminos, @traderjoes Amba mango sauce, ginger, basil and lemongrass. I loved it, my nine year old did not. More for me and I'm glad for it since this was last night's dinner and I'm eating it cold now after a long day at work and it's just as good. .

350ml water
4 Tbsp rice vinegar
3/4 tsp salt
1 tsp maple syrup
Miso-Eggplant:
1 long eggplant, sliced into strips
1 Tbsp maple syrup
1 Tbsp miso paste
1 Tbsp sesame oil
2-3 Tbsp warm water
Filling:
1 small cucumber, julienned
1 small carrot, julienned
1/2 avocado, sliced
Cajun cream cheese:
1/4 cup tofu cream cheese
1/2 tsp cajun spice
Method
1.Cook your sushi rice according to instructions on the package and let cool down.
2.Slice the eggplant into thin strips. Preheat your oven to 175° (350°F) and line a baking sheet with parchment paper. In a small bowl, combine sesame oil, miso, maple syrup and warm water and mix until dissolved. Place the eggplant sliced on the baking sheet and brush both sides with the marinade. Place in the oven bake at 175° (350°F) for 10–12 minutes on each side (be careful not to burn).
3.Prepare the veggies for the filling. Slice the avocado thinly and cut the carrot and cucumber in slices.
4.Take half a nori sheet and place it on a bamboo mat. Place 1/2 cup of the sushi rice on top and gently press down (wet your hands for easier handling). Carefully turn the nori sheet around so the empty side looks up. Add the filling ingredients (carrot, cucumber, avocado, cajun cream cheese) and use the bamboo mat to roll up the sushi roll.
5.Take the baked eggplant slices and spread it on top of the sushi roll. Use a piece of plastic film to cover the roll. Use the bamboo mat to gently press the eggplant in shape, then remove plastic foil and cut into slices.

Vegan meals can be pretty too! Quick and easy dinner tonight... pinto beans, white rice, and half an avacado. Although the whole 100% vegan thing didnt work out for us, I do believe you dont need meat EVERY meal. Balance is key!

🍳🍗Next fill a quarter of your plate with protein. This could be something along the lines of beans, tofu, tempeh, eggs, or meat. -
🍚🥔The last quarter is for carbohydrates. Whole grains, starchy vegetables like potatoes, or legumes are great options! -
🥜🥑Incorporate healthy fats throughout your plate with nuts, seeds, dressings, and oils.
