Roasted Cauliflower "Fish" Sandwich?
Is it just us that thinks roasted cauliflower with mayo spread somewhat tastes like fish? We made it with @frontiercoop seafood seasoning to make it more "fishy." With the tartar sauce like mayo spread, you wouldn't miss fish sandwiches we all ate in our pre-vegan days
1 large head cauliflower, Sliced in 1/2 inch thick (4 slices)
1 tbsp extra virgin olive oil
1 tsp seafood seasoning (low sodium)
1/2 tsp salt
1 cup vegan mayo @followyourheart
2 1/2 tbsp coarse mustard
1/2 cup red onion, minced
1/4 cup celery, diced
1 cup lightly packed parsley, minced (about 1 tbsp)
1 1/2 tbsp caper, drained
1 tsp sugar
1/2 tsp black pepper
Zest of 1 lemon
8 slices healthy bread, toasted
1 cup sprouts @fulleifresh
1/2 cup carrot, julienned
1. On a sheet pan, place cauliflower slices then coat with olive oil, season with seafood seasoning and salt. Bake in the oven at 425° for 45-50 minutes. Flip after 30 minutes to cook evenly.
2. In a medium bowl, combine mayo, coarse mustard, red onion, celery, parsley, caper, sugar, black pepper and lemon zest. Mix well and set it aside.
3. Assemble: Smear mayo spread on toasted @daveskillerbread then place carrot, cauliflower, and sprouts.
You can substitute parsley for dill (we didn't have one) for more tartar flavor.
