Apricot Upside Down Cake 🧡
Fresh fruit is amazing, for sure, but something magical happens to it when it goes in the oven... I’d go for the baked stuff every time. But don’t take my word for it, taste for yourself! 🏼🧡
10 Tbsp butter, softened
2/3 cup sugar
1 tsp vanilla extract
3 large eggs
1/2 Tbsp lemon zest
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 cup buttermilk
About 14 fresh Apricots, washed, cut in half, and pitted
1.Heat oven to 350 F. Coat pan with cooking spray and set aside. This recipe calls for an 11-inch pan.
2.In a large bowl, cream the butter with the sugar and vanilla or vanilla sugar. Beat in eggs, one at a time. Mix in lemon zest.
3.In a separate small bowl, mix together the flour with the baking powder and salt. Beat into the egg mixture. Add the buttermilk and mix well.
4. Place the apricot halves at the bottom of the prepared baking pan, cut side down. Spread the batter over the top.
5. Bake for 30 to 40 minutes or until golden brown. Keep an eye on the cake especially if you used a different pan size.
6.Serve with sweetened whipped cream or ice cream if desired.
