Curating my tours is something I struggle to entrust to anyone. So, when I found a tour that offered:Experience Traditional Zambian Dining With The Locals, I was delighted!
I got to make NSHIMA, (similar to the Nigerian semo or amala in preparation) which is made from millet.
Also on the menu was:
✔️Pumpkin leaves in peanut sauce
✔️Chikanda African polony
✔️Greens (rape) with tomato sauce
✔️Fried beef sauce ✔️Munkoyo Beverage (Maize Juice)
The meals are shared and served family style, communal; and are traditionally eaten with the right hand without silverware.
