Corn & Tomato Cheezy Quesadillas w/ Pineapple Mango Salsa 🍅🌽🍍

Hi Friends! Sharing a 10 minute lunch from this weekend, that's too easy and tasty not to have on repeat this summer 🙋🌽🍍

On a tortilla, spread a layer of cheese (used @daiyafoods
cheddar), chopped tomato and corn with a dash of chili powder, salt and cumin. Place another tortilla on top and cook on medium low until cheese melts. Flip over before tortilla gets too burned 😉 and cook until crisp. 🌿🍃🌽

For the salsa, pat dry 1/3 cup each diced mango and pineapple (frozen thawed works). Add 1/3 cup diced tomato and finely chopped bell pepper, 1 tsp olive oil (optional), and juice of 1 lime. Add 1 T minced jalapeno if desired. Add a dash of salt, pepper, and chili powder. You can add sriracha if you prefer. Add some fresh mint, or cilantro works. 🌿🌽🍍

Only a few more hours until cool weather is back in town! I just whizzed up this cold cucumber soup for lunch with local cukes straight from the farm (and warm from the sun). It was a refreshing start to a vegetarian meal. It’s as easy as making a smoothie! I used 4 or 5 different cucumbers, peeled and seeded, a little buttermilk (because I had it), Greek yogurt, arugula, basil, chives, mint, lime juice, a dash of rice wine vinegar, salt and pepper. Threw julienned snap peas (probably the last of the season) on top for crunch. Stirred it over a bowl of ice to chill it down quick. Try it!

Whew it's hot out this weekend! ☀️ On days like this it's extra important to stay well hydrated. I love to jazz up water and make it more interesting by adding different fruits, vegetables & herbs. Infused water is an easy way to keep water exciting, encouraging you to drink more throughout the day. Some of my favorite ingredients include: watermelon, raspberries, blackberries, pineapple, mango, orange, lemon, lime, cucumber, ginger, and herbs such as basil, mint, rosemary, or thyme. I love to mix and match ingredients, creating new flavors. In the mood for fizz? You can make infused sparkling water! It's delicious! The trick when it comes to infused water is to let it sit in the fridge overnight, to really soak up the flavor. 😋 What's your favorite infused water combination?

Roasted tempeh salad with zucchini tomatoes, peppers, and avocado on top of a bed of mixed greens.

I just called my bowl a salad... but what exactly is a salad. I mean anyone can tell that my bowl is in fact a salad. The greens gives it away. But a potato salad is social accepted as a salad, but does not use one  green leaf. Or how about a pasta salad which is made out of pasta, yet still is a salad? A caprese salad uses no more than four ingredients and you expect to find the popular menu item at you’re favorite Italian restaurant. What’s stopping me from calling the burrito bowl I made a couple of days ago a salad? Anyway this salad is delicious and I would say it would exceed the taste of any salad you have ever tried l, but as I mentioned in this post, I have no idea what a salad is.

Rolling into the week like...
.
For the longest time, the thought of making my own fresh rolls was intimidating. The delicate rice paper gave me food anxiety. But I gave it a try and found out that they are actually pretty easy to work with once you get the hang of it. So now I’m sharing three different versions of fresh rolls complete with the most delicious peanut sauce. I’ve got crispy tofu, mango-avocado, and shrimp. Which one would you want to eat first? 🤔

Sunday brunchin' the French way because they do it better 🇫🇷😜 sourdough French toast {gluten free} with Labneh whipped cream and lemon + maple berry syrup.

Now, typically I go for savory breakfast but even I can't resist French toast every once in a while 🍞🇫🇷🍋😍. What's your favorite sweet brunch?

➕4 slices sourdough bread (new grains).
➕3 eggs (whisked).
➕1/3 cup almond milk.
➕1 tbsp coconut sugar.
➕dash of cardamom.
🍃whisk everything, soak the bread and brown for about 2 min per side.
🍋berry + lemon maple syrup:
➕1/2 cup frozen berries.
➕1 lemon zest.
➕1 squeezed orange.
➕3 tbsp maple syrup or monk maple.
🍃heat up in a pan for 4-5 min.

➕1/4 cup Labneh.
➕2 tbsp org heavy cream or coconut milk.
🍃whisk together.
