If you watch my stories you’ll know this salad is pretty much a staple in my lunch meal plan...Slightly adapted from the original which comes with one of the nutrition programs I coach people through🥗
I love how all the major nutrient groups - protein, carbs & fats are covered and keeps me full! Also - so easy to put together!! Just a few staples in my pantry and fresh produce from the fridge and I can throw this bad boy together even on those mornings where the chaos of 3 kids is at its peak! Can I get a holla working moms?! 🙌🏾
Sweet & Tangy Coleslaw with Tuna salad
2 Tbsp. rice wine vinegar
1 Tbsp. olive oil
1 tsp. reduced-sodium soy sauce or coconut aminos
1 tsp. Dijon mustard
1 packet stevia (optional)
Salt & pepper - to taste
2 cups coleslaw mix or chopped cabbage
1 small apple, chopped, divided use
1 (5-oz.) can tuna packed in water, drained, flaked
1 tbsp mayonnaise
¼ cup chopped celery
½ tsp. garlic powder & onion powder
To make dressing, combine vinegar, oil, soy sauce, mustard, stevia, salt and pepper in a small bowl; whisk to blend.
Combine coleslaw mix, half apple, and dressing; toss gently to blend. Set aside.
Combine tuna, mayo, celery, garlic & onion powders, and remaining half apple in a medium bowl; mix well.
Top coleslaw mixture with tuna salad
