~ Sunday simple Winter fruit pie 🥧 
Chop few figs, pears & peaches. Add to the pan with touch of water and 4 tblsp of maple syrup & bring to the boil. Add pinch off salt and juice of half lemon, pinch of 5 spice and boil until all fruit is soft and caramelised.

Preheat oven to 200C.

Meanwhile get a sheet of puff pastry and spread to equal square. When the fruit is ready ( should take 10 min) cover with the puff pastry and tuck in all the corners. Then put into oven until the pastry is soft & golden.

When ready, just flip the pastry upside down with the hot fruits in the top. Cut into triangles and serve hot.

I had it with dollop of coconut yogurt.... he had it with dollop of coconut ice cream

Recipe ⬇️ I have a ton of garden tomatoes, so I made a quick marinara sauce that I’m going to use for pizza tonight and then freeze the rest for later🙌

8 large tomatoes or 10 Roma’s 
2 tbsp tomato paste
2 tbsp @epicureofficial marinara seasoning (dehydrated herbs, onion, garlic, black pepper, and spices)
1 tbsp basil
1/4 tsp sugar
Salt to taste if needed

1️⃣Wash and score the bottom of your tomatoes with a small X (this helps with peeling them after they’re cooked). I use my multipurpose @epicureofficial steamer, but you can use the instant pot with the rack and 1 cup of water at the bottom, pressure cook for 3 mins.  Place tomatoes in steamer, place lid on and let steam in microwave for 5 minutes.
2️⃣Let cool for 10 minutes, then peel. 
Crush with fork or masher, add in all other ingredients, place lid on steamer and microwave for another 5 minutes✅
💥Did you know, steaming helps preserve all those extra nutrients!

If you watch my stories you’ll know this salad is pretty much a staple in my lunch meal plan...Slightly adapted from the original which comes with one of the nutrition programs I coach people through🥗

Just a few staples in my pantry and fresh produce from the fridge and I can throw this bad boy together even on those mornings where the chaos of 3 kids is at its peak! Can I get a holla working moms?! 🙌🏾
▪️
Sweet & Tangy Coleslaw with Tuna salad

2 Tbsp. rice wine vinegar
1 Tbsp. olive oil
1 tsp. reduced-sodium soy sauce or coconut aminos 
1 tsp. Dijon mustard
1 packet stevia (optional)
Salt & pepper - to taste 
2 cups coleslaw mix or chopped cabbage
1 small apple, chopped, divided use
1 (5-oz.) can tuna packed in water, drained, flaked
1 tbsp mayonnaise
¼ cup chopped celery
½ tsp. garlic powder & onion powder

To make dressing, combine vinegar, oil, soy sauce, mustard, stevia, salt and pepper in a small bowl; whisk to blend.

Combine coleslaw mix, half apple, and dressing; toss gently to blend. Set aside.

Combine tuna, mayo, celery, garlic & onion powders, and remaining half apple in a medium bowl; mix well.
Top coleslaw mixture with tuna salad

Ingredients
chicken breasts 2 large, cut into large pieces
cold-pressed rapeseed oil 5 tbsp
ground turmeric 1/8 tsp
saffron a pinch, crushed with a pestle and mortar and steeped in 150ml hot (not boiling) water
chopped tomatoes 80g from a tin
greek yogurt 80g
lemon 1, juiced
long-grain rice 120g
onion 1, sliced

Method
STEP 1
Put the chicken pieces into a bowl with the oil, turmeric and lots of seasoning. Mix really well then add ¾ of the saffron and its water, mix again. Chill for 30 minutes-1 hour, then add the chopped tomatoes, yogurt and lemon juice, mix really well, and chill overnight.

STEP 2
Put the rice into a pan with 240ml of water and a pinch of salt. Bring to the boil, turn down to low, put on a lid and cook for 10 minutes or until all of the water has been absorbed. Remove from the heat and leave to steam until ready to serve.

STEP 3
Divide the chicken between 2 long metal skewers, and heat the grill to high. Spread the sliced onion in 2 lines on a non-stick baking tray, then put the kababs on top. Cook under the grill for 4-5 minutes, then turn and repeat until the chicken is charred and blistered. Turn off the grill and leave to cook for a further 2 minutes before removing.

STEP 4
Spoon the remaining saffron water over the rice and serve with the chicken and onions.

Summer vegetable pasta salad! This meal was so fresh and delicious on one of the hottest days of the year. I made this pasta salad with gluten free pasta made from red lentils so it provided some added protein 👊🏼. Swipe to see what I used for dressing and pasta. This tastes even better the next day and is very customizable! This is more of a “throw stuff in a bowl” meal than a recipe. But here’s the idea.... What you need
1 box pasta (for gluten free try lentil or chickpea pasta @tolerantfoods or brown rice pasta)
1 bunch roasted asparagus (chopped and cooled)
2 yellow squash (roasted and cooked)
1/2 a cucumber, chopped
1 red bell pepper, chopped
1/2 cup shredded parmesan
Your favorite Italian dressing , to taste ( I used @primalkitchenfoods Italian)
Salt and pepper 
Cook the pasta according to package directions. Drain and toss with olive oil and salt. Cool in the refrigerator. Add all your cooled or cold veggies to a large bowl with the cooled pasta and toss with dressing and cheese. Taste as you go with the dressing. Add salt and pepper if desired. Store in the refrigerator and serve cold.

Home grown tomatoes call for a super simple Saturday afternoon lunch of tomato, feta cheese and Castelvetrano olive salad garnished with homegrown mint and basil.
