~coffee & the brain~

The following is a synopsis of a more thorough, upcoming blog post on this subject by our own food science expert and registered dietician @base_julep. This is part six of an eight-part series.

Of all the physiological effects produced by coffee, increase in alertness is the most sought after. Caffeine has a chemical structure very similar to adenosine, a chemical messenger found throughout the body that scientists think is responsible for signaling sleep. While much about sleep is not understood, the working theory for adenosine is that it builds up in the brain and produces a signal called "sleep pressure". This buildup acts like a clock that times how long it has been since you slept and pushes you towards bed upon reaching a critical point. If you have a coffee at the end of your work day, caffeine steps in the way of that adenosine signal to fool your brain into thinking its only been a few hours since you woke up instead of eleven or twelve. When the coffee wears off though the brain figures out the real time since sleep and you get the ensuing crash. Sleep experts recommend no caffeine after 2 PM (depending on your bedtime), as caffeine has a half-life of 4-6 hours in the body.

Our second natural Ethiopia offering of the season was again introduced to us by Trabocca, our long-time importing partners, who do an incredible job year-round forming relationships throughout Ethiopia.  This coffee shares many similarities with the previous Guji Highland (both naturally processed and from the same region), but with an added layer of traceability and the potential for a long-term relationship.  Dimtu Tero is the name of both a privately owned farm and washing station just north of the major town of Shakiso.

From Trabocca: “Getachew Zeleke, the founder of Dimtu Tero Farm, has set an ambitious goal for himself. He wants to become the leader in quality, traceability, and sustainability in the Guji zone; and he is convinced that this will be achieved by Guji’s work-force - the coffee smallholders of Odo Shakiso. Simply put, he works together with smallholders that have the vision to grow a thriving and sustainable coffee community in the nearby villages. They become equal partners. The smallholders receive premiums on top of the regular cherry price, interest-free loans, improved coffee seedlings, processing equipment, and training – in productivity, quality, and sustainability. Bekele Beriso, a 90-year-old smallholder, explains ‘We are partners of Getachew. We work hard on the coffee farming side so that the buyer can pay a fair price for the coffee and reward us if they are happy with our coffee.’ Coffee production and processing are done in an organic, socially responsible, and environmentally friendly manner.” If you’re a fan of big berry bomb coffees, Dimtu Tero is the one for you. This coffee sits heavy in the mouth and is dripping with sticky fruits and white sugar sweetness that lingers long into the aftertaste. As the coffee cools, layers of fruited complexity unfold beyond the traditional veil of chocolate and berry flavor notes.  We’re tasting: chocolate ganache, coconut, raisins, grape candy, mixed berry jam, citrus marmalade.

The following is a synopsis of a more thorough blog post on this subject by our own food science expert and registered dietician @base_julep. This is part five of an eight-part series.

The effect of coffee consumption on cancer risk has been quite thoroughly studied in recent years. This research usually takes the form of retrospective studies - cancer patients are asked about their coffee intake over their lifetime as compared to coffee intake from a control group. The vast body of literature supports a mild anti -carcinogenic effect for coffee on oral, pharynx, liver, colon, prostate, endometrial, and skin cancer. Despite these positive findings, coffee contains acrylamide, a substance considered carcinogenic. How can both be true? It seems the dose makes the poison. Coffee has a rich variety and large quantity of antioxidants and a relatively small amount of acrylamide - so small that it seems insignificant in human health studies. Unfortunately its enough that in the state of California coffee shops have to post placards making customers aware that coffee contains a known carcinogen, even if the studies show no detriment.

Our next release, slated for this time next week, is called Dimtu Tero. Dimtu Tero Farm is in Odo Shakisso woreda near Uraga, in the Guji zone of Ethiopia. Farm Manager Getachew Zeleke produces coffee on Dimtu Tero Farm and also buys coffee from neighboring outgrowers.  This mirrors how Tesfaye Bekele at Suke Quto works, buying ripe cherries and distributing plants to outgrowers.

Can't wait to share this natural process gem with you!

What is B&CL? It's a fundraiser series by 1000 Faces Coffee & @thefarmcart. Just eat a delicious biscuit and drink some tasty coffee to support important work in our community. Held at 1000 Faces once per month on select Sundays from 10am to 3pm.

In 2018, 10% of proceeds go to the Get Comfortable campaign created by @creaturecomfortsbeer.

The mission of the Get Comfortable campaign is to become a unifying anchor in the business community to drive awareness, increase engagement, and provide support for nonprofits combating the Athens community’s greatest needs as it relates to living comfortably. In Athens-Clarke County where one in five people are food-insecure and the poverty rate is 36.6% – nearly twice the state poverty rate of 18.4% – the campaign has traditionally focused on hunger, homelessness, and poverty. Through a rigorous vetting process as well as the direction of an advisory committee of community stakeholders, the campaign selected 6 organizations to highlight throughout the season & receive funding when the program wraps in November 2018.

The following nonprofits were chosen as the 2018 Get Comfortable partners: Advantage Behavioral Health, Athens Area Homeless Shelter, Athens Community Council on Aging, The Ark, Chosen For Life, & Mercy Health Center.

We're so honored to play a small part in the @athensfarmersmarket's 8th Annual AUTUMN HARVEST FEAST this Sunday from 4-7pm up on @eptingevents' The Hill.

The Autumn Harvest Feast is an evening full of dining, dancing, and celebrating with your favorite local farmers, artisans, chefs, and friends.

With over 20 of Athens' finest local chefs gathered together for one special evening, this event is one you don't want to miss. Chefs will be paired with farmers from the market to create an unforgettable local and seasonal meal.

Proceeds will support AFM's outreach efforts to address food insecurity in Athens. This includes the Double SNAP Incentive Program, the Fruit and Vegetable Prescription Program (FVRx) as well as outreach efforts related to them. The SNAP doubling program makes it possible for nutrition-assistance recipients to have access to local, sustainable, and wholesome food by doubling the value of SNAP dollars at the Athens Farmers Market. The FVRx program offers low income members of our community with diet-related illnesses innovative prescriptions for fresh fruits and vegetables at the market alongside integrated nutrition education and free medical screenings.

The following is a synopsis of a more thorough blog post on this subject by our own food science expert and registered dietician @base_julep. This is part four of an eight-part series.

Among the numerous problems arising from clickbait culture is the issue of distortion of scientific information. Let’s check in briefly on a few coffee-related health trends, born of the 24-hour news cycle, that don’t quite stand up to scientific scrutiny.

Green coffee extract, an antioxidant-rich product derived from unroasted coffee beans, was featured on the Dr. Oz show with the quote, “this little bean has scientists saying they found the magic weight loss cure for every body type”. What it actually did was put Dr. Oz in front of the FTC for false advertising and force the company to settle 9 million dollar lawsuit.

Bulletproof coffee is blended with grass-fed butter or coconut oil to provide medium chain triglycerides that supposedly jumpstart metabolism and increase energy. MCTs might be an interesting calorie source because they don’t get processed like regular fat, but the claims that they should be melted into coffee or that they should replace carbohydrates cannot be substantiated.

Finally, low mycotoxin coffee is meant to avoid any negative health effects resulting from the growth of harmful mold, however, several studies have recommended discontinuing this line of research. It seems that after roasting and brewing there aren’t mycotoxins to be found.

The following is a synopsis of a more thorough blog post on this subject by our own food science expert and registered dietician @base_julep. This is part three of an eight part series.

If you’ve ever felt strange seeing a young child drink coffee, you’re not alone - coffee consumption among pregnant women and children is hotly debated. For the record, dozens of studies on many thousands of women have found no statistically significant effect of moderate coffee consumption (less than 200 mg caffeine/2 small cups a day) on expecting mothers or their babies. Some may still feel that any possible risk isn’t worth the price that might be paid, but the pregnant woman at your cafe ordering her second latte isn’t necessarily being negligent.

Meanwhile, out of concern for cardiovascular and neurological effects, Health Canada suggests children should not get more than a half cup of coffee a day before adolescence. But the most detrimental side effect of children drinking coffee is potentially the influence on the health and sanity of the parents. At least it’s healthier than soda!

✨NEW COFFEE✨ from our sister business @1000facescoffee we introduce DUROMINA /// “Established in 2010, Duromina was the first cooperative of its kind in the Jimma Zone of Southwest Ethiopia, and it paved the way for clean washed processed coffee in this region. Despite absolutely ideal growing conditions, the area was traditionally know for poor quality natural processes coffee. All of the pieces for extremely high-quality coffee were in place - high altitude, beautiful heirloom cultivars, ample rainfall, fertile soil - but the missing link to hold everything together was a focused quality control operation. Tired of receiving low prices for their coffee, an initial group of coffee 100 small farmers joined forces to form the cooperative. Duromina means “to improve their lives” in the Adam Oromo language, and these farmers come together to do just that. With the help of TechniServe’s Coffee Initiativ, which offered technical support, business advice, and access to financing, Duromina was able to build a wet mill and start fully processing washed coffees for the first time. Just one year later they were able to pay off the initial loan in full and keep pushing forward with improvements- most notably, working with the government to fund a road project and building a bridge over a nearby river to connect to the nearest village. Duromina continues to thrive today - the cooperative has grown to over 300 members, and their coffee has been bought and sold by specialty coffee roasters across the globe. We’ve personally had our eyes on Duromina for a little while now - the distinct fresh peach flavors are always hard to miss on the cupping table. Now the stars have aligned and we’re stoked to have a small lot of this stunning coffee this year! We've had this incredible @proaster.korea roaster online since November and 10 months later, it's definitely improved our roast development and coffee quality. It's easily our most important piece of equipment. Without it, we're not a roaster!

And speaking of roasting! We've entered a couple roasting competitions - @goodfoodfdn awards and @goldenbean.northamerica - with some of our best coffees.

Coffee has always had an ill-deserved reputation for causing dehydration, which leads some people to avoid it in relation to exercise. Dehydration is really the wrong term, as the amount of water consumed in a cup far exceeds the diuretic effect, however, this effect is only seen in coffee naive individuals (non-regular consumers). In relation to sports, the message is clear: coffee is one of the most potent performance aids available. Studies have shown up to a 25% increase in exertion and a decrease in pain relative to athletic performance when 3-7 mg/kg body weight of caffeine is consumed 30-60 minutes before a workout. For the non-metric American that means 1-2 ounces of black coffee for every 9 pounds you weigh. Just be sure you know how coffee effects you in other ways, mentally and gastrointestinally, before trying it out on a game day. The following is a synopsis of a more thorough blog post on this subject by our own food science expert and registered dietician @base_julep. This is part one of an eight part series.

In the mouth, coffee causes yellowing of the teeth and acidity-induced weakening of the dental enamel.  Drinking coffee through a straw (heyyo cold brew lovers), drinking low acid coffee, washing the mouth after drinking coffee, regularly drinking fluoridated water, and brushing 30 minutes after drinking coffee are all good teeth-saving strategies. The acidity of your coffee also has an influence on the esophagus and stomach, exacerbating reflux and gastric ulcers if you have them. For those folks we recommend cold brew, which is naturally less acidic.

On the plus side, coffee (decaf or regular) exerts a near-pharmaceutical effect on the gallbladder and bowel, both of which contract under its influence. This means regular bowel movements and a low likelihood of painful gallstones. Finally, coffee is thought to prevent cancers of the digestive tract as the antioxidants prevent damage to the cellular lining, however the reverse is true if you like your coffee really hot. Hot drinks in general (anything above 149 F) have the potential to damage the lining of the esophagus and contribute to esophageal cancer. We'll be taking Wednesdays to focus on education in coffee - methods, terminology, processes, economics. Accessibility in coffee can be as simple as better understanding the ins and outs of coffee. Hopefully you'll find this useful and find that it helps you expand your understanding of coffee a bit more!

This week: YOUR PALETTE

There is a great misconception that some people have great palettes and others do not. In fact, we all have the potential to discriminate tastes in foods as long as we develop a wide range of thoughtful experiences. The first way to develop a great palette for coffee is to taste many different cups side-by-side. When you find a difference between cups try to name the difference using your personal experience or the coffee flavor wheel. Does one taste nuttier and one more sweetly floral? The second way to get a better palette for any food is to take a whole day to pay attention to the smells around you; the floral deodorant of the woman next to you on the bus or the smell of fresh cut grass. Breathe deeply and assign these scents names so that you could recognize them out of context, say in a cup of coffee.

Great tasters often aren't more discerning, they just have better fluency in describing their findings. They have set up a process for connecting a past experience with a current one and being able to express that. This is a learned skill! You too can develop your palette into a sharp tool.

Now get on out there and taste and smell mindfully and thoughtfully!

Our goal with sourcing coffee has always been to minimize the supply chain by focusing on quality and relationships.

Grower --> Mill --> Export/Import --> Roaster --> Consumer.

Besides our Decaf Monk, which takes a detour to the Swiss Water processing facility, all of our coffees have as clean and minimal supply chain as possible. We take a lot of pride in that.

Last week, we had the honor of hosting the Hot Jags Coffee Shop staff for some informational exchange! These are special education students from Cedar Shoals High School who run a coffee cafe on site at the school.

The mission of Hot Jags Coffee Shop is to provide students with the ability to gain valuable work experience through their specialized coffee shop. Hot Jags is more than just a place to earn money or provide a service; it's about supporting students through a customized employment system in which every student has the potential to do almost any job in their coffee shop. Most importantly, students are immersed in the school community.

We had a blast sharing a bit about how we do things and of course, learning about how the Hot Jags do coffee. We could tell how much pride the Hot Jags staff take in running their own business, which was such a nice lesson to be proud of what you do!

Farm Gate Price Report:

Yader & Karen
Jinotega, Nicaragua

Overview: 
This year our selection from Nicaragua comes from husband and wife duo, Yader and Karen, and their farm, El Cipres. Yader and Karen take advantage of the generous loan program of @goldmtncoffee each year to make improvements on their farm.  A majority of these funds have recently been invested in horses to help carry coffees from their steep mountainside farm to their home for drying and processing. The higher altitude and increased cloud coverage in the mountains of Jinotega cause the cherries to ripen at a slower pace, absorbing more nutrients along the way.

Because of Gold Mountain’s extreme attention to detail, they have an incredible staff that is well represented in the field at their own farm (Finca Idealista) as well as all of their partners’ operations.  They don’t just have pickers on the farms; they have pickers that are double and triple checked by teams of picker supervisors called "color of wine ripeness teams," who carry refractometers to check the sugar content of coffee cherries before and after picking. They don’t just remove imperfect cherries while at the farm level; they hand sort again on conveyor belts during the drying process and again through mechanical processing and again through the use of special UV lights that help to spot defects.  All of this hard work pays off when witnessing just how clean and defect-free these coffees are. Gold Mountain never ceases to amaze us with their commitment to quality and sustainability. In addition to providing loans and technical assistance to their partner producers, building libraries in nearby schools, and helping set up running water in local communities, they recently bought a rainforest surrounding their property to protect endangered wildlife. The coffee community has definitely noticed these grand efforts in sustainability, and Gold Mountain was given an award of excellence by the Specialty Coffee Association of Europe in 2016. We’re extremely fortunate to be involved in this true direct trade relationship – Gold Mountain does all of the exporting and importing themselves, cutting out any third parties.

We at 1000 Faces like to get fancy with our brew methods, but we also understand that most coffee drinkers aren’t making themselves pour-overs and espresso shots every day. We'll be taking Wednesdays to focus on education in coffee - methods, terminology, processes, economics. Accessibility in coffee can be as simple as better understanding the ins and outs of coffee. Hopefully you'll find this useful and find that it helps you expand your understanding of coffee a bit more!

This week: AUTO DRIP

Good coffee doesn't always have to mean pour overs and dialed-in espressos. Sometimes your priorities lie elsewhere and a no-fuss cup is all you want. Set it and forget it, right? What's rad is, that auto drip machine on your counter is totally capable of rocking out a great cup! Just need to focus on some variables and you'll get there.

The most important things to a good cup from any old plug-in are good, recently roasted coffee beans, a burr grinder, and good, clean water.

Scales are important but you could use a tablespoon (1tbsp ground coffee is roughly 8g). Your coffee to water ratio is important but really does vary depending on your taste. We recommend starting at a 1 part coffee to 16 parts water, but if you want it a little stronger and like to add milk, we recommend trying a 1:15 ratio.

Play around with your ratio and grind size until you find what's perfect for you. General grind size can range from "medium-coarse" (like rough sand) to "coarse" (like coarse salt) depending on your batch size. The bigger your coffee dose, and resulting brew volume, the coarser you will want to grind.

And before brewing, make sure your coffee bed is flat as this will help promote even extraction.

Reusable filters vs paper filters - verdict is out. Just make sure your bed of grounds is even.

Coffee origin makes a big difference in flavor profile, but not cup quality per se. Your selection of origin for an auto drip device is mostly just personal preference!

As always, experiment with all the variables - coffee type, dose, grind, etc - until you settle on what you love!
