Kimchi, zucchini and eggplant fritters.
Recipe - 2 med size zucchini, 1 small eggplant, 1 small brown onion, 200g kimchi, 1 c self raising flour, 1 tsp bicarb soda, 3 eggs and a splash of milk to form the batter.
Method: Julienne all veg including kimchi and place in bowl with flour, bicarb, eggs and milk. Bring together so all ingredients are coated in the batter and fry in medium hot oil till golden brown. Drain on paper towel and serve with mayonnaise and lemon wedge. - 60 minutes ago
