Hoping a bowl of oats doesn't set my stomach off again 🤦 So I've FINALLY made a docs appointment after being constantly bloated for 2 weeks now 😩 I've tried cutting out fizzy drinks, processed foods, onions, mushrooms, garlic, going for walks, exercise, peppermint tea......anyone else any ideas?! Well nothing has helped and even though I know a little bloating is normal this is ridiculous!! Anyway.....I digress.....Oats in the usual way- slowly cooked on  the hob (always come out better IMO) and topped with banana and walnuts 🍌

Emergency soup! When you can't be stuffed cooking but your local  potential soup provider won't answer the phone.... chuck whatever together and make soup in 10 minutes. 
I've used rice noodles, stock and bone broth, chopped veg (whatever was in fridge) and coriander.  Could add any sort of leftover protein from the night before or stir an egg through with the boiling water. Noodles in a jar option for work too, think outside the box 😘

What a difference using a pizza maker makes!⁣ I have the New Wave Just Pizza Maker and it is amazing! 😍

I’m ashamed to say this has sat unused through countless pizza nights but honestly it made a huge difference and was quicker than cooking it in the oven! It heats up to over 280°C so it is a beast haha

I topped my pizza with vegan cheese, mushrooms, sprouts, olives and tomatoes. The pizza pictured I made for M and topped with vegan cheese, mushrooms, sprouts, shallots and smoked garlic (first time using it!).⁣

Paleo(ish) Taco Bowl!! By swapping pan fried plantains for chips or tortilla, I added or added more  beta-carotene, Vitamin C, potassium, Vitamin B6 and magnesium to my bowl. Can a tortilla do that. Uh, nope. The rest of my bowl is grass-fed  beef with @balancedbites taco and fajita blend, @sunsetgrown tomatoes, avocado and @greenvalleycreamery lactose free sour cream mixed with cilantro and lime. .

Side dish alternative!

Pesto Gnocchi 
500g potato gnocchi 
1 cup light thickened cream
(I used light milk & cornflour instead, great alternative)
1/4 cup sun dried tomato pesto 
1/2 cup grated Parmesan cheese 
Cook gnocchi in a large saucepan of boiling water, following packet directions, until tender. Drain. 
Preheat oven to 160 degrees C.
In a frypan over medium heat add cream (or milk & cornflour mix) and pesto. Simmer, stirring occasionally, for 3 to 4 minutes or until slightly thickened.
Add gnocchi to cream mixture, toss to combine. Transfer to baking dish. Top with cheese. Cook until cheese is melted & golden.
** turn into a main meal after step 2 add shredded cooked chicken & baby spinach.

Ingredients:
1/2 cup of almond milk ice cubes (make these in an ice tray the night before)

1 shot of espresso or 1/2 cup of strong coffee

1 scoop of a plant-based protein powder

1/2 frozen banana

Toppings:

coconut flakes, cacao nibs, crushed espresso beans

Instructions:
Place all ingredients into a blender and process until smooth. Serve in a bowl and garnish with desired toppings.

Hack #2 - eggs are the most bomb protein, I’ll eat them with anything, at any time of the day, they complete any meal. Whole eggs, egg whites, scrambled, poached, fried, basted, hard boiled, give them all to me. Those nasty rumours saying they aren’t good for you and too high in cholesterol, stop. They’re full of all the good things - please enjoy! My only thing is I try to limit to 2 whole eggs a day - that’s why I love the egg whites - because I legit eat them all day some days. Personal Choice. I get my cartons from @costco_canada - keep one at work and we go through them fast at home 💛

Here’s a quick and easy wonderbowl I had for lunch today. Leftover salmon, over tons of greens, cucumber, avocado, pumpkin seeds, and sauerkraut. Sprinkled with a little nutritional yeast for those B vitamins. :) I just drizzled a little avocado oil over this and a squeeze of lemon and we were all good. Took a total of 5 mins to make. Macaroni and cheese na moj nacin.

Ako je visok datum☺ stiska s vremenom ili jednostavno gust, tu su makarone sa sirom. Jako brzo i jednostavno se pripremaju, a ukucani su uvjek odusevljeni. 
Ovaj put sam pripremila spireli pastu od heljde s gotovim Tesco umakom od rikote i paradajza. 
Meni je ova kombinacija aromaticna i ukusna, tacno ugrije srce u ovom kisnom popodnevnu.

Za dvije osobe sam skuhala pola kese paste aldente, prema uputama na pakovanju. Pomjesala sam sa pola tegle (tegla sa fotografije) Tesco umaka, naribala obicni sir preko i stavila u pecnicu na cca 15 min. 
Hajmo, brzo lajk za kombinaciju, a veliki hejt za ovu kisu 😁

Made my own vegan gnocchi, very impressed and very easy.

#recipe below:
4 potatoes peeled and boiled until super soft, leave to cool and mash until smooth.

Mix in about 150g flour (gf works too) and 1tbsp of mixed Italian herbs.

Knead into a ball on a floured surface and cut into gnocchi bits, doesn't have to look pretty.

Place a batch of 6/7 in a pot of boiling water, they float to the top when done.

Mix with whatever sauce you want, I made a arribiatta with red onion, garlic, chilli and passata.

Froze half for another day.

Happy Saturday! I love Saturdays because they’re often my only day to actually sit down and really enjoy breakfast. Leftovers Scramble with Warm Cinnamon Apples and Pears

We stick to a mostly Paleo diet except for when it comes to weekend breakfast. #Breastfast is my favorite meal of the day and I ❤LOVE❤ using leftovers to make a one of a kind egg scramble 🍳 as well as a warm fruit side. In this #scramble we used a potato from the twice baked potatoes 🥔, chopped up some of the #bacon 🥓 wrapped pork loin and we also added in some chopped tomatoes 🍅 and onions from a salad earlier in the week. The we topped it with an avocado 🥑 we had on the fridge. As for the warm #cinnamon #apples 🍎 and #pears 🍐, we used the left overs from the honey apple and pear salad. Not only have those apples and pears been a #yummy and quick snack for the kids during the week, they were so #delicious warmed up in the skillet with cinnamon, nutmeg, vanilla and a little bit of brown sugar and water.

Ostatnio pytałam Was na stories czy trochę tęsknicie za moimi posiłkami. Większość odpowiedzi była na tak, dlatego dzisiejsza inspiracja wygląda tak oto: - szynka parmeńska - czosnek

Szynkę podsmażyłam, na koniec dodałam czosnek, następnie szparagi i bataty w kostkę - podlałam to wodą aż warzywa zmiękły. Dodałam trochę śmietanki 30%, ugotowałam makaron i dorzuciłam resztę składników. 
Proste (gotowane z dzieckiem na ręku 😃), szybkie, czyszczące lodówkę 😄

Tomato mozzarella basil salad. Easy to make and totally delicious on a sunny day.

2 ripe tomatoes, thinly sliced; 2 packs of fresh mozzarella sliced; fresh basil leaves. Arrange them on a plate as in the picture, sprinkle with sea salt and freshly ground pepper. Drizzle with olive oil and balsamic vinegar. EAT!

Almost keto (replaced coconut sugar with erythritol), maybe paleo, glutenfree, could be dairy free if you replace butter with coconut oil. The recipe is from @bakeritablog  and it has been declared a success! .

Well, hummus say it was delicious: okay sorry for the pun... This was my first time making homemade hummus, and without a blender! Result was pretty damn good + it was super easy & quick to make. Goodbye supermarket hummus and plastic containers!

🍋 This was a vegan Buddha bowl, with boulghour, hummus and all the veg (chopped carrots, peppers, avocado, chickpeas and broccoli).
🍋 For the hummus: open 1 can of chickpeas, set can liquid aside. Place chickpeas into a bowl. Microwave for 30 secs to soften. Add 2 tbsps tahini, 2 tbsps or + lemon juice, 1 chopped garlic clove, 2 tbsps olive oil, salt and pepper to taste. Mash, mix and add some of the chickpea liquid until desired consistency is obtained. Hummus can be kept in a jar/Tupperware in the fridge for about a week!
🍋Top your bowl with a drizzle of olive oil, lemon juice, sesame seeds and salt and pepper to taste, and voilà!!!

🥞Buckwheat crepes with grilled veggies🥞

What’s in it? - makes about 12 Galettes
▪️2 large eggs
▪️1/2 tspn Himalayan salt
▪️1tspn coconut sugar (or any sweetener of your choice)
▪️500ml almond milk (or any milk of your choice)
▪️500ml water
▪️200g buckwheat flour ▪️50g oat flour (or all-purpose flour)
▪️4 tablespoons unsalted butter, melted @kerrygoldusa
▪️veggies of your choice: I used carrots, aubergine, onions & tomatoes l
▪️olive oil
▪️chilli powder if you wish
▪️chives for garnish

How?
▫️start your oven on grill
▫️cut up your veggies and in a bowl marinate them with olive oil, salt, black pepper, chilli powder
▫️place on an oven tray and grill veggies whilst you prepare the crepes
▫️in a mixing bowl add flours, salt, sugar opening a cavity in the middle to break the eggs in
▫️whisk the eggs into the flours then slowly add milk continuously whisking
▫️ideally cover and fridge overnight
▫️in a large frying pan or crepe pan if you have one, spread a thin layer of butter to cover the pan completey
▫️whisk the batter again to homogenise and pour a small amount onto the heated buttered pan and spread in circular motion with the help of a crepe stick or soup ladle
▫️let cook on medium heat for about 2mins checking if it’s browned before flipping it over
▫️Once golden, fold the galette into a square envelope and place in oven to keep warm whilst you make more crepes
▫️place grilled veggies in the centre of the galette and garnish with chives (or preferred herb)

🥞Buckwheat crepes with grilled veggies🥞 . What’s in it? - makes about 12 Galettes ️2 large eggs ️1/2 tspn Himalayan salt ️1tspn coconut sugar (or any sweetener of your choice) ️500ml almond milk (or any milk of your choice) ️500ml water ️200g buckwheat flour ️50g oat flour (or all-purpose flour) ️4 tablespoons unsalted butter, melted @kerrygoldusa ️veggies of your choice: I used carrots, aubergine, onions & tomatoes l ️olive oil ️chilli powder if you wish ️chives for garnish . . How? ️start your oven on grill ️cut up your veggies and in a bowl marinate them with olive oil, salt, black pepper, chilli powder ️place on an oven tray and grill veggies whilst you prepare the crepes ️in a mixing bowl add flours, salt, sugar opening a cavity in the middle to break the eggs in ️whisk the eggs into the flours then slowly add milk continuously whisking ️ideally cover and fridge overnight ️in a large frying pan or crepe pan if you have one, spread a thin layer of butter to cover the pan completey ️whisk the batter again to homogenise and pour a small amount onto the heated buttered pan and spread in circular motion with the help of a crepe stick or soup ladle ️let cook on medium heat for about 2mins checking if it’s browned before flipping it over ️Once golden, fold the galette into a square envelope and place in oven to keep warm whilst you make more crepes ️place grilled veggies in the centre of the galette and garnish with chives (or preferred herb) . . . Start of the weekend with a quick, easy,  healthy - if you’re into lchf food that is ...🥬🥓🧂🥛... - fridgecleanfriendly ( is that even a word...🤔... ?) but delicious dinner...😋... sauteed green & white veggies ( cabbage kohlrabi sucrine ) in knob of butter and added some ginger and cream and seasoning.... plate up and put some crispy baked bacon on top and add some freshly grated parmegiano ... sounds good ,right? ...😬... gobbled it up during netflixing as you do on a friday night... took no more then 10’ to make... 😁... will make again ... have a nice weekend...
