Many granola bars now, despite their higher fibre content due to the inclusion of oats, nuts, and dried fruit, are packed full of refined sugar and corn-fructose syrup, as well as other highly processed chemicals that can be harmful to those who suffer from diabetes and high blood pressure. The nutrient value can also be depleted because of the addition of these other ingredients, overall confusing your body! So why not make your own?! It is so much easier, lots of fun, and so much healthier 💚⁠⠀

Using just 4 natural ingredients, combine them all in a bowl and form with your hands. Once formed, whether into bars, balls, or whatever shape you please. Place them unto a lined pan or a parchment sheet and refrigerate for at least an hour—you’re good to go!⁠⠀

Potato and pumpkin veggie bake 😊

I haven’t made a veggie bake in a while. It was a nice change though as you get a mix of the soft, creamy vegetables underneath with some crispy potato and pumpkin skins on the top..

Ingredients:
1 onion, diced
2 tsp turmeric
1 tbsp cumin
1 kg potatoes, diced
1/4 jap pumpkin, diced
10 olives, roughly chopped 
1 chilli, sliced lengthways
1 tin, diced tomatoes
2 handfuls spinach
Fresh coriander, lime juice, chilli sauce to serve. I also served with some baked chickpeas.

Method:
1.saute the onions with the spices until the onion is soft (~10 minutes)
2.add the potatoes, pumpkin, olives, chilli and 1 litre of water and simmer for 15 minutes or until potatoes are semi-cooked
3.stir through the spinach and tomatoes and transfer this to a lined baking dish
4.bake for 45 minutes or until the sauce has thickened and the potatoes are soft 🤗

This was my breakfast the other day in my HUGE @coconutbowls 😂 this definitely made me realize that my smoothie bowl game isn’t as strong as I thought it was. Finally starting to feel human again & getting outside for some sunshine.
The last 3 days I’ve been run down with a horrible cold. I’ve been resting, nourishing my body and drinking a tonne of water, trying to beat this sickness before it turns into the flu! 🙅🏼‍♀️ and I think I’ve done well, after 3 days I can feel I’m getting better. Previously it would have definitely turned into the flu and I’d be sick for a week or more. Ain’t no body got time for that!
