You know what's really tough about being a cook? Seeing the menu for the following day and wanting to eat it now 😂🙈 I've actually been craving quiche due to the tasting event at the weekend and this gooey number our #pudding for our cook day tomorrow 🤤👌 the fact of the matter is I just couldn't wait for tomorrow 🙈 I CONFESS! INGREDIENTS:

CURRY:
.
3 tbsp groundnut oil
1/2 tsp mustard seeds
10 curry leaves
2 onions, finely sliced
2 inches ginger root (grated)
2 garlic cloves (minced)
1 chilli (finely sliced)
1/2 tsp ground coriander
1/2 tsp turmeric
1 tin (400g) chopped tomatoes
1 tin (400ml) coconut milk
1 tbsp lemon juice
1 tbsp brown sugar
1/2 tsp salt
1 small cauliflower (broken into small florets)
100g green beans (cut into one inch pieces)

TO SERVE:
.
Basmati rice
Coriander leaves (for garnish)
Red chillies (for garnish)
.
METHOD: 
1.Put the cauliflower florets on a baking tray and bake them for 20 minutes at 180℃
.
2.Warm the oil in a large skillet, add the mustard seeds and the curry leaves to the oil and stir them round until you've released the aromas
.
3.Add the onion to the pan and cook it until they start turning translucent
.
4.Add the ginger, garlic and chilli to the pan and stir everything round until the aromas have been released and there are bubbles forming around the ginger
.
5.Add the coriander and the turmeric to the pan and stir them into the pan
.
6.Add the coconut milk to the pan and stir it round until the coconut milk begins to bubble
7.Pour the chopped tomatoes into the pan and stir them in so they're well mixed with the rest of the sauce
.
8.Add the lemon juice, sugar and salt into the sauce and stir everything round
.
9.Pour the green beans into the pan and stir them into the sauce, let them simmer for 3-5 minutes so they start to soften
.
10.Open the oven, grill the cauliflower florets for 3-5 minutes so they start to darken slightly
11.Take the florets out of the oven, pour them into the pan and fold them into the sauce
12.Serve the sauce over basmati rice, garnish with coriander leaves and red chilli and serve

Okay so here is what liam ate one day last week...

7am mama milks
8am breakfast for my hungry boy was a slice of avocado toast made into a sandwich + a bowl of berries
+ he sipped onsome @califiafarms Uber milk—our current fav! He’s more into the unsweetened vanilla flavor so I’ll be switching back.

10am - OTG today so he had some @happybabyorganics puffs + one chickpea fruit and veggie pouch. He’s got molars 🦷 coming though so Puffs + some Copaiba EO have been 🙌

12pm he took his lunch to daycare and ate all the blueberries, 3 “cookies” (see my recipe highlights), a few pieces of bell pepper and one tortilla hummus sandwich.

2pm - he ate another “cookie” a few more bite of veggies and another bite of sandwich + 2 more fruit + veggie pouches. Another chickpea one + the kale, pear and avocado. 🌱
6pm - dinner was a quick favorite. Hummus and quinoa. Sounds simple but he LOVES IT! I made a lemon artichoke hummus and season quinoa. It’s whole grains, veggies and and protein packed into this simple dish.

Not pictured, he had some strawberries for dessert plus more mama milks before bed.

Like, @crust_fenton sesame semolina, @kitehillfoods plain almond cream cheese, @whitelotusfarms pea tendrils, @caoliveranch olive oil, sea salt + pepper. Plus a side of homemade pink pickles and onions + garlic scapes because every sandwich needs a pickle.

Absolutely loved my dinner last night! So fresh, healthy, and very easy to make. I’m obsessed with cod, honestly one of my favourite animal proteins to have - extremely lean and delicious. I like to eat fish and eggs maybe 2-3 times a week, I like having a balance between totally vegan days, and some days just incorporating some animal protein into my meals. But even on days where I have my animal protein - more than half of my plate is always veggies, as seen here! Hope everyone had a great day🐣✨ ——————
#dEATS:
1. 1/2 organic cod filet pan cooked with 4 tbsp of olive oil, lemon juice, S&P 
2. Barbecued onions, romaine lettuce, and heirloom tomatoes (optional to toss in a little olive oil and seasoning of choice but I put them straight on the bbq)
3. Topped with extra lemon juice and pepper

Petit pois and soya bean “barleyotto” (I know the name doesn’t work, but “risotto type thing but with pearled barley instead of arborio rice” is a bit too long winded!). Onion, garlic, petit pois, and vegetable stock are blended to make a vibrant green sauce to smother tender pearled barley and soya beans, served with a scattering of toasted hazelnuts, fresh parsley, and a spritz of lemon juice. A perfect summer meal!

We had such an incredible time at @veganinvasionmn yesterday! Thanks to all those who came by and ate some of our plant-based goodness, and thank you to all those who helped organize the event (looking at you @reverie_mpls and @theherbivorousb). We can’t wait for next year! 
We aren’t out today but we are out tomorrow at the Amherst H. Wilder Foundation from 11AM to 1PM for lunch.

Zoodles are all prepped for tonight’s dinner. I actually prepped these yesterday and they can last up to 3 days in the fridge!

If you like your regular pasta al dente these are a great swap and a perfect way to get more veggies in! You can either spoon your sauce over them to warm them through or flash them in a pan with some olive oil.
.
I don’t suggest using the frozen zoodles in the store as zucchinis are made up of 95% water so they just don’t hold up the same in my opinion. I will do a comparison post in the next few weeks so you can see the difference. Happy Monday!
