Can we talk about something other than food for a second?
You guys. Marriage is hard. Like really hard. You’re supposed to take two people who at one point in time had similar interests and views and hope that as time moves forward and those two people grow, they grow in the same direction and with those same interests and views. 
Thankfully my wife and I still have the same goals and core values and we are truly totally compatible, but man, some times we just don’t see eye to eye on certain things. And that’s ok. ✅Like she doesn’t see the point in half the house decorating and home improvement jobs I want done.
✅Oh and how I totally micro manage her schedule and every little thing she does because of my Type A personality
✅And how we have completely opposite sex drives

I mean you guys... it’s difficult sometimes! 
So last night, I realized it had been awhile since we’d really connected. We hadn’t had a real date night since she’d been back from England 2 weeks ago! And before that, it had been months. 
So I told her we were having date night in and sent her to the store with a grocery list while I finished up work. We got in the kitchen together and we created such a delicious masterpiece meal together. 
It was so great to have a common goal of creating a yummy dish and working together to figure out the best flavors to make it all come together. 
And in the end, we definitely saw eye to eye and agreed that it was a winner.

I’m so happy that I choose daily to put forth the effort into those relationships that are important to me. They take work and nourishment.

🥬🥟 asain potstickers/fried dumplings 🥟🥬
•
recipe below..... but first a PSA, i’d consider this a weekend meal, where everyone can help out, esp with the wrapping + cooking.... quite a time consuming dish. but you can always make extra then freeze a bunch for another mid week dinner.
•
you’ll need: - ginger + garlic
- 1/4 cabbage (napa is best, but any is fine)
- 2 small carrots - 1 spring onion
- 1 bok choy
- 1c dried shiitake mushrooms
- dumpling wraps
- 1tbsp light + 1tsp dark soy
- 1tbsp vegan oyster sauce
- 1tbsp sesame oil
- 1tbsp rice wine - 1tbsp cornflour +water(make a paste)
•
method:
- at least one hour before you start making add about 1c of dried mushrooms to a pot cover with water & leave to soak.
- finely chop all veges, garlic + ginger, drain/strain mushrooms, before you start cooking
- add oil to a saucepan & cook off ginger + garlic
- add all veges in & all sauces, cook
- add cornflour paste
- remove from heat & let cool for a few moments while you clear your space, lay out your dumpling wraps & get a bowl of water
- add filling to the wraps & if you don’t know how to wrap just google how to haha
- once you’ve wrapped them all add oil to a saucepan on a medium to high heat, once hot. place your dumplings in nice & cosy to each other.
- once the down side of dumpling is nice & fried(brown & crispy) add about 100ml of water in, add the lid & let them steam until the wrapper cooks.

we had them with cauli rice(roughly chop cauli, add to food processor, blend until rice consistency, add to fry pan with garlic, fry = done) but next time i’d add a garlic bok choy dish too.

let me know if you give these a go, seriously such a hit in our house, so juicy. the girls loooove dumplings, usually when we ask them what they want for dinner it’s dumplings haha. & i couldn’t cook these ones quick enough - everyone was eating them straight from the pan. #recipe

For some of you this might get kind of boring, but honestly, this mixed rainbow plates is all I’m craving at the moment - and above all it’s easily prepared. 😜 To mix things up I try to vary the veggies from plate to plate. 🥑
Today’s plate: arugula, scallions, kalamata olives, belgian endive, blueberries, mint leaves, jicama sticks, baby avocado, and some yesterday’s leftover cauliflower and mushrooms. 
Salt, evoo and black sesame. 🥑

Einige von euch mögen meine Kreationen ausgesprochen langweilig und einseitig finden. Aber zur Zeit gelüstet es mich einfach nach diesen bunten Tellern - und schnell zubereitet ist es dann ja auch. 😜 Ich versuche eben immer anderes Gemüse zu verwenden. 🥑
Der heutige Teller: Ruccola, Kalamata Oliven, Frühlingszwiebeln, Chicorée, Baby Avocado, Blaubeeren, Minzblätter, Jicama und der Rest Blumenkohl und Pilze von gestern. Salz, Olivenöl und schwarzer Sesam.

She’s the only one that’s cooked on my stove besides me. She didn’t let me help much and totally cheffed up such a wonderful meal. Her story is so, so remarkable. She’s come so far and to be doing the type of light work she is doing with reiki & acupuncture is Godly. Akina was the first from our cypher to go into nature & start over. I began my journey 3 years after she started hers.  The spiritual world is so beautiful- it’s not an easy world to live in but it is magical. Aki Chan is listed as my soul mate & Vice versa in the power of birthdays, stars and numbers book. She’s predicted my future 3 times. All that she saw for me ...It’s all come to pass. I have clairvoyant ability as well. Very few ppl that I know even know about this (cats out the bag now!🤷🏾‍♂️😆). I hope to share with ppl soon. Giving thx for Aki-chan visiting NY for just a short time. I haven’t seen her since 2013 back when I toured Tokyo 🇯🇵 for rap. She saw me really tear the club up one time. So happy she got to stop by. “Blissed” is when a friend flies ✈️ all the way from Bhutan to👩🏻‍🍳prep a vegan meal for you.  I am so grateful for the meal my soulmate Akina 🇯🇵prepared for me.  I have not seen her in NY since 2009!

She’s a reiki master, and acupuncturist that heals so many ppl of ailments including Stage 3/Stage 4 cancer.  We did eat tofu topped with Vegan Kimchi!!! And she made an amazing protein bowl of chic peas and veggies for me too. So delicious.
About the soulmate thing we met so long ago & looked up our bdays in this huge astrology book I have & it lists our bdays as soulmates on our respective pages. So magnetic 😉!!

Or, the times when co-workers have emergencies, and I get called in. I'm never without preparations 😉 -- why?! Bc my purpose is always fresh on my mind, and always my focus. Today, I want to suggest a few ways that you can incorporate more in your diet 🍽There are many different ways to consume mushrooms, so unfortunately, I can’t talk about all of them in this post, but I will talk about three of them!

🍄Quick and probably one of the most basic methods of incorporating them into your meals: simply slice the raw, cleaned mushrooms and add to any salad (this will add a meaty texture to your 🥗).⠀
🍄This one is for those who are not really a fan of eating mushrooms in their raw form: make a mushroom sauce pasta! 🍝There are so many recipes out there, but here is one from @deliciouseveryday linked on our Facebook and Twitter pages! ⠀
🍄 Consume beverages that include mushroom powder (I like @foursigmatic’s mushroom bevies!), which are commonly made from mushroom varieties such as lion’s mane and reishi. ☕️You could blend the powder into your coffee, smoothie, etc.! I discovered @natures.corner.market last week. I noticed they had a cafe and said the next time I went, I'd order something.

My sandwich is loaded with avocado, cucumbers, artichoke hearts, spinach,  sun-dried tomatoes, a flax dressing and lots of flavor. The artichoke hearts and dressing really set it off. Not bad. Not bad at all.

Ingredients 
1/2 scoop of @coconutgreens
100mls coconut water
150mls unsweetened coconut milk
25g @maxinesburn Vanilla protein powder 
100g banana, frozen
50g mango, frozen
Ice 
Method 💚
1. Place all ingredients into a blender and blitz until smooth! 
2. I sprinkled some chocolate cluster buckinis from Loving Earth over the top!

It takes courage to grow up and become who you really are! 💪 - Cummings

I pondered over this one statement for days together. A little hard to sink in but true. We carry a multitude of baggage with us everywhere we go each time adding more to it as we grow. Our perspectives are not really ours but are those that we've imbibed over decades from all the people we've met, from the environment we grew up in, from all the communities we're involved in, from people you've held in high regard, from the movies you watched, books you read and situations you've been in. We basically collect them all. Some of these are deeply ingrained in our sub-conscious while some we tend to consciously question. Some widen our horizons & change our lives while some narrow it down to a bubble.

Oh well, one might just question - But I am being ME. Why does it have to be a courageous thing to be oneself! Well, we might not, because in reality, we do not understand ourselves completely. Our behaviour is dictated by a myriad of unconscious experiences we've had right from childhood. Even therapists find it hard to dig out the unconscious.

It takes courage to be us, because it's hard to let go of all that we've collected and all that we're associated with. It takes courage because change is a difficult thing.
Change takes a conscious decision & willingness.
Change takes enormous power.

Roasted garlic recipe from @pickuplimes! So are the ranch seasoned chickpeas. The granola is the classic gingerbread from @minimalistbaker but added quinoa.
Ps- cheese and pepperoni is for Zach and his pita pizzas.

On our Jerusalem Tour in the Footsteps of Jesus we had a group lunch set up in the Armenian Quarter where we had a choice of pizza, falafel, or chicken shawarma... Of course I chose the cruelty free option, the falafel! 🥙 It was so fresh and tasty 😋 .

Menuda cena me he hecho en un momentito aunque he de decir que acompañaría a cualquier plato perfectamente 😍

Ingredientes:
Champiñones
Setas
Espinacas
Levadura nutricional
Ajo granulado
Cebolla deshidratada
Pimienta negra molida
Una pizca de aceite

Elaboración:
En una sartén, doramos los champiñones y las setas con una pizca de aceite, la cebolla, ajo y la pimienta. 
Cuando estén casi hechos, añadimos las espinacas y seguimos dorando unos minutos más.

Observaremos que comenzarán a soltar "agua". Es en ese momento cuando añadimos la levadura nutricional (sean generos@s) y estará listo una vez que ésta se funda con los ingredientes.

Oven baked Spinach Tacos

Follow us @veganpandit for daily vegan recipes

Ingredients

9 small spinach tortillas (5-inch diameter)
2 cups of cooked rice (360 g)
One 15 oz can kidney beans or black beans (rinsed and drained)
1 small/medium onion
1/2 tbsp oil
2 garlic cloves
1/2 bell pepper
3/4 cup canned mushrooms (100 g) or use fresh
Spice mix: 1/2 tsp onion powder, 1/2 tsp ground cumin, 1/2 tsp paprika, 1/4 tsp smoked paprika, 1/4 tsp ground ginger, sea salt to taste
1 tbsp lemon
1 tbsp Liquid Aminos
4 tbsp plant-based milk
1/3 cup passata
1 batch vegan cheese sauce
Instructions
Cook rice as per the instructions on the package. You will need 2 cups of cooked rice for this recipe.
Prepare spinach tortillas as per this recipe (click). Or use store-bought flour tortillas or corn tortillas of choice.
Meanwhile, heat oil in a pan/skillet over medium heat and add the onion, mushrooms, and bell pepper.
Sauté for about 3-5 minutes, then add garlic for a further minute. Stir occasionally.
Add all spices, balsamic vinegar, soy sauce, plant-based milk, passata, and hot sauce. Stir and let simmer for about 3 minutes.
Add cooked rice and beans, stir and turn off the heat.
Taste and adjust seasoning if needed.
Preheat oven to 410 degrees Fahrenheit (210 degrees Celsius) and line a baking sheet with parchment paper.
Make one batch of the vegan cheese sauce (on feed) or use store-bought vegan cheese.
Add about 2 tbsp of the rice filling on one side of a tortilla and 1 tbsp of the vegan cheese. Fold the other side over the filling and press it slightly down with your fingers. Do the same for the remaining tortillas.

Transfer all tortillas onto the baking sheet. Bake in the oven for about 10-15 minutes or until crispy. Enjoy hot!

Lately I've had to remind myself what is truly important. We often tend to focus on minor details and dwell on the fact that something isn't perfect. We let ourselves get rattled up by small meaningless things and argue about insignificant issues. The truth is, no one knows how much longer we have on this beautiful earth with our loved ones.

Being mindful of #gluten is changing me and empty ass flour just doesn’t do it for me anymore- though- the dish was boooooooomb af! Working on a plan B for the left over sauce and veggies as I type!

Couple things not shown- I added a little Italian dressing to the pasta before loading with the sauce and veggies- a little drizzle. I seasoned everything to taste. .
