This is seriously one of my favorite salads! And it's so easy! You simply top some greens with chopped apples, roasted pumpkin seeds and dried cranberries, then drizzle with a poppyseed dressing. Red lentil pasta salad ๐Ÿฅ— I wanted to try out some new pasta but I didn't want a dish that was too hot. It's really warm outside so I want to stick with something cool. Plus I like all the veggies in the balsomic, it blends so well with a little bit of oil and agave. Tons of protein for after the gym today, too ๐Ÿ’ช I put in a lot of hard work this morning and I can feel that my food needs to be on point if I want to stay on the course I want.

This salad has some greens, tomato, avocado, cucumber, zucchini, cauliflower, red lentil pasta (that protein tho), vegan cheddar, and balsomic dressing.

Maple Sriracha Sauce - 3 tbsp maple syrup
- 2 tbsp tamari (or soy sauce)
- 2 tbsp sriracha
- 1 tbsp apple cider vinegar
- 1 tbsp toasted sesame oil
- 1/2 tsp garlic paste (optional)
- 3 tbsp water
- cornstarch slurry (mix 1 tbsp corn flour with 1 tbsp water, then add to sauce)ย

Hot and sour noodle soup is one of the easiest recipes to make out there for a well-rounded meal. It is highly customizable given that you can make it to match your personal tastes by adding extra the chili, vinegar, tofu or different vegetables and noodles.

The ingredients you will need for this noodle soup is:

3-5 dried Shiitake mushrooms, sliced
4 cups water
2 cloves of garlic, minced
1/4 cup carrots, julIenned
1/2 cup of bok choy, halved or diced
1/4 cup scallions, minced
1/2 block of firm tofu, cubed
1 tbs soy sauce
3/4 tsp salt
1/4 tsp white pepper
1/4 cup balsamic vinegar
1/8 tsp toasted sesame oil
1-2 packages of ramen noodles (I used Oceanโ€™s Halo)

Directions:

1) Rinse the dried mushroom several times and soak them for 1 hour and then cut into thick slices.
2) Combine the water, mushroom, garlic, tofu, soy sauce and salt in a pot. Bring the pot to a boil.
3) Once boiling, add in the noodles and bok choy and turn down the heat to medium. Let simmer for 10 minutes.
4) Add vinegar, white pepper, bok choy and carrots (add vegetables either before or after the boil depending on how cooked you like them). Add more salt or soy sauce if needed.
5) Add sesame oil and scallions, stir well. Serve hot. ๐Ÿค—๐Ÿœ

To be honest with y'all my relationship with food hasn't always been a positive one. ๐Ÿ™‡๐Ÿพโ€โ™€๏ธ I spent years chasing the latest diet trends and pills, trying to force my body into whatever shape advertising told me it should be. Once I committed to living a plant-based lifestyle things began to change. I began to love myself and the food I put into her.
