yesterday’s bowl too pretty not to post🥰 lately I’ve been busy traveling from NYC to R.I.🚆 I haven’t had much time to get it intolerant routine 👎🏼 So to make sure I’m staying healthy and meeting my goals I’ve become addicted to making random bowls😋 I just see what healthy ingredients I have left around, bake🥔, sauté,🥦 cut, 🥒whatever I have time for throw it a together top with siracha🌶 and BOOM! 🥙Delicious afternoon delight💕🥳 Here’s what this one included:

Another CHOW winning week for me.  Of course it was one that was ab focused.  The challenge was as many full sit ups in 3 minutes. On the Monday I did 157 in 3 minutes, someone beat me with 162.  Tuesday I did 181, and held it there all week.

I tried to wear my belt but it doesn't fit. After a tough three days training I decided that W35W1 #roadtokona2020 would be a recovery days as body feeling tired and no benefit to just working out to work out. Recovery is even more important than training. So I did an easy paced session on the spinbike for 30 minutes followed by a stretching/yoga session. Feeling good and looser after it. You should always exercise but it’s knowing when to push hard and when not to that matters most

So, yesterday I stepped back on to the platform after taking a year out from competing for multiple health conditions. It was amazing to push myself out of my psychological comfort zone and feel the, euphoria and adrenaline of competition again 🔥

I made a promise to myself last year that I wouldn't step back on to the platform unless I felt completely and 100% psychologically/physically capable to do so. Most of my time has been spent completely rearranging my thought processes, outlooks and views towards myself, how I treat and view my body and lifting. It's truly been one of the best and efficient choices I've ever made. I've taught myself to handle the overwhelming anxiety, negative thoughts and adrenaline, harness them and shut them down when it's time to get shit done. Learning to do so has also blanketed in to all other aspects of my life and completely changed me as a human being.

I won the under 63kgs weight category and overall female champion, two titles I absolutely wasn't expecting on my debut back to competing 😍

A crisp high five to @robdutton, who came down so I didn't have to compete alone. Its v cool to think me and Rob made friends on IG just over a year ago bc there was nobody else in our town who liked Powerlifting, memes, passionately hated gym toxic masculinity and were also hella introverts. Now we're training partners, discuss memes in person, are slightly less introverted and still passionately hate gym toxic masculinity 🔥

(Forgot to post yesterday)

Not drinking during the week was whatever, I do that all the time. But I was really worried about the weekend. Drinking is FUN for me. My husband and I can kill 4 hours easy sitting at a bar, watching football, having drinks, and laughing a lot at whatever conversations we get into, what would my weekend be like without it? What about my girlfriends that I meet up with for brunch, or the "hey let's meet for haply hour" plan that's always easy to make? I was worried about giving up the sensation of alcohol but more than that I was worried about losing a massive form of entertainment, social connection, and relaxation. 
I think I finally got so sick of the negative aspects of drinking that right now I feel like I'm gaining much more than I'm giving up. I thought I would feel much more deprived but this weekend I found myself feeling greatful to have no alcohol. Yesterday I marveled that I could drive whenever, I was thrilled about how much money I DIDN'T spend, realized that each day I feel slightly physically better than the last. Today I'm amazed that I could wake up at 6am without snoozing a bunch of times and my middle of the night 3am wake ups with racing anxiety are shrinking.

Everyone's relationship with alcohol is different, and I don't know if this is forever or until I can learn proper moderation, but what I do know is that each day that I go without something I could "never give up" I feel more powerful and more convinced that I can do anything. .

Results are more about what you DONT do than what you do. -
Some people think they have to DO a whole bunch of stuff to increase their fitness to see results but sometimes it’s actually more about what you STOP doing. -
Stop 🛑 overeating
Stop eating j u n k 
Stop skipping breakfast 
Stop over exercising 
Stop drinking so often 
Stop staying up too late 
Stop sleeping in too long
Stop drinking so much caffeine 
Stop giving up -
When I can’t see results from my fitness program 99.9% of the time.....it’s because I am doing one or many of the things listed. -
It is ALL about balance. Over exercising to ‘balance’ out the overeating you’ve done only creates a larger imbalance in our bodies. -
If you over ate, drank too much, didn’t get enough sleep.....the BEST thing to do...is carry on like normal. NOT to overcompensate by creating a larger imbalance. -
No balance, no peace. 
Know balance, know peace. 💜✌🏼

Back from hols on Friday and headed off to Glengarriff for the Garnish Island swim on Saturday.  Weather conditions weren't great but the water wasn't too bad at all.  Water temp definitely felt cooler than last year so got cold quickly (being used to the balmy water in Spain didn't help either!).
Did one lap around and happy with that (did 2 last year). After an early morning 80km ride and short run on Sunday, headed off to see the island from the interior!  Was so lovely out there and enjoyed making the connections between where we swam and the different parts of the island.  Kids loved it there too : ) 
Finished off the day with a yummy vegan pizza in Milanos - ready for sleep now!

Happy #mealprepmonday! I have to say I've been ON MY GRIND the last month or so and I really am feeling the benefits. I'll never tell you it's easy, but committing to your goals and actually feeling the progress is soooo worth it every time! 🏋🏼‍♀️ I'm feeling strong, confident, lean, and energized and it's really keeping me motivated and focused.

So this week, I'm really focused on sticking to mostly whole foods and lots of plants to keep these good vibes 😎

My nutrition really impacts my mood and energy so much more than you may expect. If you're just grinding away at the gym and not putting effort into what you're FUELING those workouts with, you're really only getting a small percentage of the reward. Find 2-3 hours of your week, batch cook a ton of delicious, nutritious food, and feast! 😉🍽️

Here's what's on the menu this week:
- Breakfast: Protein shake with almond milk and spinach, and an almond butter oatmeal bake
- Lunch: Chickpeas with dried apricots, cherry tomato, greens, cucumber, and a miso-tahini dressing
- Workout: 1/2 a protein bar and an orange
- Dinner: Curry lentil Dahl with red peppers and greens, and brown rice

Sweet and Sour Tofu Bowls

These tofu bowls are very easy to make and involve siracha! A vegan's favourite sauce.

Poke bowls are great for variety and you can load up on fresh produce full of antioxidants. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
RECIPE
🌶 1 block firm tofu
🌶 4 tbsp siracha sauce
🌶 1/2 cup Vegan soy sauce 🌶 2 tbsp Agave Syrup
🌶 1/2 cup + 2 tbsp cornstarch or arrowroot powder
🌶 Diced garlic clove
🌶 Vegetables of choice
🌶 Base of choice (rice, quinoa, salad)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start boiling the rice/quinoa if using as base
Dice the tofu into cubes and toss in 1/2 cup cornstarch to coat.
Fry the tofu in olive oil until crispy ⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the sauce:
Bring 1 cup of water, siracha, soy, agave and diced garlic to a boil. Add 2 tbsp of cornstarch and 2 tbsp of water. It should thicken quickly. Turn off the heat.

Toss the tofu with the sauce.
Serve over rice or salad and add your vegetable toppings. I used avocado, fried zucchini, cherry tomatoes, raw cashews and mesculun salad.

When things are hard, I focus on my training even more. That’s what gives me room to not think and just be❤️ So today I biked on the hometrainer and afterwards I went for a 2 hour slow run🏃🏼‍♀️ Then food🌱 The last picture is a place, that I visit to just relax🌈☁️ Når tingene er hårde holder jeg endnu mere fokus på min træning.
