I have some great things to say about Tempered Room's "Choco Citron", but first: the pâte sucrée was far too delicate and could not be lifted off its platform without cracking.
But the marshmallow-like meringue was the perfect style of meringue for this tart. Combined with the pastry and chocolate, it made the tart recall a really great s'mores.
The lemon curd was excellent. It had a great lemon flavor, though it should have been richer. The chocolate was smooth and light, compensating the richness that the curd lacked in an interesting way. I would have been happier with a bit more acidity, and perhaps an herbal or vegetal flavor… or even just lime zest in the meringue. Weak 8. (May 2018) - 57 minutes ago
