Friday feasting, guilt-free!
Our healthy dinner inspiration for your Friday is Loaded Capsicum. Healthy, quick, colourful and so so easy! Also you can make with pretty much whatever you have in the fridge/pantry.
2 cups cooked brown rice, quinoa or couscous
2Tbsp Nut Brothers almond butter
2-3 Tbsp vegetable oil
Salt and pepper
1 cup of any of the below optional ingredients:
Diced red onion
Firstly make an almond butter pesto by combining 2 Tbsp almond butter with 1Tbsp oil, a small handful of basil and chilli flakes (optional). Blitz together until smooth.
Combine the pesto with all other ingredients (except capsicum) in a bowl.
Cut the top layer of each capsicum and scrape out the core and seeds.
Load each capsicum with filling and bake at 180 degrees for 15-20 mins.
