NEW RECIPE✨French-Style Couscous Salad. A loose adaptation from the Levantine "Tabbouleh", this salad is incredibly tasty, fragrant and satisfying. It's so simple to make (only 5 ingredients + seasonings) and a true Summer staple in France! The humblest, most delicious Blueberry Pie, inspired by the ones made in Alsace - a French region where blueberries are abundant. I absolutely LOVE this pie. The filling is truly the simplest, with fresh seasonal blueberries mixed with egg yolks, heavy cream and topped with sugar. You can use a store-bought pie dough or take some time to make your own. Either way, it's fuss-free, delicious and a wonderful way to celebrate blueberry season. Ingredients:
1 ready-to-bake pie shell
400g fresh blueberries, washed and dried
3 tbsp (45ml) heavy cream
2 large egg yolks
2 tbsp sugar
2 tbsp icing sugar

Instructions:
Pre-heat your oven to 390°F (200°C)
In a small bowl, whisk together the egg yolks and heavy cream, until combined.
On a floured working surface, if needed, roll out the pie dough to a 12-inch (30.5cm) circle (about 5mm/0.2-inch thick) and lay it into a 9-inch (22.9cm) tart pan, previously greased and floured. Cut the excess off, around the edges. Poke the bottom of the crust evenly with a fork. Evenly scatter the blueberries onto the crust. Pour the egg yolk-heavy cream mixture over top. Sprinkle with sugar. Bake for 35-40 minutes or until the crust is fully cooked and golden brown. Sprinkle icing sugar over the top, and enjoy warm or at room temp. .

This typical Summer dish from Provence calls for simple halved tomatoes slowly candied in a pan and then stuffed with bread crumbs, garlic and parsley. It plays the part of a no-fuss, frugal recipe but it truly gets you the sweetest, juiciest tomatoes, comfortably tucked under a blanket of crisp and fragrant bread crumbs. I'm starting to see beautiful stone fruits popping up everywhere on Instagram these days, but sadly we still have a few more weeks to wait before they'll show up in our stalls here in Niagara. So meanwhile, I'll just keep dreaming about this Apricot, Almond and Olive Oil Cake I made last Summer. It is simple, dairy-free, with big apricot clusters and a rich moist crumb with distinct herbaceous aroma, only true to olive oil (this, coming from a die-hard butter devotee! 😅). I'm starting to see beautiful stone fruits popping up everywhere on Instagram these days, but sadly we still have a few more weeks to wait before they'll show up in our stalls here in Niagara. So meanwhile, I'll just keep dreaming about this Apricot, Almond and Olive Oil Cake I made last Summer. We're entering the thick of lavender season here in Niagara! So naturally, we decided to go spend this sunny day roaming the purple fields and picking-up fresh culinary lavender. The colors, the smells, the light breeze...for a moment I was transported back to beautiful Provence 🌿 So excited for all the new baking projects I have in mind now...

I just couldn't resist.✨ As soon as I spotted these first cherries of the season on the market stall last weekend, I had to grab a pound of them and run home to make the first Cherry Clafoutis of the season. It was soft and tender, just sweet enough, with bursts of juicy cherries and a satisfying chewy rim just like I remembered. Like every year, baking this first Cherry Clafoutis is the sign that Summer has finally settled in - such a good feeling, right?
