Les dejo mi versión paleo  de esta tarta que aprendí a hacer de niño en familia  y que se ha transformado en un favorito de mi hija @xlight.dancew y de mi compañera @nikkichenko.

No existe  algo más  simple de elaborar que  esta tarta y aún así  seguramente os sorprenderá el resultado.
🔸
RECETA.
🍴
Ingredientes :
Tres manzanas Granny Smith .
 4 Cucharadas ( C ) de harina de yuca.
4C de harina  de harina de maca.
4 C de harina de almendras.
6 C de azúcar de coco.
6 C de xylitol .
 1sobre de levadura.
 4 huevos.
1 vaso de leche de coco.
100 gr. de mantequilla o mantequilla  de coco si quieres  hacerla sin lactosa.
Canela, nuez moscada y vainilla.
🍴
Procedimiento :
Precalentar  el horno a 180 grados.
Mezclar todas  las harinas con la  levadura, azúcar y xylitol .
Batir los huevos con la vainilla y la leche de coco.
Cortar las manzanas en rebanadas y espolvorear con canela y una pizca de nuez moscada.
Pintar una tartera con mantequilla y harina de yuca.
Colocar una capa de 4C de 
la mezcla seca de harinas.
Cubrir con una capa de manzana.
Repetir la operación hasta  terminar  las manzanas.
Terminar cubriendo con una capa de la mezcla seca  de harinas.
Hechar por encima la mezcla  de huevo y leche.
Cubrir con la mantequilla troceada en cubitos.
Hornear 40 minutos aprox.

Tip:
Se puede servir fría  o tibia acompañada con un helado casero paleo de almendras o vainilla.

Bloemkool! Handen omhoog wie er ook van bloemkool houdt! Ik vind het een heerlijke groente. Ik eet het rauw, ik eet het gekookt, ik eet het als puree, als soep.. you name it... Tot voor kort had ik er echter nog nooit een steak van gemaakt. Ok het lijkt natuurlijk in niks op een echte steak, laat ik dat meteen even duidelijk maken maar het is wel een leuke andere manier om je bloemkool te eten. Kun je trouwens ook met broccoli doen en met nog wel meer groentes. Zeker een keer proberen. Het recept vind je in de link in mijn bio! Eet smakelijk!

Bloemkool! Handen omhoog wie er ook van bloemkool houdt! Ik vind het een heerlijke groente. Ik eet het rauw, ik eet het gekookt, ik eet het als puree, als soep.. you name it... Tot voor kort had ik er echter nog nooit een steak van gemaakt. Ok het lijkt natuurlijk in niks op een echte steak, laat ik dat meteen even duidelijk maken maar het is wel een leuke andere manier om je bloemkool te eten. Winter usually means colds for our boys, however I truly believe that food is medicine.

Apart from the Moroccan chicken and veggie soup (a few posts back), this Kenyan chicken is chock full of garlic, ginger, coriander, yoghurt, and other goodies, to ensure colds stay away. .
I normally serve it with rice (for others) but had it for lunch with kale I sauteed in grass fed ghee. .

BREAKFAST
It's my absolute favourite meal of the day. 💕

Recently, I've been playing around with different schedules of IF (intermittent fasting), trying out a limited window 2-4hrs of eating and some days even doing OMAD (one meal a day or a 1hr window of eating). I'm actually really enjoying eating this way and have noticed, by limiting my eating window throughout the day (not necessarily my calorie intake), I :
✔️ have more energy
✔️ am waking up earlier
✔️ am much more productive throughout the day
✔️ feel like my digestive system is functioning better ✔️ have experienced much less bloating
✔️ can focus on my hydration & liquid intake 
When your eating window is limited, breakfast can fall at anytime throughout the day. (For OMAD it's normally around the 2-3pm mark.) When cutting down the QUANTITY of meals you're eating, the focus shifts to their QUALITY. Making sure I'm jam-packing plenty of veggies into my meals is always key for me + loading up on healthy fats & protein. (And a little treat in there 😜🍫 is a must) 
Limiting your window of eating allows you to focus more on your actual nutrition, and less on calories in / calories out & portion size.

For example...this was my breakfast this morning... Paleo Zucchini & Carrot Fritters 
Served with a soft fried egg & streaky bacon. 
Ingredients
*️⃣ 2 med zucchinis grated
*️⃣ 1 med carrot grated
*️⃣ 1 egg
*️⃣ 2 tbsp coconut flour
*️⃣ 1 tbsp chopped chives
*️⃣ S & P
*️⃣ garlic olive oil, coconut oil or ghee 
Method:
1) combine all ingredients, except oil, in large mixing bowl
2) mix until well combined
3) form into flat circles and cook in oil on med-high heat in pan. Turning several times
Note: mixture can be a little fragile, take care when flipping and reform as needed. 
Makes 5-6 
Macros per serve (2 fritters) 
Calories: 220
Net Carbs: 7.2g
Fat: 14.8g

As my older followers will know, I'm a huge nerd. I'm a nerd about health and fitness, but really I like to nerd out over most things! 
One of my favorite things to do, especially right now while I'm recovering from my ear infection, is play video games! I lucked out when my favorite game released a bunch of new stuff this week so I've been letting myself indulge in a lot of World of Warcraft.⁠

I’ve had the cookbook since April and I just finally got my act together to use it 🙊. But I must say both recipes were excellent. First is potato chorizo tacos with cabbage slaw and the second is egg roll in a bowl. Both were really delicious! I’m hoping to keep this momentum going all summer long. Plus Jim and I made a pact to only eat out once per week 🙊 to do better with our budget.

This weeknight dinner is so simple it shouldn’t taste as good as it does. All it takes is sautéed hot Italian sausage, bell peppers and onions (I get them frozen and already sliced to save time!), canned diced tomatoes, a little tomato paste, garlic, oregano, and basil. 🔝Ingredientes recheio:
- 2 latas de atum (escorra o óleo ou a água).
- 1 cebola pequena picada.
- 1 tomate pequeno sem semente picado.
- sal, Pimenta, orégano, cheiro verde é demais temperos a gosto. .
🔝Ingredientes massa:
- 4 ovos.
- 200 ml de creme de leite fresco (ou 1 lata).
- 150 gr de queijo muçarela (usei muçarela e parmesão).
- sal.
- 1 colher de chá de fermento em pó.
- parmesão pra polvilhar.
- azeite pra untar a forma. .
🔝Modo: misturar todos os ingredientes do recheio. Bater no liquidificador todos os ingredientes da massa, deixando o fermento por último.
Distribua metade da massa em uma forma untada com azeite, coloque todo o recheio, complete com a outra metade da massa. Polvilhe parmesão ralado e leve ao forno pré aquecido a 200 graus por 30 minutos ou até dourar. .

Tonight's deliciousness was a simple beef and broccoli over rice vermicelli.

I love how you can easily make a recipe paleo compliant! Coconut aminos in place of soy sauce was the biggest trade off in this recipe. I also used a touch of tapioca flour as a thickener. And if you don't do rice as part of your paleo, you can serve it over cauliflower rice. There's no reason that you can't enjoy your favorite dishes when you adopt a new way of eating!

DRINK OF THE WEEK: Gather the crew at your place for this refreshing gluten-free, potent, and effervescent punch!⠀

Pisco Punch Gluten-Free⠀
SERVES TWELVE⠀
•••••⠀
Ingredients⠀
- 750- milliliter bottle pisco, preferably Barsol brand, chilled⠀
- 2-1/2 cups cold grapefruit juice⠀
- 1 recipe Lemon Syrup (see below)⠀
- 10 fresh basil leaves, plus more for garnish⠀
-  Block of ice (see note above)⠀
- 3 cups 24 ounces cold soda water⠀
- 1 grapefruit, sliced into wheels⠀

Directions⠀
- In a punch bowl, mix together the pisco, grapefruit juice, and lemon syrup. Between your hands, pat the basil leaves to release their aroma, slice them into quarter-inch strips, and add to the punch. Add the ice, gently stir in the soda water, garnish with basil leaves and grapefruit wheels, and serve.⠀
- LEMON SYRUP⠀
MAKES 1 CUP Erin Ng uses Meyer lemons, when available, but regular lemons ensure you can make this yearround. Store leftover syrup airtight in the refrigerator up to 1 month.⠀

- 1 cup sugar⠀
Instructions⠀
- Squeeze 1 cup lemon juice from the lemons, reserving the juice and 8 of the squeezed lemon halves. In a medium saucepan over medium-high heat, combine the juice and sugar, bring to a boil, reduce the heat, add the reserved lemon halves, and simmer for 10 minutes. Transfer the syrup to a bowl, let cool for 20 minutes, then strain into a container.⠀

Baby plate. 
Ok, so she's not technically a baby anymore, but she's my baby and the baby of this house, so...17 month old plate.

Sometimes I get questions about how we feed our kids and it's just pretty uncomplicated for us, so I NEVER remember to share, but this is what it usually looks like. Just a smaller version of whatever we're eating. We don't go out of our way to make or buy 'kid food' (there is no such thing, they are just tiny humans), and they genuinely like MOST of what we eat. .
We have a one bite rule, and a finish what you have before you get extras of something else rule as well. With those rules are little caveats that are great to remember for little people. We start with small portions (often smaller than this plate, but I knew they were hungry), and then go back for seconds. Too much food both in quantity and options of food types can be overwhelming for anyone, but especially little kids. When we offer more and they aren't hungry or decide they don't like chicken for the day, it becomes frustrating and turns into a battle of wills. Offering less from the get go seems to save both of us from frustration later on. 👍

Swipe for a clooose up!! One of my favorite meals on EARTH 🌍 is ~RAMEN~ Unfortunately, since being diagnosed with #celiac, #glutenfree ramen isn’t the easiest to come by. A solution I’ve found to combat this is to take gluten-free instant noodle bases (YES! They exist!) and doctor them up to make them a proper and yummy meal. For today’s awesome lunch I used Simply Asia Thai Kitchen instant rice noodle soup in the flavor Garlic & Vegetable, added a few dashes of #gf soy sauce, a whole lotta corn, and two oozy soft-boiled eggs. 🤤 ~~~
Details: 
1. I heated 8 cups of water over medium heat until boiling. Popped in two eggs and let them boil away for 6 and a half minutes before putting them right into an ice water bath. 
2. While the eggs were boiling, I heated up the soup base as per the instructions and tossed the corn in the microwave to defrost! 
3. I peeled my eggs, tossed them in a bowl, topped with the soup and corn, before slicing open the eggs and looking at that yolk oooooze! Best part of the meal by far 😍
