I meant to share this with you guys yesterday but........ life, busy day and all that.

Now I know it looks kind of rubbish, I know it doesn’t have eye appeal, but this was so full of flavour it’s stupid.

In the week I had fish with cauliflower and broccoli mash and I saved the leftovers. I had previously and very simply cooked some chicken breast in Chinese 5 spice.

Another dinner in the week saw some leftover beetroot and chickpea salad 🥗 
This is food prep at its easiest. #toptip when making dinner - Just - Make - More. #cookonceeattwice is really the foundation for food prep. 
The thing I like about utilising leftovers is that you create so many flavour combinations that you wouldn’t naturally pout together. After all Chinese 5 spice and beetroot aren’t exactly a go to combination but it was so so good. 
Do yourself a favour and use your leftovers, this will stop you buying rubbish, nutrient deficient sandwiches and crisps for lunch, reduce your chemical load, increase your nutrient intake, and save you money. 
And it was also perfect that the sun was shining on my righteously gorgeous lunch as well #lunchinthesun

Hitting my diet break with one of my favourite breakfasts. Carrot Cake Overnight Oats.

After being in a calorie deficit for a while & listening to @coachmarkcarroll I’ve decided to have a diet break. I’ve never done thus before so it’ll be interesting to see how my body responds to the extra nutrients.

This doesn’t mean I can eat whatever I like. It’s a little more calculated then that.
.
What it does mean is I am going to eat my calories up to maintenance which in my case is  2000 calories a day yay.
.
I’ve timed it over the kids half term break which will also make eating out a little easier.
.
I’ll explain more over the next 7 days.

It’s associated with “detoxing” and “cleansing” either for weight loss or wellness. 
It is true that most of us won’t meet our daily intake of fruits but is juice a good way to improve that? 
There are few things to consider.
On one hand, drinking fruit juice, you are more likely to consume more fruit. Downside for that is missing out all that fiber that slows down all the sugar you get from fruits. 
The other thing to consider is the quality of the juice. Not all of them are equal. Many store bought juices can contain high amounts of added sugar and are diluted with water. The safest way to go is make it at home. 
At the end of the day, pure juices, whether they are made of fruits or veggies, are still good sources of vitamins and minerals. But think of them as supplements. Don’t replace your meals with them and keep the serving sizes in check. Drinking too much juice will spike up your sugar levels and will add extra calories to your diet. 
If you decide to make your own juice, don’t ditch the fibre. You can add some of the leftover pulp back to juice or use it for cooking. Try adding it to your muffin batter or use the veggie pulp when making broth or pasta sauce 🤓

Take out on the weekends is the shit, I get it. Netflix, the couch, a booper; who wouldn’t want food delivered to them in such a situation?! I’m certainly a fan of people bringing me food. It’s easy to let that get out of hand on the weekends.

But, rather than derail yourself over the weekend, take time during the week to find new recipes. Make a grocery list for yourself, get excited for the weekend’s menu. My wife and I share a Google Doc grocery list. She does the majority of the shopping but the shared List makes it so we can both add to it. That way we can both take ownership of what we’re eating.

This recipe is based on the Kichadi creation in Sarah Britton's cookbook, Naturally Nourished. But you don't need specific ingredients to make this, just grab whatever is in the fridge! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

The basic ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀
▪️Brown rice (100-200g)⠀⠀⠀⠀⠀⠀⠀⠀⠀
▪️Mung beans or lentils (100-200g)⠀⠀⠀⠀⠀⠀⠀⠀⠀
▪️Vegetables - I've found that any work (so far I've tried carrot, zucchini, cauliflower, broccoli, mushrooms, frozen peas, green beans, tomatoes) - approx 300g in total⠀⠀⠀⠀⠀⠀⠀⠀⠀
▪️Your favourite herbs and spices⠀⠀⠀⠀⠀⠀⠀⠀⠀

What's my secret?!? I eat...a lot!!😂

I cant even pinpoint when I started eating in such an unhealthy way but I know I let my busy life be my excuse. My excuse for not eating enough! And my excuse for not choosing healthy foods!

And then when my desire to get chizzled abs kicked in, I was wondering how I wasn't getting results, adding so much exercise to my routine in combination with the little amounts of food I was eating.

Simply put, my body went into starvation mode...I wasn't feeling hungry, but I wasn't fueling my body either. Instead of shedding fat, I was storing it because my body didn't know when it would get food again.
.
Mentally, it took a lot of hard work to gain back a healthy relationship with food. It took a lot to understand that eating around 1200+ calories a day over the span of 6 meals was actually going to benefit me...and it has! I have lost 25lbs in my journey over the span of 3 months, and I feel so much more energized and confident every single day!
