So I really like the SN egg bites but they have a bunch of added starches that I don’t like.  So I looked up some recipes made adjustments since I cant leave any thing as is and I got a winner. Bacon, gouda, asparagus egg bites.  Recipe is coming.

One of the easiest ways to reduce your plastic consumption is to shop for fresh produce at your local farmers market. Yes it takes a little bit of planning and prioritising, but it’s so much better for our environment AND it makes grocery shopping actually fun! I love going to the markets, chatting to the local vendors, taking my time strolling around and letting my recipes be inspired by seasonal veggies. And it doesn’t have to be expensive - this entire produce haul cost only $15!!! 💰 I don’t know if you say my stories yesterday where I talked about  @plasticfreejuly, but if you haven’t, go have a look and see if this is something you’d be interested in challenging yourself to! • that I am hella grateful we have two vehicles
• also that our van shit the bed while it still had a little warranty left so the work is covered (BEYOND GRATEFUL FOR THAT!)
• you can indeed, drink too much coffee in a day
• training for a 10K is harder than you think
• if you lose your shit on your kids, they forgive you and move on way faster than you do
• being outdoors with my kids is the best and solves all problems. Most of them anyway 🤷🏼‍♀️

Step ☝🏻 Grill all the veggies 🌶 🍆  My seasonal faves include: zucchini, yellow squash, bell peppers + red onion 😋 Spray with some avocado oil (has a higher smoke point) + season them up. Keep it simple with salt + pepper or jazz them up with my favorite @primalpalate seasonings.
Step ✌🏻Incorporate them into your meals throughout the week. Add to egg scrambles, toss with gluten free pasta, chill and serve with leafy green salads.

Yesterday after our lunch, my boyfriend said he was craving something sweet - and if you know me, I am always allll about the sweets😂🙈sooo, instead of going all out with an actual dessert, I made this for us- sugar free cheesecake jello (reduced calorie pudding mix) with organic cacao nibs😍technically for the amount we both had of each of these, they don’t really count towards your macros... there is less than 1 gram of protein, carbs and fats in both of these put together, so we considered it as “free..”🤷🏼‍♀️😏

My morning snack after my shake is the best part of my day, best thing is I didn't have to weigh, measure or calculate my meal. I have my shake first thing & even tho I have 2 a day I look forward to every single one.... especially now that my morning sickness has ceased 🙌

INGREDIENTS⠀
¼ cup whole wheat flour⠀
2 Tbsp. ground flax⠀
1 tsp. chili powder⠀
1 tsp. garlic powder⠀
1 egg⠀
¾ cup panko breadcrumbs⠀
2 avocados, peeled and cut into 16 slices⠀
⅓ cup mayonnaise⠀
2 Tbsp. sriracha⠀

•⠀
DIRECTIONS⠀
1. Preheat air fryer to 400°F. Lightly spray the fryer basket with oil.⠀
2. In a shallow dish, combine flour, ground flax, chili powder and garlic powder.⠀
3. In a separate shallow dish, whisk 1 egg.⠀
4. Place panko breadcrumbs in a separate shallow dish.⠀
5. Dip avocado slices in flour and gently shake off excess. Dip into egg and then press into breadcrumbs.⠀
6. Place avocado slices in basket and cook until avocados are crispy and golden brown, 7-8 minutes.⠀
7. While fries are cooking, mix mayonnaise and sriracha together in a small bowl. Serve with warm avocado fries.⠀

Do you drink energy drinks? Or grab soda or coffee for an afternoon pick me up?! I’ve never been a fan of energy drinks. I have tried a couple and i just can’t stomach them - plus the ingredients are 👎🏻. But not this one!! Plant based, no mystery ingredients, only 100mg of caffeine, and sweetened with monk fruit, honey powder and stevia. And no crazy side effects or caffeine crashes. 👍🏻

As a full time athlete, what I put in my body impacts how I sleep, how I recover and ultimately how I perform (and feel!!) every day in training and in races.  I like to call nutrition the 4th discipline!  Growing up, eating/food/cooking was a big source of enjoyment for my entire family.  Yet, when I first made the transition to competing full time I struggled to find the balance between viewing nutrition as an essential element of my performance and also enjoying it.  Because I didn’t know how to eat I’d eat the same thing for breakfast, lunch and dinner every day.  It was boring and left me frustrated.  And it also wasn’t balanced or diverse to give me what I needed to perform.  2 years ago I began working with @scottytindal - he has taught me SO much.  He has shown me what, how and how much to eat around my training to ensure I am fueled, strong and healthy.  But he has also encouraged me to bring the joy back into cooking and have plenty of variety in what I eat day to day.  I LOVE to cook and I love to eat, so merging these two loves while also nourishing my body has transformed into a passion and great source of joy.  Thanks @scottytindal for the incredible education and help.  These pics show the variety of foods I eat - rarely is any one meal the same.  My husband and I always are changing it up and seeking new recipes that meet my nutritional requirements while also tasting amazing and don’t take ages to make.  Some of our recent favorites: wild rice salad with grilled citrus cod; Asian kale salad with coco-amino/maple grilled salmon; one pot turmeric ginger chicken and rice; oatmeal with fresh fruit, nuts and @Justin’s almond butter;  full fat yogurt with homemade granola and fruit; sweet potato breakfast cookies; poached eggs over homemade toast 😋😋😋. .

Why did I REALLY start an online nutrition business? If you experience GI distress after eating or drinking dairy, it may be worth trying a nut beverage! If you enjoy drinking milk, keep it up! Removing dairy products from your diet just on a whim is not a good idea. You can miss out on important nutrients for your body.

Lots of the time, pancake meals are just topped with syrup/fruit/whipped cream/etc (which is okay if you’re wanting that!); HOWEVA, this only provides you with carbs & not much protein, so the meal isn’t as satisfying/filling 🙈 Carbs are freaking awesome, but I guarantee your meal will be more satisfying if you add some protein (& fat too!) either in the pancake batter or as a topping 👏🏻👏🏻 Especially after exercise, protein will help repair yo muscles too!!

Here’s what I did for mine today 😉 I usually use @kodiakcakes protein pancake mix cuz they’re delish & already protein packed - this one today was the choco chip mix 🙌🏻 Topped with fruit (cherries), a pool of @crazyrichardspb pb, a dollop of @siggisdairy vanilla skyr, some almonds, a drizzle of 100% maple syrup, & a cinnamon sprinkle 😍 So the pancake mix, pb, skyr, & almonds all provide some protein!!! Still sweet & delicious but also more satisfying!!!! 💞 What toppings do you like to put on your pancakes?!?

Expressing myself through creative means, whether that be cooking, painting, or something else entirely, feels so damn good and comes very naturally during this phase.

I love the Follicular phase.

I love waking up from the hibernation that is the Menstrual phase.

I love feeling my energy increase, I love becoming excited about social events, I love feeling turned on and alive.

Appreciating each phases light side helps me to recognize and balance its shadow side.

But for right now, I’m immersing myself in the light.

I’m feeling that spark, and I’m going with it.💛

Yummy kahlua inspired shredded pork, spicy salsa and 1/2 avocado.

This is a meal I can easily eat a few days in a row.

I made the kahlua inspired shredded pork yesterday in the instant out and just put it in the refrigerator.

Picked up some fresh salsa and avocado at @harmonsgrocery on my way home tonight.

5 minutes to put it together (and take pictures) and there you have it. Yum!

Yes. I am currently going through a phase where everything will probably have chili garlic sauce in it. I am okay with this reality as it is making all the food I’m eating delicious. 👌🏽Today we sautéed some chickpeas, peppers, mushrooms, onions and bok choy in it. What a meal! 🙌🏽 Make the beans tasty and sure you will enjoy them just as much as anything else. 😌

Chili Garlic Chickpeas
1 cup chickpeas
1/2 medium onion, roughly chopped
1 red pepper, cut into strips
5 mushrooms, sliced
Bok choy, cut into smaller strips
1 tsp chili garlic sauce
1/4 tsp ginger powder
1/2 tsp garlic powder
1 tbsp soy sauce
2 tsp maple syrup 🍁

Add mushrooms and onions to a pan set to medium heat. Allow veggies to cook and soften, about 2-3 minutes. Add garlic, ginger, chickpeas, peppers and bok choy and sauté until fragrant, about 2 minutes. Add soy sauce, chili sauce and maple syrup and stir to combine. Lower heat to low and allow some of the liquid to cook off, about 3-4 minutes. Stir to combine and serve as desired. Makes 2 filling portions. 🍚

I think the most delicious place we tried on our LA visit (of many delicious places!) was @sqirlla 😋this was seared polenta in a whey-based broth with an egg and veggies! So tasty! ✨

Mixed greens and herbs from the garden with balsamic. Brown rice cooked with soy milk/water and bay leaves (in instant pot). And a vegetable stirfry: mushrooms, steamed cauliflower, carrots, yellow peppers, shallots, tempeh, ginger, and tamarind. Spices: turmeric, Chinese five spice, pepper, and cumin seeds. Note: no oil needed to cook just have a glass of water I keep it from going dry when using higher temperatures. I love stirfry a as they are so versatile. I’ve never made the same one twice...I think 🤣🧐#ilovetocookandeat

For dinner tonight, I made 𝗕𝗿𝗮𝗶𝘀𝗲𝗱 𝗕𝗲𝗲𝗳 𝗮𝗻𝗱 𝗠𝘂𝘀𝗵𝗿𝗼𝗼𝗺𝘀 (from 𝘛𝘩𝘦 𝘗𝘭𝘢𝘯𝘵 𝘗𝘢𝘳𝘢𝘥𝘰𝘹 𝘘𝘶𝘪𝘤𝘬 𝘢𝘯𝘥 𝘌𝘢𝘴𝘺) and 𝗽𝗿𝗲𝘀𝘀𝘂𝗿𝗲-𝗰𝗼𝗼𝗸𝗲𝗱 𝗯𝗮𝘀𝗺𝗮𝘁𝗶 𝗿𝗶𝗰𝗲. The flavors went really well together! I don’t think I will personally eat the rice too often (there’s no way to get around that high carb content), but my family is sure happy to get some now from time to time! And since I can pressure-cook the rice and then allow it to cool completely, the lectin level can be brought way down. I love simple solutions!

Except I'm not going to talk about that.😁

I had a doctors appointment today, nothing serious, and I had to get on the scale. I never weigh myself, I used to have issues with my weight, so I just don't do it. I don't even own a scale.⚖
.
I weigh more now than I ever have, and the best part? I'm ok with that! A few years back that would've sent me spiraling!
.
I know what you're thinking, 'but she's already so thin', well imagine me minus about 20 lbs.
.
 I'd gotten away from doing #yoga for a few years and was overdoing every other #exercise , and I definitely was not taking in enough calories. ..
.
What helped straighten me out? My gym at the time started offering PiYo, it's a cross between yoga and pilates with some plyometrics thrown in. .
.
Well the yoga aspect was enough. I stopped punishing  myself and started to appreciate my body again and all the wonderful things it can do. It helped me to relearn how to be kind to myself. And I haven't looked back since.🧘‍♀️
.
I'm not saying yoga is going to magically cure whatever ails you, it was definitely an uphill battle, but it may help to flip that mental switch to break a terrible cycle. 🔁
.
So if you need another reason to #startyoga, there you go, personally it has really been a godsend. And it couldn't hurt to try it, right?!🖤
.
Back to #ultramarathontraining tomorrow! My #ultramarathon is less than 2 weeks away now! I'm getting excited!🏃‍♀️

I think that most of the times I don’t really plan so rigorously the menu I’ll have for the week! I like to meal prep but often times I decide what to do on Sunday based on what I have at home! I guess I’ve learned how to improvise things more now than before. I’m so happy with this recipe because it was sooo easy, yummy and it’s also a classic! 👌🏻 I have to say, this Chicken with Creamy Mushroom Sauce will be on my favorite list! 😋💕
Ingredients: 
2 medium (4-5oz approximately each one) organic skinless boneless chicken breasts 
1 cup of organic low sodium veggie stock
8 oz of sliced mushrooms
1/4 cup chopped sweet onion
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon oregano
1/4 pepper
1/4 cup silk almond milk
1 tablespoon gluten free flour
Avocado oil
Method: 
Preheat oven to 400F
In a sauce pan heat some avocado oil and add the chopped onion. Let it get translucent and tender
Then add the garlic and mushrooms. Wait until they are tender. 
Introduce the veggie broth, almond milk, spices and flour. Move constantly with a whisk so you don’t get flour lumps. 
Lower the temperature to medium low and allow it to thicken up. When it gets thick remove from heat and set aside.
On a cast iron, add avocado oil and place the chicken breasts on it. Sprinkle some salt on them and then add the creamy sauce on top. Cover the cast iron and place it in the oven for 25-28 min, depending on the thickness of the chicken breasts. 
Serve immediately or save for later! I paired it up with roasted carrots and cauliflower mash! It’s sooo good!!
