Weekend dinner x four.
This meal is a bit of a labor of love. It’s @jamieoliver sweet potato samosas with a simple cucumber salad and it takes time and determination. But look at them! And the kids love them - despite there being texture and flavour, seconds and thirds were had and leftover samosas were eagerly requested for lunchboxes...
The recipe is roughly this:
Pan fry mince with curry powder, set aside on a plate; in the same pan, fry some onion, garlic (chili optional), finely chopped coriander stalks and cubed sweet potato.
Add some water, cover with lid and cook on a low fire till the sweet potatoes are soft (ca. 15 mins). When cooled, mix with the curried mince and some brown rice (I usually get the ready made stuff, otherwise you can cook some at the beginning). Defrost filo pastry, wet with some water so it sticks better, put some of the rice mixture in one of the bottom corners, then fold the filo pastry over and over etc wrapping the filling in a triangular parcel. It takes a bit of trial and error, but it’s not rocket science. 🤗 Brush with some oil or milk and bake on a baking sheet (lined with baking paper to prevent sticking and make cleaning a breeze) for 15 mins at 180C fan oven.
Eaten here with cucumber, lemon juice and coriander salsa; Greek yoghurt and mango chutney. 🏻🏻🏻
Each time we make this meal, I think to myself, next time make double the amount. And then I forget. 🤷♀️ It’s not complicated, the result is awesome and of course #noleftovers . .
