Many hands make quick work, and there was still more Navajo-churro mutton to prepare today. I was mostly chief dishwasher and potato peeler today, but while I did the later I got to sit quietly and listen to women speak in Diné around me and watched Grandmother Sarah butcher and filet and entire leg. It was grilled over cedar, and everyone came by at lunch to make sandwiches with the sliced, salted meat (always extra salt on top) and warm, whole-wheat flatbreads.
Also why do we say we “butchered” something when we make a mess of it? Butchering is delicate and precise, and requires great knowledge.
