Creamy Dreamy Hummus Recipe

I prefer to go the extra mile by using fresh chickpeas rather than canned chickpeas but this recipe would work just fine even if you prefer to use canned chickpeas. 
INGREDIENTS

1/3 cup good-quality tahini
2-3 tablespoons extra virgin olive oil
3/4 teaspoon fine sea salt
3 medium cloves garlic, peeled and smashed
juice of 1 large lemon (3-4 tablespoons)
3 cups cooked chickpeas ( soaked over night, then cooked in a pressure cooker)
Reserve 3-4 tablespoon water that you used when cooking the chickpeas in the pressure cooker otherwise warm water will do
optional toppings: extra drizzle of olive oil and sprinkle of ground sumac

METHOD

Add all the ingredients to your Vitamix or high-powered blender and secure the lid. 
Remove the lid cap and insert the tamper.
Blend on high for 30 /40 seconds and use the tamper to push the hummus into the blades. Add water and continue blending until you get the creamy texture. 
Add the hummus to a serving plate and garnish with olive oil and sumac.
Let hummus sit in the fridge for 30 minutes before serving. 
Serve with pita bread or veggies.

Easy clean colorful nutritious in less than 20 min after a 45min full body workout. I believe in eating the rainbow 🌈 also clean eating 80-85% of the time. While I don’t follow any diets I noticed that following a combination of pescatarian and Mediterranean ways of eating has been working so well for my body. I feel great and so does my system. Easy KALE FALAFEL WRAPS with a yogurt dill sauce. These are full of hidden nutrients and you would never guess! There is a full head of kale as well as a can of chickpeas and lots of spices. The falafel patties are vegan and can be made gluten free too!

[Ingredients]
1 large bunch of kale, stems removed
15 oz can of chickpeas
1 tsp garlic powder
1.5 Tbsp tahini
3 Tbsp lemon juice
1/2 tsp ground cumin
1/2 tsp salt
1/4-1/2 cup all-purpose flour (or sub with oat flour if gluten sensitive)
2 Tbsp olive oil
Whole wheat pita pockets
Handful of spinach
1/4 cup plain nonfat yogurt
1/4 tsp dried dill

[How it’s made]
1. Add kale to a food processor and pulse until finely grated. Add the chickpeas, garlic powder, lemon juice, cumin, and salt and blend until just combined.
2. Transfer mixture to a large bowl and add the flour. Combine and add extra flour until the mixture sticks together. Taste and adjust seasoning.
3. Scoop out about 2 Tbsp balls and flatten to be about 1/2 inch thick patties.
4. Heat a large pan over medium heat and add the oil. Once hot add the patties and cook on each side until golden brown. Transfer to a towel-lined plate.
5. Assemble the pita pockets by adding a scoop of yogurt, the falafel patties, a handful of spinach and sprinkle dill on top. Enjoy!

This refreshing Greek arugula salad with fruit is perfect for summer. 
It was part of our lunch at Christina Xenos's presentation of her book, Opa! The Healthy Greek Cookbook, at Melissa's Produce. 
Christina tosses the arugula with segments of blood orange and navel orange and slivered fennel and tops it with pomegranate arils. 
The dressing is made from extra virgin olive oil, balsamic vinegar, shallot and salt. Christina recommends using pomegranate balsamic if possible. 
For a light meal, it's perfect with a Greek tomato-cucumber salad with feta and black olives. 
Christina co-authored the book with Theo Stephan.

An oldie but a goodie for me. Roasted chicken, kale, and mushrooms with balsamic vinaigrette. So. Freaking. Good. Fun fact, kale is high in vitamin C which is great since I've been under the weather, and it is good for cell repair (why you get scurvy with a vitamin C deficiency!).
