Fresh Friday!  Who wants to wake up and find this in their fridge waiting for them for breakfast?  This is carrot chia pudding. Topped with flowers, coconut, almonds, cacao nibs and pomegranate seeds. Treat yourself to fresh edible flowers for a beautiful meal. I decided to try carrot chia pudding in honor of Easter. This is what I made-
1 cup carrot juice 
1 cup coconut milk 
1/2 cup chia seeds 
2 Tbsp maple syrup or agave
2 tsp vanilla extract 
Cinnamon 
Stir and refrigerate overnight with a couple stirs. Then top and decorate 🤗🌸💕😋

ONE OF THE MANY HORRORS OF THE ANIMAL AGRICULTURE BUISNESS Not graphic but truly heartbreaking.
These beautiful young  pigs are sick and therefore not profitable. They are going to be set on fire and burned alive😢
When animals are commodified, their sentience and lives are mostly disregarded and deemed meaningless. 
Making profit is what  industries that exploit animals most care about. Make kinder choices by not supporting products/industries  that cause so much suffering and direct harm to beautiful, innocent life forms. Industrial farmers just want to kill as many as possible and as quickly as possible. They have zero compassion and these animals have no chance if we ignore these cruel practices.
Humanity has to do better,

Finalize my KFCauliflower recipe after several tries. Love the savory taste with a hint of spiciness from the curry powder.

Ingredients  A for wet batter:
🌱 2-3 tbs Kentucky flour (or ready made frying powder)
🌱 1 tbs Curry powder
🌱 1 tbs Corn starch
🌱 1 tsp Pepper
🌱 2 tsp sugar
🥚 1 Egg or 🌱soy milk for vegan option

Ingredients B for dry batter:
🌱 2 cup of kentucky powder
🌱 1 tbs of curry powder

Steps:
1. Mix ingredients A together to form wet batter and add in cauliflower to marinate
2. Remove the cauliflower from the mixture after an hour and keep the wet batter for frying later
3. Mix ingredients B together 
4. Coat 1 layer of dry batter, follow by one layer of wet batter, then ended with one layer of dry batter again
5. Fry the cauliflower with medium heat until they turn slightly brownish 
6. Remove cauliflower from heat then fry again with high heat until golden brown

I'm sure a lot of you have heard these same remarks. It's a very common refrain when you tell your family, friends, and co-workers that you've adopted this lifestyle.

People see a whole-food, plant-based lifestyle as "extreme", but if they only knew how much they have to gain from giving up (or at the very least, greatly reducing) processed foods and animal products.
.
For me, I gained a life without aches and pains. A life without morbid obesity. A life without a long list of digestive problems. A life without painful autoimmune disease. A life without being covered in painful hives and wishing to die.
.
I may have given up my beloved junk food, but I gained a life filled with so much energy, joy, and vitality. That, to me, is worth a million "Happy Meals".

Happy first swim! Any ideas for fixing his leg? A feed store called and asked us to pick up a duckling with a bum leg (left). We got him a friend, as we mourn the loss of our last chickie ..RIP little one.. he just didn’t have the strength to make it. I feel so responsible for his death, maybe he was lonely.. maybe there was more we could have done. Regardless, we must learn and continue to try. We have tried *many* different braces and splints for this ducky, including leg hobbles, a sling for his foot, a sling for his whole body, wrapping it, a popsicle stick.. a bendy straw... His foot turns in and he kicks his leg backwards.. nothing is yet doing the trick. It may have been caused by a vitamin deficiency. If anyone has any splinting ideas, please leave in the comments or dm! Burrito take two - saute 1/3 bell pepper and 1/4; sweet onion, then add black beans and chorizo seitan or vegetarian crumbles seasoned with salt, pepper, paprika, garlic, and chili powder to taste. Burrito take two - saute 1/3 bell pepper and 1/4; sweet onion, then add black beans and chorizo seitan or vegetarian crumbles seasoned with salt, pepper, paprika, garlic, and chili powder to taste. Add to a warm flour tortilla with spinach or other greens, sour cream, salsa, and shredded Mexican cheese blend. You can use the filling for tacos instead, top with guacamole, omit sour cream, use vegan cheese, etc. No wrong way to make a burrito! #tbt An amazing  interview with Mr. Eric Adams, who is  the Borough President of Brooklyn Borough, the first African-American to hold the position. He's also a highly respected former NYPD officer. 
In 2016, Mr. Adams was diagnosed with Type 2 diabetes. Instead of just taking prescription medications, he sought information about how to reverse the disease. Within a month, he switched to a whole foods plant-based diet and began regular exercise. In 6 months time, he completely transformed himself into a new machine by reversing diabetes. He's one of the biggest proponents of vegan lifestyle and was instrumental in implementing Meatless Mondays at Brooklyn schools.

Buffalo Broccoli & Chickpea pitas with Tahini-Caesar by @dishingouthealth

Ingredients (4 servings):
* 4 to 5 cups broccoli florets
* 1 (15-oz.) can chickpeas, rinsed and drained well
* 2 Tbsp. extra-virgin olive oil
* 1 tsp. kosher salt, divided
* 1 tsp. freshly ground black pepper, divided
* 3 Tbsp. buffalo sauce
* 3 Tbsp. tahini
* 1 Tbsp. fresh lemon juice
* 1 tsp. garlic powder
* 1 tsp. finely chopped capers
* 1 tsp. Dijon mustard
* 4 naans or pitas, warmed
* Optional toppers: sliced red onion, avocado, finely chopped romaine lettuce, fresh cilantro

Directions:
1. Preheat oven to 425°F.
2. Spread broccoli florets and chickpeas on a large rimmed baking sheet. Toss with oil, and ½ tsp. each of the salt and black pepper. Bake for 22 to 25 minutes, tossing once halfway through. Toss with buffalo sauce.
3. While broccoli and chickpeas roast, prepare dressing by combining tahini, lemon juice, garlic powder, capers, mustard, and remaining ½ tsp. salt and black pepper in a bowl. Gradually whisk in 2 to 3 Tbsp. water to achieve desired consistency.
4. To prepare pitas, spread ~1 Tbsp. tahini Caesar dressing evenly on all 4 naans or pitas. Top evenly with buffalo broccoli and chickpeas. Add additional toppings of choice. Drizzle remaining tahini Caesar dressing overtop.
NOTES
Be sure to thoroughly dry chickpeas after rinsing to help them crisp up when roasted.

Last year @ this time, I was working on my comprehensive exam for my Ph.D program. 📝 A big part of my research revolves around ✨mindfulness✨ and in studying it, I found myself becoming more mindful. •

Growing up as an Italian in new yawk, I was a deli diva. 🥪 Meatballs, chicken cutlets, steak pizzaiola; you name it, I’d eat it. 🍖 Until one particularly mindful day, last May, when my mom grilled up one of my favs: a steak pinwheel on the bbq. 🥩 I took a bite, but something was different. It wasn’t the meat, though, it was me. 👩🏼‍🌾

The next day, the same thing happened. This time with a chicken dish. 🍗 My mindful self took it as a sign to listen to my body, and in doing so, my meals became more and more plant centered. 🌿

I like the framing of plant centered vs. plant based- because I am no where near as strict with my eating habits as a vegan (or someone who follows a plant based diet). 🥦 I’m a “sometimes”-terian, with my plates centered around whole grains, fruits, nuts, veggies, legumes + the appearance of an occasional meat product. 🥚🧀🐟

SAVE THE DATE 🖊 🗓 🌱 “Veg Expo 2019 on May 5 in #Vancouver will be the vegan celebration of the year with over 200 vendors, food truck lounge, virtual reality zone and local/international speakers!” Attending the Veg Expo in 2018 was like a warm embrace of possibilities. The atmosphere was welcoming and inclusive; this wasn’t a hardcore Vegans Only clubhouse that we had been slightly worried about. Everyone simply wanted to share something they had created or believed in that also happened to be plant-based. 
Quick, easy and delicious options that wouldn’t tax our brains or wallets? Yes please! The best part - so many of the booths were local companies. As we traversed the large room, up and down aisles of excited faces and happy children in strollers jamming plant-based treats in or around their mouths, we watched the vendors. They bustled around, feeding the crowds, beaming at the feedback and we couldn’t help but feel proud and excited FOR them.

Mylks, gummy vitamins, probiotics, sausages, pates and more stimulated the senses, and local food bloggers and progressive plant-based speakers took the stage and spoke of their individual journeys to living #MeatlessMonday seven days a week.

I was thrilled when @barnsanctuary asked me to be a part of the launch of their new meal planner "Kitchen Companion"!
I've most definitely dubbed myself an honorary part of the Barn family and think that maybe I should just move to Michigan so that I can hug Mike (the blind, cross-country-road-tripping cow) every day. I don't know, guys. I don't know 💁

But anyways, the planner is amazing and so fun! In fact it's so much fun that I got in the kitchen and made my family a dinner other than leftovers, like the good daughter that I am 😏 (second helpings all around, folks. Bow to me 🙌)

I was thrilled when @barnsanctuary asked me to be a part of the launch of their new meal planner "Kitchen Companion"! I've most definitely dubbed myself an honorary part of the Barn family and think that maybe I should just move to Michigan so that I can hug Mike (the blind, cross-country-road-tripping cow) every day. I don't know, guys. I don't know · But anyways, the planner is amazing and so fun! In fact it's so much fun that I got in the kitchen and made my family a dinner other than leftovers, like the good daughter that I am (second helpings all around, folks. Bow to me ) · You can input foods to avoid, portion sizes, cooking times, etc. to choose from thousands of recipes perfect for YOU. All found in one place, so that you don't have to go digging through sites and Pinterest boards (hellllo, time saver) And the planner can even put together grocery lists for you based on your menu. Guys. I am late home tonight after work and the gym. It was quite tempting to opt for a bowl of muesli(!) to be honest, but instead I made this! Hehe.⠀

I sauteed some courgette zoodles and tossed them in a blend of avocado, basil, spinach, garlic, lemon juice and a shot of spirulina @naturesheartsuperfoods and pea protein powder @pulsinhq. Then I added some sliced nectarines for some sweet zingy contrast and a handful of crunch pumpkin seeds.⠀
