I mentioned in my IG stories that I’ve been having really bad GERD issues over the past few months. Food is likely the culprit (besides the steroids I had to take after my anaphylactic episode couple of weeks ago), so I purchased foods that would be easy on the tummy and hopefully won’t give me acid reflux and bloating 😇. 150g (3/4 cup) dried long grain rice
1 and ½ tbsp Cajun seasoning
2 skinless chicken breasts
1 and ½ tbsp olive oil
½ red bell pepper, deseeded and sliced

½ green bell pepper, deseeded and sliced
1 small brown onion, peeled and sliced
Small bunch coriander (cilantro) roughly torn
Zest of 1 lime
1 avocado, peeled, de-stoned and chopped

Slow Cooked Balsamic Pot Roast is perfect for an easy weekday or weekend dinner, WITH THREE DIFFERENT COOKING METHODS! Minimal work and maximum taste!
~
1 tablespoon olive oil
4 pounds (2 kg) chuck roast or blade roast, boneless and trimmed of excess fat
2 yellow onions chopped
8 cloves garlic smashed with the back of a spoon (or 2 tablespoons minced garlic)
1 pound (500 grams) baby potatoes, white or Yukon gold, (you may need to halve them if they are too large)
4 large carrots, cut into 2-inch pieces
2 stalks celery, cut into 1-inch pieces
1 cup reduced-sodium beef broth
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon brown sugar
2 teaspoons dried thyme
1-2 teaspoons vegetable stock powder or bullion powder
1 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2-4 tablespoons cornstarch (optional)
2 tablespoons fresh chopped parsley, to serve
SLOW COOKER:
Heat oil in a large skillet or pan over high heat. Season roast with a good amount of salt and pepper. Sear on all sides until browned (about 4-5 minutes each side). Transfer roast to the bowl of a 6-quart slow cooker.
Add the onions, garlic, potatoes, carrots, celery, broth, vinegar, mustard, brown sugar, thyme, stock powder (or bullion) and salt and pepper to taste. Mix the sauce as much as you can to cover all the ingredients.
Cook on high setting for 4-5 hours, or low for 6 to 8 hours, OR until meat is tender and falling apart, and the vegetables are soft.

Prep for success! Easy way to organize your meal prep ⬇️ Even if you're not making this much food it can be helpful to break it down this way. I usually have 3 main meals (each with a protein, carb + some veggies) with 3 to 4 snacks through the day!⠀⠀

◾Carbohydrates - Have jasmine rice + short grain brown rice, naan bread & apples 🍏 My main carbs for lunches & dinners will be the rice. Have sprouted grain bread also 🍞 for breakfast + the apples ⠀⠀

Chickpea & Spinach stuffed Sweet Potatoes 🌱🔥 Stuffed and baked potatoes are such a popular dinner option, and why wouldn't they be - they're easy, delicious, and perfect for adding your own distinct touch!⠀

Recipe ✨ ⠀
Ingredients:⠀⠀
4 medium sweet potatoes⠀⠀
1-15 ounce can chickpeas⠀⠀
1 tablespoon olive oil⠀⠀
1 teaspoon kosher salt⠀⠀
1/2 teaspoon black pepper plus more for serving⠀⠀
1/2 teaspoon cumin⠀⠀
1 cup baby spinach, roughly chopped⠀⠀
2 tablespoons tahini⠀⠀
Flaky sea salt for serving⠀⠀
Crushed red pepper flakes for serving⠀⠀
⠀⠀
How To Make:⠀
Preheat the oven to 375 degrees F. Prick the sweet potatoes with a fork and roast for 45-55 minutes until they are just tender. Let the sweet potatoes cool for 5-10 minutes before halving them lengthwise and fluffing their flesh with a fork.⠀⠀
While the sweet potatoes are roasting, make the crispy chickpeas. Drain and rinse the chickpeas. Pat them dry with paper towels. Remove any loose outer skins. In a small bowl, toss the chickpeas with 1/2 tablespoon olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and cumin. Spread them in a single layer on a parchment paper-lined sheet pan. Bake for 25 – 35 minutes until crisp and browned, gently shaking the pan about halfway through cooking.⠀⠀
While the sweet potatoes and chickpeas are roasting, heat the remaining olive oil in a large skillet over medium high heat. Sauté the spinach until the leaves start to wilt, about 2 minutes. Add the garlic and remaining salt and pepper, and continue cooking until fragrant, about 1 minute.⠀⠀
Top each of the sweet potato halves with chickpeas and spinach. Drizzle with tahini and sprinkle with flaky sea salt and red pepper flakes before serving. Enjoy!

It’s no secret I’m southern.... and us southerners love some comfort food and all things deep fried. 🥰 So when my mama invited me to Easter lunch after church tomorrow and I asked what veggies we were having I wasn’t surprised that they all ended with casserole. 😂 So along with the ham I’ll be bringing this kale salad with maple vinaigrette so I can make healthier choices. Don’t worry y’all.... I’ll still have a little sample of the other decadent things too but my plate will mainly be veggies and protein cause I like to be prepared! 🙌🏼

Hi friends, it’s been awhile! I’ve been MIA on this account for a few reasons:

1) Every time I signed in my @instagram app crashed (as of today I am the proud owner of a new Iphone XS 🙌🏼📱)
.
2) I applied to and started grad school at @syracuseu through their online program (yay student loans 💸)
.
3) I was diagnosed with hip labral tears (and will need surgery 😬) but happy that pain that started over a year ago finally has an answer!
.
4) Celebrated @dave_315 and his company for hitting their sales goals in Punta Cana 😎

Life has been insanely hectic, but happy to finally be back on here knowing my account isn’t going to crash every 5 seconds 🤗

I love planning out my snacks for the week! It helps keep me feeling energized throughout the work day.  The beauty of planning ahead with your food is to make sure you are getting high quality and nutrient dense foods with enough protein to keep you full + satisfied. Bonus: you usually end up with more volume than the LEFT side!

While a store muffin can be a delicious option, they are often filled with unnecessary ingredients (I'm team #homemade!) and can cause spikes and crashes in blood sugar levels-making you feel less energized. Oye!

Keeping lots of fruits, veggies, eggs, greek yogurt, and other nutrient-dense options stocked at home can change your snacking game & help you feel full+ energized between meals!

I think if @aldiusa was a person, we’d be best friends... First things first, one thing I promised Marcel I would do while he was gone is stay focused & committed to my goals & keep myself busy (he knows I thrive best on routine & consistency 🙌🏼 which makes a better Amanda through & through) so instead of being sad all day & wimping around- I put myself into action. .
I could meal plan in my sleep (it’s actually something I’m pretty proud of) so I knew grocery shopping would be colorful & fresh today but affordable was not one of the top things that came to mind! I often forget how much top notch food I can pack into a cart there & leave feeling like it was a super successful trip that DIDN’T break the bank!

Recipe ✨⠀
Falafels:⠀
1/4 cup gluten-free large flake oats⠀
1/2 cup fresh parsley⠀
6 cloves garlic⠀
1 small onion⠀
1 large can (400g) chickpeas (strained and rinsed)⠀
2 tbsp nutritional yeast⠀
2 tbsp tahini⠀
1/2 lemon, juiced⠀
1 tbsp olive oil⠀
1/2 tsp ground cumin⠀
1/2 tsp ground coriander⠀
1/4 tsp ground cardamom⠀
1/2 tsp sea salt⠀
1/4 tsp pepper⠀
pinch cayenne pepper, or to taste⠀
2 tbsp extra virgin olive oil (for painting)⠀

1. In your food processor add oats, pulse into a flour. Remove from food processor and place to the side.⠀
2. Add parsley, garlic and onion to food processor. Pulse until finely chopped. Then add oat flour, chickpeas, nutritional yeast, tahini, lemon juice, olive oil, cumin, coriander, cardamom, salt, pepper and a pinch cayenne pepper. Pulse until it becomes a crumbly dough-like texture. Transfer falafel dough to mixing bowl. ⠀
3. Preheat oven to 375F/190C. Line a baking tray with parchment paper and scoop rounded tablespoon amounts of falafel dough onto paper. Gently form balls. (I used an ice cream scoop to do this.) 4. Paint falafels with a bit of olive oil and bake for 15-20 minutes, or until golden in colour.
