But, hot pockets were all the rage when I was a kid, so I had to recreate a version that I felt was safe to eat but just as delicious. Happy 🌎 Day! I thought I’d take this chance to share my top 5 favorite tips for taking care of this earth. Are any of these new to you? Any you love that I missed?

1. Reduce your trash. Look into the recycling and composting options that may already be available through your city. Meal plan carefully to reduce food waste. The average American produces over 4 pounds of trash per DAY.
⠀⠀
2. Reduce/eliminate single use plastics. We gave up straws a long time ago and replaced grocery/produce bags with reusable ones. I still use bags for scooping 🐈litter but changed my system to drastically reduce the number of bags I use. ⠀⠀
3. Use cruise control anytime it’s safe (not dark or slippery). You’re less consistent than you think - cruise control improves your mileage by 15%. ⠀⠀
4. Shop local and/or secondhand to reduce excess packaging and pollution that comes from transporting things. ⠀⠀
5. Use paper matches(made from recycled paper) instead of lighters (plastic and butane) or wood matches (trees).

Sweet Potato Fries & Hummus is a failsafe healthy snack! 🌱 ⠀

Sweet potatoes fries sliced and tossed in 1 tsp each of smoked paprika + garlic powder and baked for 25 minutes at 450 F. Served with garlic hummus, which can be made by blending 1 can of drained + rinsed chickpeas, 3 tbsp tahini, the juice of 1 lemon, 1 large cloves of garlic, 1/2 tsp salt + 1/4 cup of water or olive oil (plus more as needed). Enjoy!

This weeks meal prep❤️
Meal one: curried chickpeas with courgette, spinach and pearl barley.
Meal two: carrot and lentil soup.
Meal three: spiced chickpeas and black beans with mixed steam vegetables.
For snacks I have:
High protein yoghurts in strawberry and passion fruit flavour, mixed fresh fruit box with blueberries, strawberries and banana and rice cakes.
•As much as I love cooking, sometimes it’s the simple meals that I crave and this week was one of them!

🍗Not enough PROTEIN: Without adequate protein (around .7-1.3g per lb of bodyweight) your body will be unable to repair the muscle you break down during your workouts.

#mealplanning for the week. I meant to post last night but my shift went way longer than expected 🥵 Again I’m trying to use up what I have on hand, so I’m making a #grocerylist as I go. I have my curry tonight again at work and hopefully can resist the cafeteria! Then shopping day tomorrow. Day 29: the penultimate day of my #30daystohealthy plan and I’m pleased with the progress I’ve made. Today was a little less structured than I would’ve liked. I ate when I was hungry and so probably ate too much, but my choices were OK and I didn’t get too carried away. I’ve been busy getting things done and not as tired as I used to feel, so that’s a huge positive to focus on. I walked to the supermarket today to make sure I got outdoors and got some exercise. I always feel better when I’ve spent time outdoors and being active.

The intent of this post is NOT to say that any of these 2 options are better/worse than the other. I’m not trying to promote “diet-culture” or anything like that, actually I’m doing the opposite. This is just a topic that I personally struggled with & so I’m simply sharing my own experiences 😊👍

One of the big things that “I am not about” is the whole thing of saying “eat this” “not that” because this is “ clean ” and this is “guilty” and this is “guilt free” and this is “dirty” or any of those UNDEFINABLE words. Basically placing restrictions on yourself based on made up beliefs. I don’t wanna raz anyone using those words because they can be used in the right context where it makes sense. 2. You are just guessing that you are eating the right amount of food (according to your goal) without actually knowing.

Does that mean you should weigh out/ track everything you eat?.. no not necessarily, but levelling up your knowledge about calories will put you in a place where you can easier control your progress without putting restrictions on yourself. I get the whole intuitive eating trend and I’m all for it (I eat pretty intuitively myself) but there is a difference between counting calories tediously vs leveling up ur knowledge about cals/macros and by doing so u’ll be in a better position to make choices that bring u towards your goals .! I’m not trying to promote “diet-culture” or anything like that, actually I’m doing the opposite. Moffett's Menus for the week:  Preparing your weekly menu can be challenging, but if you plan ahead it gets easier the more you do it. 
I can't share with you the secret Mother-N-Law's shrimp gumbo, but I will share with you the sausage spaghetti recipe from sister-n-law. 
This is an easy go to weeknight meal everyone will love. 🍝
Sausage Spaghetti
By Aunt Debbie
Doctored up by Me ▪️2 pk of chapel hill sausage link sliced
▪️½ a onion cut up small -diced
▪️3 cloves of garlic -crushed
▪️3 cans of tomato paste
▪️5 cans of water (tomato paste can) may have to add more if need to be thinner in consistency
▪️2 tsp of Italian seasoning
▪️1 tsp marjoram ▪️½ tsp salt
▪️½ tsp pepper
▪️3 TBS of sugar or honey or other sweetener (cuts the bitter from the tomato paste)
▪️1 12-15 oz package of spaghetti (cook per package)
▪️Low carb days I eat mine over spaghetti squash

Place cut up onion, crushed garlic and sausage in large soup pot.  Brown sausage with onion and garlic.  Drain grease if a lot.  I usually do not. 
Add tomato paste, water and seasoning plus sweetener of choice.  Mix well and simmer while spaghetti cooks.  10-15 minutes. 
Serve over spaghetti. 
Serving size 10- My Fitness Pal recipe nutritional facts: Carbohydrates 32g, Protein 20.5g, Fat 16.4g,  calories with spaghetti 355

I cook a spaghetti squash for low carb days. Cut the spaghetti squash in half.  Place with flesh part down in a shallow baking pan with water about 1/4 inch up  covering the bottom of the pan.  Cook at 400 degrees for about 30 minutes.  Carefully remove from oven.  Spoon out seeds and shred with fork. Sweet and tasty. .

It's strawberry season again! 🎉🎉🎉I love them raw but I decided to stew this batch just for fun. I add don't add any sweeteners but you can definitely adjust this to your taste buds by adding sugar, agave, maple syrup or even honey. 
I use them to top my morning oatmeal, to make yogurt parfaits or on top a slice of cake.

Studying in the sunshine. ☀️

Spending every second of free time that I have over the next few days studying since I have an oral exam on Wednesday (which is the last BIG assignment of my 5th semester as a PhD student!). 🤓 Definitely not missing out on the beautiful Midwest spring weather even though I’m hitting the books - especially with today being #earthday! Solution? Bringing the books outside. 🌳📚 Study snacks are a must and the @madeinnature figgy pops mocha almond supersnacks are the perfect popable bite. If anyone needs me, I’ll be in a hammock reading about validity and reliability.

This is my one of my favorite salads so I wanted to make it even healthier! I swapped out the turkey and salami for chicken breast. CPK uses half romaine and half iceberg lettuce but I chose red cabbage since it has more nutrients! I also used low fat mozzarella cheese 💥

🇨🇿 na zítra k obědu a večeři (a na dva dny k tomu 😁)taco papriky...trochu low carb po svátkách 
A teď trochu z jiného soudku...klienti se ptají často na to, jak zhubnout zda je lepší začít makat 6x v týdnu v posilce nebo být v obřím dietním nastavení...NEEXISTUJE ALE JEDNODUCHÁ ODPOVĚĎ. Vše je o kalorickém deficitu. To jak si ten deficit (tzn kalorický výdej je větší než příjem) uděláte je na vás- zda budete každý den dávat hodinové kardio nebo nastavíte hodně velkou restrikci. Pro mě je to něco mezi obojím- zlatá střední cesta. Ale určitě je důležité vědět kolik toho sním (příjem) a pár týdnů si jídlo vážit a počítat (např přes kaloricketabulky nebo yazio). Pokud si myslíte, že to dáte bez toho jen díky poslouchání těla či “selskému” rozumu, mám špatnou zprávu- většina lidí to NEDÁ. Pokud jste doteď nevěděli, kolik za den přijmete, jak poslouchání vašeho těla tomu teď pomůže? Doteď jste ho také přeci poslouchali- mám hlad, mám chuť...-pokud mi klient řekne, že jí racionálně, po sepsání jeho denního jídelníčku u 99% zjistím, že tomu tak není. Lidké tělo je nastaveno pro přibírání tuku do zásob pro období hladomoru, toť evoluce. Dnešní nadbytek je ještě stále něco, na co se náš organismus ještě nepřizpůsobil (pestré chutě, nadbytek, nadměrný příjem kcal, moderní stres a další faktory). Pokud jako obezní člověk posloucháte své tělo, co uděláte? Dáte si tu čokoládu/McDonalds atd. Je to stejné jako u závislého člověka. PÁR TÝDNŮ VÁŽENÍ POTRAVIN A POČÍTÁNÍ KCAL NIKOHO NEZABIJE A HODNĚ POMŮŽE. Musíte se totiž naučit poslouchat místo těla rozum a opravdu se naučit pracovat s jídlem, ať nejste jeho otrok jak z jedné (neustálé počítání a vážení), tak druhé strany (nadměrné jezení).
