Hey friends🙋🏽‍♀️ you don’t have to miss out on bbq if your vegan or vegetarian, try Grilled Tofu and Veggies Tikka. It’s smoky, spicy, dip it in fresh mint & cilantro chutney trust me it’s the best thing ever. Recipe follows. For step by step images see stories. 
14 oz block organic extra firm tofu @housefoodsamerica , cut into 1 1/2 inch cubes
3 tablespoons avocado or Any neutral Oil
1 teaspoon Garlic Paste about 4 cloves
1 teaspoon Ginger Paste, about 2 inches
1/2 cup Greek Yogurt or (plant yogurt+ 1 teaspoon lemon juice)
2 teaspoons Sweet Paprika or any bright mild red chili powder
 1/2 teaspoon cayenne pepper or hot red chilli powder
1 tablespoon ground Coriander
1 teaspoon Chaat Masala Powder (available at Asian/Indian grocery stores or online)
1/2 teaspoon Garam Masala, Ground
Salt to taste
Mix all the ingredients into a bowl and add protein of your choice. Mix well in the marinade till the tofu is coated well. Cover and set aside for a minimum of half an hour or up to two hours.
Pre-heat oven to 220 C/ 430 F 10 minutes. Lift the tofu and place it on a greased baking sheet.
Place it in the oven and bake for 10-15 minutes. Turning once half way. After 15 minutes, switch to high broil setting and broil for 2-3 minutes till the tofu has a slight char on the surface.
Carefully remove the pan and let it rest for 5 minutes before you serve with naan or on a salad.
 Garnish with chopped coriander and squeeze lime juice.

Creamy, cold, and extra coconuty! This paleo Coconut Ice Cream is here and ready for summer! It all starts with a 2 ingredient ice cream (which can be made without an ice cream machine!) Then top that with a 3 ingredient magic shell that brings back some serious childhood memories, and a scattering of sprinkles for the ultimate healthy warm weather treat! Here's how to make it:

3 cups Let's Do Organic Coconut Cream by @edwardandsons
1/2 cup + 2 teaspoons honey, divided
2 tablespoons Native Forrest Coconut Oil by @edwardandsons
1/4 cup raw cacao powder
A handful of Let's Do Organic Sprinkles by @edwardandsons

Directions:
Add the coconut cream and 1/2 cup of the honey to a blender and blend until smooth. Pour into a freezer safe dish and place in the freezer. Stir every 30 minutes until the ice cream starts to firm up.

Simply steamed snap peas & pan fried halloumi cheese. Snaps tossed in a generous amount of salt, lemon juice, olive oil and pepper then sprinkled with watercress but mint would’ve been better. The almost caramel like richness of the cheese pairs so well with zesty greens 🙌🏼

15 Minute Avocado Caprese Chicken Salad❤️🥗 -

Since it’s bikini 👙 season, salads seem to become the meal of choice. This Avocado Caprese Chicken Salad may be my new favorite!

The best part about this Caprese Salad is it takes only 15 minutes to make, and most of that is the cook time for the chicken🐓 ➖➖➖➖ Directions:
-

To make the balsamic dressing: in a small bowl, mix garlic, dry basil, dijon mustard, lemon juice, balsamic vinegar, salt, and pepper. Slowly add in olive oil, whisking the entire time until there is no more oil & vinegar separation. Set aside.
- 
Heat grill to medium high heat. Add seasoned chicken breast to grill and cook for 5-6 minutes per side until there is no more pink.

In a large bowl add spring mix, avocado, cherry tomatoes, fresh basil, fresh mozzarella balls, and sliced grilled chicken.

Serve with balsamic vinaigrette. ➖➖➖➖ Ingredients: -

1 boneless skinless chicken breast

Calling all the coffee fans here🍪☕️😍🤗😋
We made glutenfree mocha- chocolate cookies 🍪 it’s a super easy recipe but totally hit the spot and a super treat😋
What you need: 
1 can of kidney beans
100g oats blended into flour
50g coconut sugar 
50g rice malt syrup 
100g dates
10g cacao
1tsp baking powder
1 egg
50ml Espresso 
A splash of almond milk if needed
Just mix all ingredients together and blend. Preheat the oven at 350*F/180*C. Scoop the batter with a spoon on a baking sheet and bake for about 12 minutes😋😋🍪
Macros per cookie (made about 18): 2.2g protein, 13g carbs, 0.8g fat. 73 kcal.

it is so intimidating being back at school and trying to navigate the budget-friendly, healthy eating waters but the key that i have found is simplicity. 
i try to focus on plants, incorporate one quality, high protein source a day, and listen to my body cues and not what society says (ex. no diet trends, expensive products, or a plethora of supplements)

Savory Everything Bagel Waffle with “Cheesy” Scrambled Eggs, Avocado, and Pickled Red Onion. Made the waffles using the @birchbenders paleo mix and just mixed in the Trader Joe’s Everything But The Bagel Seasoning. Scrambled eggs are made with @miyokoscreamery vegan mozzarella. Topped it all off with more bagel seasoning of course.

My waffle iron has been one of my favorite purchases. I probably got it for 30 bucks on Amazon, and I’ve used it way more than I ever thought I would, especially because I love making waffles out of veggies like sweet potato and zucchini!
