Pesto Chicken Salad
Keep this idea in the back of your mind the next time lunchmeat doesn’t look/sound good but you still want easy lunches for the week - grab some pesto, plain Greek yogurt & a rotisserie chicken (or 2 chicken breasts) & you’ve got a fantastic spread for sandwiches or throw it over lettuce & make it a salad, either way EASY LUNCH!! 🏻 Just 3 Ingredients-
2-3tbsp plain Greek yogurt
4 cups shredded chicken (1 rotisserie or 3 boneless/skinless chicken breasts)** Place shredded chicken in a large bowl & add pesto. Stir until thoroughly mixed. Then add Greek yogurt, about 1tbsp at a time, stirring frequently, until it’s at your desirable taste & texture preference*** Then you just need good bread, lettuce, tomatoes, mozzarella & you’re set!
Yields ~ 4 generous portions for sandwiches or salads *if you’re purchasing the pesto instead of making it, buy the refrigerated kind NOT the jarred
**if cooking your own chicken, just drizzle chicken breasts in olive oil & sprinkle w/salt & pepper then bake 350x 25-30min or until internal thermometer reads 165+
***I worked at an Italian restaurant in college that added cream to their pesto & thought it was delicious! Sometimes I find pesto can be too oily, but the cream cuts that & balances everything nicely. I love adding a touch of plain Greek yogurt (usually nonfat) to help offset the oil but still keep things healthy & light. - 1 hour ago
