Today's Recipe: Spicy Mexican Tuna Cakes!! 😍

Let's COOK 👇⁣ Approx Macros per 1 - Makes 4
Calories: 150
Fat 11g
Protein 7g
4g NET CARBS 💖 INSTRUCTION 💖 ---
1️⃣ To a large bowl add the drained tuna, egg, cilantro, onion, yogurt or mayo, almond flour, jalapeno, lemon or lime juice, garlic powder, cumin, and a generous sprinkle of salt and pepper. Mix with a fork until fully combined. Shape mixture into 6-8 patties.

2️⃣ Heat oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side. Serve with a side of avocado salad, in a sandwich, on a bed of greens or with a side of veggies. Drizzle with sriracha aioli if desired. 
3️⃣ To make cilantro aioli: whisk Greek yogurt or mayo, sriracha, and lime juice until combined.

Dinner tonight is chicken enchilada casserole. I used @crepini_healthywraps egg thins, diced chicken breast, @fronterafoods enchilada sauce, and plenty of shredded cheese. I layered everything in a pan and cooked it at 350 degrees for about 35 minutes, until it was bubbly and golden brown. I served it with a little bit of sour cream on top. The family always loves this one and it’s so easy to make!!!

💪 Introducing @shrinking_tori⁣ : 15 months ago I decided that I wasn’t going to fail (again). 15 months ago I realized that I was in control and that I COULD CHANGE. In 15 months I’ve lost 135lbs..I never expected to have extreme weight loss in such a short period of time..most of the time I still can’t believe this is real. You can do this too. DEDICATE YOURSELF TO THE LIFESTYLE. It’s a marathon, not a sprint. Work hard every day and eventually you’ll end up where you want to be. Strictly Keto, no legit exercise (because I’m still lazy..ugh.) Goals for this year: wear a bikini, do a cartwheel and start moving! .⁣

Not every meal is a composed masterpiece. This was intended to be a caesar salad with buffalo chicken...pulled out my lettuce and it was moldy...yuck! Went to plan B...grilled the chicken, steamed some broccoli, added ample amount of parmesan cheese, and the result?...low carb deliciousness!!! The best part is I have left overs for tomorrow 👍

Went from “ugh we have food that’s going bad” to “Dinner is served!” •Split two thick chicken breasts in half and seasoned them with S&P, Garlic powder, basil, minced onion, and oregano
•Placed in medium/hot pan with EVOO for 2.30 each side then put to the side and put heat to medium/low
Added the rest of my sugar free sauce (I didn’t measure) and warmed the chicken in the sauce •cooked frozen cauliflower rice and broccoli on the side... No big steps there
•After sauce was warmed through added mozzarella, covered, let melt •Placed chicken in oven to broil mozzarella and VOILA

This is a great salad to have as a lunch or dinner OR to have as a side salad if you’re hosting guests - especially in the summer! ☀️

Made this salad with that good old formula 🤩👉🏼
🥒 2 cups veg (1 cucumber, chopped and 1 cup cherry tomatoes, halved)
🧀 4-5 oz protein (1/3 cup shaved Parmesan)
🥑 100-200 calories of fats (1/2 avocado)

Added 1 cup corn 🌽 kernels (these were canned but fresh from a cob or from frozen also work well!) as my #1starchPerDay and dashes of salt, pepper, basil & oregano. You can also definitely add a vinaigrette if you like although it’s not necessary! I recommend vinaigrettes that are less than 50 calories per 2 Tbsp

Spicy Zucchini Pizza Boats 🌡🍕🌶 .

makes 6 servings

Ingredients:
6 medium zucchini, cut in half lengthways
sea salt 
2 Tbsps olive oil, or avocado oil 
1 cup favorite natural marinara sauce
2 tsps garlic salt, or to taste 
1 tsp freshly ground black pepper, to taste
1.5 cups shredded mozzarella cheese
nitrate free, natural pepperoni slices to taste 
2-3 jalapeño peppers, thinly sliced

Optional:
red pepper flakes 
fresh Italian herbs such as basil or oregano, chopped 
Instructions:

Preheat your oven to 400 degrees f. and line a large, flat rimmed baking sheet with parchment paper.

Arrange zucchinis cut side up on the prepared baking sheet. If you would like to slightly scoop out the seeds with a spoon, you can. Sometimes I do this step, other times I don't.

Sprinkle cut zucchinis very lightly with sea salt, then roast in your preheated oven for about 8 minutes.

Remove zucchini from oven, then allow to cool for just a minute until easier to handle.

Using a paper towel, mop up the excess moisture coming off the zucchini, as this will help A LOT because zucchini naturally contain a lot of water and the heat + salt draws it out!

Rub zucchini evenly with oil, then spoon down the center lightly with marinara sauce, then lightly sprinkle each with garlic salt, fresh ground pepper and shredded mozzarella.

Top with pepperoni and jalapeño slices. Roast in your preheated oven for 8 minutes or so, or until your zucchini is fork tender and the cheese is perfectly melty.

Sprinkle with red pepper flakes for extra SPICE, or fresh herbs if you got em!

Serve warm and enjoy!

{NEW} Shrimp Cauliflower Fried Rice 🍤🌱
Our Meal Prep game is STRONG today 💪
This makes for a really delicious, satisfying quick, one pan meal to eat immediately; but this is also one of our favorites for meal prep!

You can use pre cut cauliflower rice to make this even quicker...it's found every where these days.
My 2 favorites are Trader Joe's brand and the big frozen bags found at Costco.

makes about 4 servings

Ingredients:
1 small cauliflower head, broken into florets
1 lb. raw shrimp, peeled and deveined
1 Tbsp olive oil or avocado oil 
2 medium zucchini, cut into bite sized pieces
1 red bell pepper, diced
1 yellow bell pepper, diced
2 Tbsps coconut aminos, Bragg's liquid aminos, or low sodium soy sauce 
1 tsp garlic salt
1 tsp ginger powder
1 Tbsp sesame seeds

Instructions:
Place cauliflower florets in a food processor and pulse until broken into rice-sized pieces. Do not over-pulse, or you’ll turn it to mush.

Heat oil in a large skillet or wok over medium-high heat. Add in shrimp, garlic salt and ginger powder, then stir fry for about 2 minutes. 
The shrimp doesn't have to be entirely cooked through at this point.

Next, stir in the veggies and cauliflower rice and stir fry for additional 4 minutes, or until tender. Add in coconut aminos, and cook stirring constantly until most of the liquid has reduced; just a few minutes more.

Remove from heat and sprinkle with sesame seeds.

Enjoy immediately, OR:
You can divide your shrimp cauliflower rice equally among 4 airtight containers and refrigerate for up to 4 days. 
Reheat it just before serving and enjoy!

Keeping it ridiculously simple this week (even more so than last week) cause I’m feeling hella lazy.
☕️ Breakfast—#ProteinCoffee and grapefruit (back to the OG)
🥪 Lunch—Ham and swiss sandwich on 45 calorie @saraleebread with 1 tablespoon of #avocado mayo to give it a little somethin’ somethin’.
🍗 Dinner—Parmesan-crusted chicken breast I found @myKingSoopers with broccoli florets and a little @tostitos cheese sauce to top it with.
🥗 Snack—My favorite sunflower crunch salad from Dole and 1 oz. of cheddar veggie straws.
🍬 Dessert—@eatsmartsweets.

Ingredients:
makes about 4 servings
1.5 lb. raw shrimp, peeled and deveined
2 tsp ground cumin
1 tsp smoked paprika
2 cloves fresh garlic, minced
2 Tbsp avocado oil, or extra-virgin olive oil, divided in half
sea salt and fresh ground black pepper
freshly ground black pepper
2 fresh limes
a handful of fresh cilantro leaves, chopped
8-10 romaine or butter lettuce leaves, rinsed and pat dried
1 large avocado, diced
1 red chili, thinly sliced

Instructions:
In a large glass bowl, add shrimp, all seasonings, juice of 1 lime, garlic, and 1 Tablespoon of oil.

Season with sea salt and pepper to your taste, then stir well to coat.
If time allows, refrigerate/marinate for 15 minutes or so, covered.

Heat oil in a large skillet over medium heat. Add shrimp and cook until just pink, about 3-4 minutes

In a very large bowl add cooked shrimp, diced avocado, cilantro, chili slices, juice of 1 lime and remaining oil.
Gently stir to combine.
Taste test and season with a pinch of sea salt and pepper of needed.

Add spoonfuls of the avocado shrimp mixture lettuce leaves as shown, and enjoy. .

I got a mini cheesecake pan this weekend and had to put it to use ASAP, so I made @baketobefit pumpkin cheesecake with sugar cookie crust and omg🤤 so good! This was actually the first lowcarb cheesecake I’ve made and it didn’t disappoint! It was worth baking in my 90degree kitchen 🔥😂 and the ingredients I used/way I cut it made mine ~2.8 carbs per slice.

Can I tell you just how much I loved this dinner!?! 😍 My hubby grilled the chops and it took just a few minutes to throw the cucumber salad together. While that sat, I lightly coated the spiralized butternut squash in bacon fat and air fried until crispy. AH-MAZING! Just because I like to make sure I disclose everything, butternut squash is one of those veggies you should limit on keto. My 1/4 cup serving pictured was about 4 net carbs. Air fried daikon radishes — you guys voted for it, so here’s the recipe. (I made a small batch of this to test it out, but I’ll share anyways. Next time I’ll post a how to in my highlights 🤗

. - 1 lb of daikon radish (washed thoroughly & peeled) - You can cut them into a fry shape, but I like them cut in circles (you do you boo)
- season with salt & pepper - spray some olive oil or avocado oil - place in your air fryer at 375 for 18 minutes. (At 9 minutes you can flip + shake them & leave for another 9 minutes) - if you like them more crispier, add a few more minutes - enjoy!! 🙌🏼 _____________

Happy #transformationtuesday y’all! On the left was before I began a keto lifestyle and on the right was taken Friday evening. I’ve lost over 90 pounds on keto and plan to continue my journey, making small steps each day. It started with simply cutting out the carbohydrates I was getting from pastas, breads, and sugary treats. It didn’t happen overnight and some days can certainly be a struggle. However, I wouldn’t change anything about the journey and firmly believe that if I can do it, so can you!

My clients are super busy babes so I’m always looking to provide them with simple ways to throw together a meal in 10 minute or less ⏰ that way they can stay on plan with their weight loss goals!⠀

I know protein can be the most time consuming part of making a meal but it is so important to consume at least 20 grams of protein with a meal for weight loss to stay full, prevent cravings and keep that metabolism up!

I teach my clients how to save time during the week so they can easily lose those 15 pounds 😉 A simple tip is to buy frozen pre cooked proteins like shrimp that makes throwing together low carb meals that much easier 🙃⠀⠀

Directions:⠀
💫 Take 8 pre cooked shrimp out of the freezer and set aside in a bowl of water to defrost.⠀
💫 While the shrimp are defrosting dice 1 celery stick and 1/3 small white onion.⠀
💫 Cut off the top off your bell pepper and take out the seeds.
💫 When shrimp is defrosted (keep an eye on it, it takes pretty quick) chop them into small pieces.⠀
💫 Combine shrimp, celery, onion, 1 Tbsp. Mayo (I love @primalkitchenfoods ) and a squeeze of lemon and stuff into pepper! Enjoy 😘 ⠀

Hands up for this delicious 10 min meal 🏼🤩 ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ My clients are super busy babes so I’m always looking to provide them with simple ways to throw together a meal in 10 minute or less that way they can stay on plan with their weight loss goals!⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I know protein can be the most time consuming part of making a meal but it is so important to consume at least 20 grams of protein with a meal for weight loss to stay full, prevent cravings and keep that metabolism up! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I teach my clients how to save time during the week so they can easily lose those 15 pounds A simple tip is to buy frozen pre cooked proteins like shrimp that makes throwing together low carb meals that much easier 🙃⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Directions:⠀ Take 8 pre cooked shrimp out of the freezer and set aside in a bowl of water to defrost.⠀ While the shrimp are defrosting dice 1 celery stick and 1/3 small white onion.⠀ Cut off the top off your bell pepper and take out the seeds. When shrimp is defrosted (keep an eye on it, it takes pretty quick) chop them into small pieces.⠀ Combine shrimp, celery, onion, 1 Tbsp. Mayo (I love @primalkitchenfoods ) and a squeeze of lemon and stuff into pepper!
