PUNJABI SIDE DISH JUST FAT EGGPLANT ONION GREEN CHILI RED CHILI GINGER GARLIC TOMATO MASHED ROAST STIR-FRY
BAIGAN da BHARTA - is a classic Punjabi/ North Indian dish. BAIGAN (other names : Eggplant, Aubergine, Brinjal, Vangi etc. etc.) is Roasted over an Open Flame, Grilled or Baked in an Oven ; but it must be charred from outside – black & flaky for best smoky flavor. BHARTA in Hindi means ‘mashed’.
BAIGAN da BHARTA is a delicious, spicy & tangy dish. Generally served along with a flatbread & Daal. Also, Tastes better when any one of the following : - yoghurt, green peas, cream, lemon juice OR even eggs is added to this dish.
The recipe is almost similar in all states of India. The variations change the flavor. Each & every variation is enjoyable.
Lastly, you can see that I have sliced the onion & haven’t finely chopped it. Also, I have used the traditional recipe without using any optional ingredients. It still is heavenly, no deviation in taste from the traditional dish.
