Another MEAL PREP MONDAY for all of ya!!

Kept it nice and simple this week with minimal cooking because I was just not feeling it yesterday in the kitchen... so here’s what’s on the menu this week!
.
I’ve got roasted Brussels sprouts in @bragglivefoodproducts , spaghetti squash roasted in @primalkitchenfoods honey mustard dressing , steamed asparagus, zucchini noodles, a dairy free rotisserie chicken salad made with @kitehillfoods Greek yogurt and  some maple mustard tempeh inspired by @eatingbirdfood .

So today I’m going blueberry picking and I’m sooo EXCITED!!! My cherries are all gone and strawberry season is over so now it’s time for those BLUEBERRIES!!!!

#nosugaradded 3 Ingredient Grape Jelly

2 cups red grapes
1/4 cup water
2 Tbsp chia seeds
•

Place grapes into a saucepan and pour the water in. Let it come to a boil, about 5-7 min. over medium heat. Let simmer covered, on low for about 30 min. Add in the chia seeds and let cool. Once cooled completely, place into the fridge for a few hours. The chia seeds will allow the mixture to become gelatinous.
Makes 1 1/3 cup jelly. Who’s ready for a classic PB&J without the fructose, corn syrup and chemicals?! 🍇🥜

We cooked my Pulled Pork again tonight. It’s a no fail recipe as I’ve cooked it 7 times now and every time it is spectacular. Leftovers are being used in a green salad tomorrow for lunch. I love cooking a big dinner for that reason: Lunch is ready too! .
