Naan Bread Pizzas With Hidden Veggies
Yay it's nearly Friday and Easter! These naan bread pizzas are great for whole family for a quick and easy lunch or dinner. Much healthier than take out pizzas.
The sauce has THREE 'hidden' veggies in, while my toddler thinks she's eating a cheese and tomato pizza little does she know she's eating red onions, mushrooms and peppers
The sauce is easy to make and the whole family will enjoy. You can add a different combination if veg if you like. Also feel free to add more veg as toppings for your bambinos if they won't pick them out. For adults you can add more toppings and jalapenos for an added kick. -
I used garlic naan bread as the pizza base but you can use pitta breads, ready made pizza bases or even make your own pizza dough at home. The sauce csn be frozen too and it's very versatile as you can add to pasta as well.
The following ingredients made enough sauce for three large naan breads: ️ 60g red onion, chopped
️ 80g mushrooms, chopped
️ 60g red bell pepper, chopped
️ 7 oz (1/2 a can) no salt added diced tomatoes ️ 2-3 large cloves garlic, grated or crushed
️ 3 tbsp olive oil
️ 1/4 tsp dried oregano ️ 1/2 tsp dried basil
️ couple of twists of black pepper
1️⃣ Set a medium sized pan over a medium heat and heat the olive oil.
2️⃣ Once the oil is hot add the onion and red pepper and saute until soft.
3️⃣ Next add in the mushrooms and garlic and saute until cooked, stirring frequently to prevent sticking.
4️⃣ Add in the tomatoes, black pepper and herbs, mix well and simmer on a low heat for 5 minutes.
6️⃣ Blitz using a hand held blender or compact blender.
7️⃣ Spread the sauce on your naan bread and top with cheese (I used grated cheddar and sliced mozarella)
8️⃣ Add any additional toppings (optional)
9️⃣ Place on a baking tray and grill on medium to high until the cheese is melted and golden and serve. -
