Makes 6 servings

Per serving
1 Leaner protein
3 greens 
2 condiments •  1 pound chicken breasts, skinless, boneless, cut into chunks
•  12 ounces  Jennie-O turkey sausagehttp://www.jennieo.com/products/76-lean-sweet-italian-turkey-sausage •  1 can diced tomatoes, 28 ounces
•  1 cup leeks, chopped
•  1 red bell pepper, finely chopped
•  1 cup celery, thinly sliced
•  2 cups chicken broth
•  ½ teaspoon dried thyme
•  2 teaspoons dried oregano
•  1 tablespoon Cajun seasoning
•  ½ teaspoon cayenne pepper
•  18 ounces shrimp (13-15 count)

Add all the ingredients except the shrimp into the slow cooker and stir.
Cook on low for 7-8 hours on low (high for 3-4 hours), in the last 15 minutes add in the shrimp. 
3.  Serve over 1/2 cup riced cauliflower.

Tacos de pollo a la plancheta! 
Simple y super rápido 😉

Primero los vegetales, cebolla y morrón si es de los tres colores mucho mejor.
Pechugas cortadas maceradas una o dos horas antes en curry, pimienta, comino, aceite de oliva, sal y salsa de soja.
Cuando ya está tierno el salteado de vegetales agregar el pollo y mezclas bien.
Listo a disfrutar!!! Como no conseguí paltas para el guacamole, los tacos los preparé con chutney de cebolla morada y humus de garbanzo.

Grilled shrimp on zucchini noodles with avocado dressing. Been having a little too much fun with my vegetable spiralizer lately.

Avocado dressing-
Blend:
1 ripe avocado
Juice of 1 lime 
1 green onion+ basil leaves 
1 tsp Greek yogurt 
Salt+pepper 
Add a little bit more lime juice or water for desired consistency

What is everyone cooking tonight?

GREEK CHICKEN & POTATOES
🍗This is such a delicious, nutritious meal and it’s so EASY
🍋Marinade consists of equal parts olive oil and lemon juice plus 1/2-1 tsp. dried oregano plus salt and pepper to taste
🥔Marinate the chicken breasts for 30 minutes prior to baking
🍋Bake chicken breasts in oven at ~350 degrees for about 15-20 minutes or until cooked through (I cut the breasts in half so they would cook faster and more evenly)
🍗If you’d like, brown them on the stove in a pan before you bake them in the oven (adjust cooking time as needed)
🍋I used red, white, and purple potatoes. I cooked them in a pan on the stove at medium heat with a little butter in addition to the marinade
🥗Pair with a spinach salad and you have a well balanced meal!

Does anyone else get so excited to make charcuterie boards for any event?! I always make one for our family holidays, and I had to share the Easter board!

Food and cooking is my main way of showing my creative side, a side I hid/didn’t even know I had for so long! Creating a board full of different shapes, sizes, and colors just pulls on those creative strings in me, and I like to make each one a little different than the last. If you haven’t made one before, try it out! Play with it, have fun, and if it turns out not as planned at least it will still be delicious!! Great components to any charcuterie board include but aren’t limited to assorted meats, cheeses(most important 😏), fruits, veggies, crackers/breads, nuts(if you can have them), & in my opinion all things pickled! Grab your fave serving tray & just go for it! I tried out my new wooden lazy Susan & it was a hit! Plate & SIMPLY ENJOY!!

An easy to make 1 bowl with raw version of granola with dates for natural sweetness, nuts for crunch and protein, and plenty of seeds for healthy fats 🧡

Ingredients :
RAWNOLA 🤗

1 1/2 cups raw walnuts with almonds

15 - 17 pitted dates ( fresh sticky dates work best here)

1 Tbsp flaxseed meal

1 tsp chia seeds

1/2 cup shredded unsweetened coconut

1/2 cup rolled oats

FLAVORINGS (optional)

1/4 cup unsweetened cocoa powder

2 Tbsp cacao nibs

3 Tbsp roughly chopped dried fruit ( bananas, cherries, or blueberries)

1 tsp vanilla extract 
FOR SERVING (optional)

Dairy-free milk of choice 
Fruit of choice 
Coconut Yogurt 
Cacao nibs

Instructions

To a food processor add nuts and pulse a few times to roughly chop. Then add dates and pulse about 5 times to loosely combine

Add remaining ingredients and pulse to combine. The mixture should resemble a chunky granola.

At this point, you could add extra “flavor” like cocoa powder and cacao nibs, dried fruit of choice, or vanilla extract .

Enjoy as is, on top of coconut yogurt, or with dairy free milk

Cauliflower Bagels
Makes 12 bagels
For one bagel:
2 vegetables
2 1/3 condiments
Ingredients:
3 pounds cauliflower
¼ cup / 20g almond meal
¼ cup / 20g nutritional yeast
1 ½ tsp. fine sea salt
½ tsp. garlic powder
2 large eggs
1 Tbsp. dried onions or sesame seeds
1 Tbsp. psyllium husk (optional, will make the buns drier)
Directions:
1. Wash and chop cauliflower into chunks. Place in a food processor and blend until as fine as possible (you may need to do this in several batches as the cauliflower won’t process if the machine is too full). Transfer cauliflower to a large mixing bowl. Add the almond meal, nutritional yeast, salt, garlic powder and psyllium husk, if using. Stir very well to combine.
2. Preheat oven to 400°F/200°C.
3. Whisk eggs together in a separate bowl. Add the eggs to the cauliflower mixture and stir until the “dough” is moist and will hold together.
4. Line a baking sheet with parchment paper. Taking baseball-sized amounts of dough, squeeze them into a rough ball shape, then drop them from about 1 foot (30cm) onto the baking sheet (this helps to compact them). To make bagels, simply use your finger to poke a hole in the center and shape the rest with your hands. Sprinkle the tops with the dried onion or sesame seeds and place in the oven. Bake for 20-30 minutes until the buns are golden brown around the edges. Store leftovers in the fridge for 3-4 days.

Cauliflower Bagels Makes 12 bagels For one bagel: 2 vegetables 2 1/3 condiments Ingredients: 3 pounds cauliflower ¼ cup / 20g almond meal ¼ cup / 20g nutritional yeast 1 ½ tsp. fine sea salt ½ tsp. garlic powder 2 large eggs 1 Tbsp. dried onions or sesame seeds 1 Tbsp. psyllium husk (optional, will make the buns drier) Directions: 1. Wash and chop cauliflower into chunks. Place in a food processor and blend until as fine as possible (you may need to do this in several batches as the cauliflower won’t process if the machine is too full). Transfer cauliflower to a large mixing bowl. Add the almond meal, nutritional yeast, salt, garlic powder and psyllium husk, if using. Stir very well to combine. 2. Preheat oven to 400°F/200°C. 3. Whisk eggs together in a separate bowl. Add the eggs to the cauliflower mixture and stir until the “dough” is moist and will hold together. 4. Line a baking sheet with parchment paper. Taking baseball-sized amounts of dough, squeeze them into a rough ball shape, then drop them from about 1 foot (30cm) onto the baking sheet (this helps to compact them). To make bagels, simply use your finger to poke a hole in the center and shape the rest with your hands. Sprinkle the tops with the dried onion or sesame seeds and place in the oven. Bake for 20-30 minutes until the buns are golden brown around the edges. These delicious little chicken bites remind me of chick-fil-a grilled nugs 🤤 I cut up a chicken breast into bite sized pieces ~ spray the fryer with avocado oil ~ season the chicken with pink salt, Franks Buffalo seasoning, and Mr.kernels popcorn seasonings (but you can really use any seasoning you want) ~ place them in a single layer & top with a light spray of avocado oil ~ Fry them up at 400 for 8-10 mins and enjoy👌🏻

Poteca de ahuyama🎃. Esto me lleva inmediatamente a mi infancia, es una completa delicia y para los fans de la ahuyama aún mas!!😋 Es bajito en carbs, sirve como dip o acompañamiento con alguna proteína, para comer con tostadas, galletas de arroz, en fin, para comer con todo!!😍👌🏻 Necesitan:
- Ahuyama (cantidad deseada)
- Guiso de cebolla y tomate al gusto
- Sal y pimienta al gusto
- Huevo cocido 👉🏻Ponen a cocinar la ahuyama y el huevo (Aparte c/u), por otro lado pican o rallan el tomate y la cebolla, en un sartén sofríen el guiso a fuego bajo hasta que suelte todos sus jugos. Cuando la ahuyama ya este blanda se retira su cascara con cuidado y se hace puré. Añaden la ahuyama y salpimientan al gusto dejan que se mezclen los sabores unos minutos todo a fuego bajito y por ultimo pican el huevo y lo añaden y listo!!! Revuelven y sirven con lo que quieran, también si no quieren agregarle huevo pueden agregarle un poco de queso rallado y queda divino igual.

Надо: ▪️1 банан
▪️50 гр овсянки ( 5 ложек овсяной муки)
▪️1яйцо
▪️молоко( совсем чуть-чуть, если масса густая получилась)
▪️натуральный йогурт
▪️мёд или любимые фрукты
Банан размять вилкой ➡️добавить яйцо ➡️ овсяную муку ( я размалываю сама в блендере )➡️чуть молока➡️ жарим без масла на антипригарной сковороде 
Подаём с йогуртом и мёдом или ягодами 👍
❗️единственная сложность-трудно переворачивать оладушки на сковороде , в следущий раз я буду делать без молока. У меня тесто проучилось жидковатым.

Lush dinner although it took too long to make and I was starving after a killer tabata workout followed my back and shoulders! 30g feta cheese 
1 small onion 
50g spinach 
55g Baby tomatoes 
5ml olive oil

Happy Easter Sunday! It wouldn't be Easter without some carrot cake! So how about some carrot, oat, cinnamon and ginger protein muffins? To make the extra gingery, i've added slithers of stem ginger, otherwise these have been sweetened with just a tad of coconut sugar. ⠀
I've boosted up the nutritional content with flaxseed and pea protein. For a bit of crunch, I've added walnuts into the cake batter and topped the muffins with some crispy pumpkin seeds.⠀
